Abstract
Description
The invention relates to a cooking appliance having a cleaning chemistry module for providing cleaning agent for a cleaning program, and to a method for cleaning a cooking appliance having a cleaning chemistry module. The cooking appliance is in particular a so-called combination damper, i.e. a cooking appliance for professional applications such as large gastronomy, cantins or restaurant. With the cooking appliance food can be cooked in a cooking chamber by means of hot air, superheated steam in a cooking chamber atmosphere with adjustable moisture content and adjustable temperature. In addition, a microwave generator for generating microwave radiation can also be provided in the cooking appliance, with which microwave generator the cooking process in the cooking appliance can be supported.During the operation of a cooking appliance, a wide variety of soils such as fats and other substances accumulate in its cooking chamber over time. These originate, for example, from condensate which drips from the walls of the cooking chamber and / or from foods and food supports located in the cooking chamber. The water used also leads to deposits of lime. For this reason, a cooking appliance must be reliably cleaned at regular intervals. For this purpose, it is advantageous if a corresponding cleaning solution is provided at any time. From the prior art, cooking devices are therefore known which provide a supply of cleaning agent which is sufficient for a plurality of cleaning processes. However, it can occur that at the time when the cleaning program has already been started, the supply of cleaning agent is empty. However, once the cleaning program has been started, it always runs after a fixed predetermined sequence in which, for example, the cleaning temperature, the cleaning chemical quantities and the running time of the cleaning program are fixed. However, if the amount of cleaning agent is not sufficiently large, this leads to a poor cleaning result of the cooking appliance. It is an object of the present invention to provide a cooking appliance having a cleaning chemistry module and a method for cleaning the cooking appliance having the cleaning chemistry module, with which cooking appliance cleaning results that are as good as possible can be achieved even in the case of excessively small amounts of available cleaning chemicals. The object is achieved according to the invention by a cooking appliance having a cleaning chemistry module for providing cleaning agent for a cleaning program, wherein the cleaning chemistry module has at least one cleaning chemistry container, wherein the cooking appliance has a first sensor which is connected to a control unit, and wherein the control unit is configured to start the cleaning program and then to adapt the cleaning program taking into account a signal of the sensor which is representative of a sufficiently large amount of available cleaning agent for producing a cleaning solution.Cleaning chemistry assemblies usually have a plurality of cleaning chemistry containers with different cleaning agents, such as basic, cleaning chemistry or alkaline and acidic cleaning chemistries, which depending on their function and composition is used for cleaning, decalcification and / or rinsing. The cleaning agents are present as solids in the cleaning chemistry container and are at least partially dissolved in water to produce a cleaning solution. The cleaning solution introduced into the cooking chamber is thus an aqueous solution of one or more cleaning agents from one or more cleaning chemistry containers. The first sensor can basically be any sensor which is capable of determining whether a sufficiently large amount of cleaning agent is still available for the cleaning program. The basic idea of the invention is that by a targeted adaptation of the cleaning program, the best possible cleaning result of the cooking appliance can be achieved even if it is determined only after the start of the cleaning program that an amount of cleaning agent that is no longer sufficiently large for producing a cleaning solution is contained in the supply. By means of such a specific adaptation of the cleaning program, a good cleaning result of the cooking appliance can be ensured despite inadequate or completely missing cleaning chemistry and the safety of the cooking appliance can thus also be improved.A further advantage is that the cleaning program can be adapted to the amount of cleaning agent currently available even while it is already running. This is advantageous in particular if either it has not been checked before the start of the cleaning program whether sufficient cleaning agent is still available or if a cleaning chemistry container has emptied itself during the cleaning process to such an extent that sufficient cleaning agent is no longer available for the next cleaning step. In both cases, the cleaning program can be adapted by the control unit to the missing quantity of cleaning agent, so that the cleaning program no longer carries out all originally provided cleaning steps, for example. This leads to a reduction in the water and energy consumption and to a shortening of the cleaning program running time. The