[0030] The present invention relates to a system for producing paneer from peanut milk. The invention comprises an integrated system of units controlled by a central control unit. The system includes special mechanisms for cleaning and inspecting the raw peanuts, controlled soaking units, precision grinding mechanisms, multi-layer filtration systems, temperature-controlled heating units, automated coagulation chambers, and pressure-controlled pressing mechanisms, all operating synchronously to produce paneer of consistent quality.
[0031] The resulting paneer product has a high protein content (16-22%), important minerals, and antioxidants, which is highly beneficial to consumer health. The proposed system is designed for large-scale production, ensuring sustainability and affordability.
[0032] The paneer production system begins with a cleaning and inspection unit that removes impurities from raw peanuts, ensuring that only high-quality peanuts are selected for processing. After cleaning, the peanuts are transported to a soaking unit where they are immersed in water for a specific period, typically 6-8 hours. Following soaking, the softened peanuts are moved to a processing chamber equipped with a grinder. Here, the peanuts are mixed with water and ground into a uniform paste. This paste is then transferred to a filtration system that efficiently separates the peanut milk from the solid residue using a fine-mesh screen or muslin cloth. The extracted peanut milk is then fed into a heating unit connected to the filtration system. This unit heats the milk to a controlled temperature range of 85-90°C, preparing it for coagulation. After heating, the milk enters a coagulation chamber where it is mixed with food-grade coagulants such as lemon juice, vinegar, or citric acid. The coagulated mixture is then fed into a press mechanism that compresses it into paneer blocks. The system is equipped with a control unit that monitors and regulates the operating parameters for each stage to ensure a seamless and efficient process. The finished paneer blocks are cooled, cut into the desired shapes, and stored at 4°C to maintain freshness and quality.
[0033] Prepared paneer is highly nutritious, containing 16-20% protein depending on the peanut variety. It also contains healthy fats (monounsaturated and polyunsaturated), antioxidants such as p-coumaric acid, vitamins E and B complex, and minerals like magnesium, iron, and phosphorus. Peanut paneer appeals to health-conscious, vegan, and lactose-intolerant consumers. It is also suitable for fitness enthusiasts seeking a high-protein alternative. The product's sustainability aligns with the growing global demand for environmentally friendly food solutions.
[0034] This invention presents an innovative system for producing paneer from peanuts, comprised of interconnected components that work together to ensure a high-quality, sustainable product. The process begins with a cleaning and inspection unit configured to remove impurities from the raw peanuts and select only high-quality peanuts for further processing. Once cleaned, the raw peanuts are transported to a soaking unit, where they are immersed in water for a specific period to soften and prepare them for subsequent steps. The softened peanuts are then processed in a specially designed processing chamber equipped with a grinding mechanism. In this chamber, the soaked peanuts are ground with water to create a smooth paste, ensuring optimal consistency for separation. A filtration system connected to the processing chamber separates the peanut milk from the solid residue. This assembly effectively separates the liquid portion, the main ingredient for paneer production, from the solid residue. The separated peanut milk is then transferred to a heating unit, which raises its temperature to a specific range. After heating, the milk enters a coagulation chamber, where it is mixed with a coagulant. This chamber is specifically designed to facilitate the coagulation process and ensure the formation of curds with the desired texture and consistency. The curds are then transferred to a pressing mechanism, which presses the coagulated mixture into paneer blocks. This mechanism exerts precise pressure, resulting in compact, solid peanut-based paneer blocks.
[0035] To ensure efficiency and consistency, the entire system is controlled by a central control unit. This unit monitors and regulates the operating parameters of each component, ensuring seamless integration and optimal performance throughout the entire production process. The result is a protein-rich (16-22%), antioxidant-rich (e.g., p-coumaric acid) paneer that is vegan, lactose-free, and environmentally sustainable, offering health benefits to consumers and promoting sustainable agriculture.
