A composition comprising a component and an olfactory effective amount of a lutein- alcohol adduct;wherein the component exhibits an off-taste of bitterness, astringency, licorice flavor and / or unpleasant lingering aftertaste;wherein the lutein-alcohol adduct is represented by formula I set forth below:,wherein R is provided by an alcohol represented by R-OH; and wherein the alcohol is selected from the group consisting of ethanol, 1-propanol, isopropanol, 1- butanol, 2-butanol, isobutanol, tert-butanol. methanol, 1-pentanol, 2-pentanol, 2-methyl- 1-butanol, 2-methyl-2-butanol, 3-methyl-2-butanol, neopentyl alcohol, hexanols such as 2-methyl-1-pentanol, heptanols such as 1-heptanol, octanols such as 1-octanol, 2-octanol and 2-ethylhexanol, ethylene glycol, 1,3-propanediol, propylene glycol, butanediols such as 1,4-butanediol, glycerol, butanetriols such as 1,2,4-butanetriol, diethylene glycol, furfuryl alcohol, 2-(2-methoxyethoxy)ethanol, propylene glycol methyl ether and a mixture thereof; and30 wherein the lutein-alcohol adduct masks the off-taste of the component.Page 21 of 25IFF101100-WO-PCT Specification 9.