control unit is configured to adapt at least one cleaning parameter of the cleaning program during the cleaning program. In particular, the control unit adjusts the cleaning temperature of the cleaning program, i.e. the temperature at which the cleaning program is to be executed, the running time of the cleaning program, the quantity of wash liquor, the wash liquor temperature and / or the duration of the circulation of the wash liquor. The cleaning temperature adapted by the control unit is increased in this case depending on the respective selected cleaning program, but in particular by a maximum of 20° C. The increase in the cleaning temperature ensures, inter alia, that bacteria and microorganisms in the cooking chamber are successfully killed in spite of the absence of a cleaning agent and a good cleaning result is achieved. The running time of the cleaning program can likewise be extended, in particular depending on the degree of soiling of the cooking appliance. If the cooking appliance has only a low degree of soiling, the run time of the cleaning program is increased only slightly or not at all, while the run time is increased greatly if the degree of soiling of the cooking chamber is very high. The maximum extension of the running time of the cleaning program is, however, in particular four hours. Thus, a sufficient cleaning result is achieved in a foreseeable time.A good cleaning result can also be achieved by increasing the amount of wash liquor. The wash liquor denotes the liquid which is used in the cooking appliance in order to remove impurities. In addition to the cleaning solution, this can comprise further constituents, in particular already dissolved impurities. The pH of the wash liquor corresponds to the pH of the respective cleaning solution. A wash liquor having a pH below pH 7 can be used in particular advantageously to remove deposits of lime, while a wash liquor having a pH above pH 7 can be used to remove residues from food products. The maximum increase in the volume of the wash liquor corresponds to the volume of the cleaning chemical container, so that the maximum amount of wash liquor in the absence of a cleaning agent corresponds to the original amount of wash liquor plus the volume of the cleaning chemical container. The increase in the quantity of wash liquor may be necessary since the water used, which is normally used for flushing the cleaning agent out of the cleaning chemical container, is dispensed with if the cleaning chemical container is already empty. In addition, the wash liquor temperature can be changed, in particular the wash liquor temperature can be increased, since the cleaning temperature is also increased thereby and the overall cleaning performance is improved. The wash liquor can furthermore be circulated in the cooking appliance for a longer time, that is to say the circulation time of the wash liquor can be increased by the control unit, with the result that more dirt can be dissolved therein as a result of the relatively long action and circulation of the wash liquor.According to one embodiment, the control unit of the cooking appliance is configured to skip a cleaning step of the cleaning program, in particular a decalcifier step, a final rinse step and / or a rinsing step. Depending on which cleaning agent is present in an amount that is no longer sufficiently large, one or more steps of a cleaning program can be skipped. If, for example, there is no longer sufficient decalcification chemistry present, individual decalcifier steps of the decalcifier cleaning program can be entirely omitted. If rinse aid chemistry is absent, the rinse aid step may be skipped. Depending on which cleaning agents were no longer present and consequently which steps in the cleaning program were skipped, individual flushing steps at the end of the cleaning program can optionally also be skipped. The flushing-out steps are only necessary if the pH of the cooking chamber is not at a pH of 7. If, however, the pH in the cooking chamber is already neutral, since acidic or basic cleaning agents are no longer available in a sufficiently large amount for cleaning the cooking chamber, individual flushing steps can be dispensed with.By skipping over individual cleaning steps, such as the rinsing step, the cooking appliance offers the advantage that the water consumption for cleaning the cooking chamber can be adapted and usually reduced in the absence of a cleaning agent, compared to the standard cleaning. By omitting individual cleaning steps, it is also possible to dispense with specific heating phases, such as the heating of the decalcifier liquid, as a result of which the energy consumption of the cleaning program can additionally be reduced. In addition, the cooking appliance offers the advantage that the running time of the cleaning program can be adapted to the available quantity of cleaning agent.According to a further embodiment, the cooking appliance has a second sensor, wherein the control unit is configured to adapt the cleaning program, in particular to adapt a cleaning parameter of the cleaning program and / or to skip a step of the cleaning program, taking into account the signal of the second sensor which is representative