[0002] For economic and health reasons, some people desire to replace animal protein, including animal muscle protein, with plant protein. However, specifically replacing animal muscle protein with plant protein, and more generally replacing animal muscle (which will be referred to herein as "meat" for simplicity), presents various problems. A plant-based meat analogue, the plant-based meat analogue comprising: a) legume protein; b) structured vegetable oil, which comprises vegetable oil and a water-soluble carrier; and c) moisture in an amount of 40% to 65% by weight; wherein the ratio of oil to water-soluble carrier in the structured vegetable oil is greater than 3:1; wherein, based on the weight of the analogue, the amount of the water-soluble carrier used is 0.1 to 2%; wherein the water-soluble carrier is cassava maltodextrin.