of the degree of soiling of the cooking appliance. In principle, each of the aforementioned cleaning parameters can be adapted and each of the cleaning steps skipped. It is also possible to adapt and skip a plurality of cleaning parameters and a plurality of cleaning steps. The second sensor can likewise be any type of sensor which is capable of measuring the degree of soiling of the cooking chamber of the cooking appliance; in particular, the sensor must be capable of measuring the degree of soiling and / or the fat content of the water. The cooking appliance according to the invention can either simultaneously adapt one or more cleaning parameters depending on the available quantity of the respective cleaning agent, wherein the cooking appliance can additionally skip over one or more steps of the cleaning program. However, it is also possible that only one cleaning parameter is adapted and no cleaning step of the cleaning program is skipped or that no cleaning parameter of the cleaning program is adapted and instead a step of the cleaning program is skipped. It is also possible that, given a sufficient quantity of cleaning agent, the cleaning program is executed as predefined.According to the invention, a method for cleaning a cooking appliance having at least one sensor and a cleaning chemistry assembly having at least one cleaning chemistry container is also provided, in particular according to one of the preceding claims, wherein the method has the following five steps: In a first step, the cleaning program is started via a control unit. In a second step, a signal is measured with a first sensor, which signal is representative of a sufficiently large amount of available cleaning agent for producing a cleaning solution. In a third step, the measured signal of the first sensor is transmitted to a control unit of the cooking appliance. In a fourth step, the signal of the first sensor, which was transmitted to the control unit of the cooking appliance, is compared with a setpoint value. In a fifth step, the cleaning program is adapted by the control unit of the cooking appliance if the signal falls below the setpoint value. The measurement of the signal with the first sensor in the second step takes place after the cleaning program has already been started. The setpoint value given in the fourth step corresponds to the amount of cleaning agent that must be present in order that sufficient cleaning solution can still be produced therefrom for the respective cleaning step. As soon as the amount of the available cleaning agent is below the amount of the cleaning agent which must be at least available in order that a cleaning solution having the corresponding properties can be produced, the cleaning program is adapted in the fifth step by the control unit.If the signal of the first sensor falls below the setpoint value, at least one cleaning parameter is adapted, in particular the cleaning temperature of the cleaning program, the running time of the cleaning program, the quantity of water supplied, the temperature of the wash liquor and / or the duration of the circulation of the wash liquor, and / or at least one cleaning step of the cleaning program is skipped, in particular the decalcifier step, the final rinse step and / or the rinsing step.According to one aspect of the invention, the cooking appliance has a second sensor which determines the degree of soiling of the cooking appliance and transmits a signal to the control unit, wherein the signal is taken into account when adapting the cleaning program. Depending on the degree of contamination determined by the second sensor, either one or more cleaning parameters are thus adapted and / or one or more cleaning steps are skipped. The method thus offers the advantages that the water consumption can be adapted to the available quantity of cleaning agent, the energy consumption can be reduced and the running time and the dirt cleaning can be adapted to the given circumstances. Furthermore, the method offers the advantage that good cleaning of the cooking appliance can be achieved despite the absence of a cleaning agent.A further aspect of the invention provides that the control unit queries a value specified by a user and correspondingly adjusts the cleaning program, in particular the cleaning temperature, the duration of the cleaning program, the amount of water to be used, the amount of the cleaning agent used for the cleaning program and / or a degree of drying of the cooking appliance after completion of the cleaning program. This offers the advantage that the cleaning program can be individually adapted by the user to the requirements thereof and to the available resources such as water, amount of cleaning agent, energy and time. The adaptation of the cleaning program is independent of whether or not a sufficiently large amount of cleaning agent is present for producing a cleaning solution. For example, the duration of the cleaning program can be reduced by the user's inputs, the amount of water in the cleaning program can be adjusted, and the amount of the cleaning agents used for the cleaning program can be reduced. The user can likewise set the degree of drying of the cooking appliance, so that the cooking appliance is dry, for example after the cleaning program has ended.Advantageously, the control unit also queries which cleaning step predefined by the user is to be skipped. The user can thus not only define whether and which cleaning parameter is to be adapted, but it is also possible for the user to skip entire cleaning steps of the cleaning program. This offers the advantage that the cleaning program has a shorter running time, for example, less energy is consumed and / or less water or chemistry is required for cleaning the cooking appliance. The user can individually set one or more cleaning parameters and simultaneously specify one or more cleaning steps to be skipped.According to the invention, the cleaning program is adapted during the running time of the cleaning program. This offers the advantage that the cleaning program can be adapted to the currently present conditions during the cleaning program. If it is determined during the cleaning program that an important resource, such as, for example. If water, cleaning agent, energy or the duration of the cleaning program must be adjusted, this adjustment is also possible during the cleaning program. It is of course also possible to carry out a plurality of adaptations at different times of the cleaning program.Further advantages and properties of the invention will become apparent from the following descriptions and the drawings to which reference is made. In the drawings, there are shown:FIG. 1 shows a schematic front view of a cooking appliance according to the invention;FIG. 2 shows a schematic side view of the cooking appliance from FIG. 1 ;FIG. 3 shows a schematic illustration of the cleaning chemistry assembly of the cooking appliance from FIG. 1 andFIG. 4 shows a schematic illustration of the cleaning method according to the invention of the cooking appliance from FIG. 1.FIGS. 1 and 2 show a cooking appliance 10 which is designed for preparing food. The cooking appliance 10 is in particular a profibrous appliance, as is used in Cantinen, Restaurant and large gastronomy. In addition, the cooking appliance 10 can be configured to cook food by means of microwaves. The cooking appliance 10 has a housing 12 in which a cooking chamber 14 is provided. Food can be cooked in the cooking chamber 14 by means of a cooking chamber atmosphere which can be controlled with regard to temperature, humidity and circulation speed. The food items are located, for example, on food supports (not shown) which are introduced into the cooking chamber 14. The cavity 14 may be closed with a cavity door 16 to maintain the cavity atmosphere during the cooking process. The cooking chamber door 16 has an opening means 18, which is designed in particular as a handle. The cooking chamber door 16 also has a window 20 so that a user can see into the interior of the cooking chamber 14.The cooking appliance 10 has a user interface 22, which is designed as a touch-sensitive display. A user of the cooking appliance 10 can thus control the latter on the one hand via the user interface 22, and on the other hand the same user interface 22 serves as an indication of the state of the cooking appliance 10.The user interface 22 is connected to a control unit 24, which controls various assemblies of the cooking appliance 10.The cooking appliance 10 has a cleaning chemistry assembly 26 which, in the embodiment shown, is arranged below the cooking chamber 14.The cleaning chemistry module 26 serves to provide cleaning agent (not shown) for a cleaning program of the cooking appliance 10, more precisely for a cleaning program of the cooking chamber 14.The detergent is located in a detergent chemistry container 28 which is removably stored in the detergent chemistry assembly 26.In the embodiment shown in FIGS. 1-3, the cleaning chemistry assembly 26 includes four different cleaning chemistry containers 28, each cleaning chemistry container 28 being filled with a cleaning agent in the form of a solid. Each cleaning chemistry container 28 may contain a different cleaning agent. The cleaning chemistry containers 28 are connected to a source of fresh water via a water line 30.The water supply into the cleaning chemistry containers 28 can be controlled via a water valve 32. When the water valve 32 is open, water flows into the cleaning chemistry container 28 and dissolves a portion of the detergent therein. The dissolved detergent is passed from the detergent chemistry container 28 via a line 34 into a reservoir 36. In particular, the cleaning agent is pumped into this storage container 36 via a pump. The reservoir 36 is connected to all of the cleaning chemistry containers 28 of the cleaning chemistry assembly 26.Therefore, all cleaning agents contained in the different cleaning chemical containers 28 mix in the storage container 36 and form the cleaning solution, which is subsequently pumped via a second line 38 into the cooking chamber 14 of the cooking appliance 10. To control the amount of cleaning solution delivered to the cavity 14, a valve 40 is installed in the conduit 38.Depending on which cleaning program is being executed, another cleaning solution is prepared from different amounts of the different cleaning agents. The different cleaning solutions differ in their pH value, among other things, on the basis of the different compositions of the cleaning agents with respectively different pH values and cleaning properties.A first sensor 42 is located in the interior of the storage container 36, and this first sensor 42 can be used to measure whether a sufficiently large amount of cleaning agent is still available in order that the cleaning solution can be produced for the corresponding cleaning step. The first sensor 42 is connected to the control unit 24 in an information-transmitting manner.Based on the signal of the first sensor 42, the control unit 24 can adjust the cleaning program as appropriate. In the event that the first sensor 42 measures a signal according to which a sufficiently large amount of available cleaning agent is no longer contained in the cleaning chemistry container 28, the control unit can either adapt one or more cleaning parameters of the cleaning program and / or skip one or more cleaning steps of the cleaning program. The cleaning temperature of the cleaning program can be adjusted by the control unit 24 controlling a heating device (not shown) that heats the cleaning agent. Depending on the cleaning program to be carried out, the control unit increases the cleaning temperature to different extents, wherein the maximum increase in the cleaning temperature is 20° C.The control unit 24 can also adapt the running time of the cleaning program, so that, for example, the cleaning time is extended if sufficient cleaning agent is no longer available to produce a cleaning solution. The maximum extension of the running time is 4 hours. The control unit 24 is also connected to the water valve 32 and the valve 40, so that it can control the two valves and thus control how much water reaches the cleaning chemistry containers 28 and how much cleaning solution is conducted into the cooking chamber 14. As a result, the control unit 24 can adjust the quantity of wash liquor. If, for example, no longer sufficient cleaning agent is contained in a cleaning chemical container 28, the control unit 24 controls the valve 40 in order to conduct more washing liquor in the form of pure water into the cooking chamber. The fresh water replaces the missing volume of the cleaning agent from the empty cleaning chemical container 28 in the cleaning solution. The control unit 24 can also adjust the wash liquor temperature by controlling a heating device (not shown), wherein the interior of the cooking appliance 10 is freed of bacteria and other microorganisms by means of higher temperatures of the wash liquor. In addition, the control unit 24 can also influence the duration of the circulation of the wash liquor, such that the warm or hot wash liquor is circulated in the cooking chamber 14 for a longer time in order to sufficiently dissolve the soiling even with less or no cleaning agent.Furthermore, the control unit 24 can control that individual cleaning steps of the cleaning program are to be skipped. This is expedient whenever cleaning agent is missing and energy, time or water can be saved by skipping a cleaning step. For example, if a sufficient amount of decalcifier chemistry is no longer contained in the cleaning chemistry container 28, one or more steps of the decalcifier operation may be skipped. In this case, it is not necessary to automatically skip all decalcifier steps. The control unit can also skip the final rinse step if there is no longer sufficient detergent to produce a final rinse solution. The control unit 24 can also skip one or more purging steps. These are usually required because the cleaning solutions have a pH higher or lower than pH 7. In order to neutralize the pH value in the cooking appliance again, one or more rinsing steps are necessary. However, if there is not sufficient detergent in the cleaning chemistry container 28 to produce a cleaning solution, it is not necessary for the pH in the cooking chamber 14 to be adjusted to pH 7, since this is already at pH 7.The cooking appliance can have a second sensor 44 in the interior of the cooking chamber, which measures the extent to which the cooking chamber 14 of the cooking appliance 10 is soiled. On the basis of the signal which is transmitted from the second sensor 44 to the control unit 24, the control unit 24 can skip over the cleaning program, in particular one or more cleaning parameters and / or one or more steps of the cleaning program. For adapting the cleaning program, the degree of soiling of the cooking chamber 14 is also included for this purpose, as a result of which a better cleaning result can be achieved. As shown in FIGS. 1 and 2, the control unit 24 is connected to the user interface 22. The user can enter, via this user interface 22, how the cleaning program is to be adapted. If a user enters via the user interface 22 that, for example, a cleaning parameter is to be adapted or a cleaning step is to be skipped, this information is forwarded to the control unit 24, which correspondingly adjusts the cleaning program by controlling, for example, the valves 32 and 40 or the heating device. The user can also set, for example, that the cooking chamber 14 of the cooking appliance 10 should be dry after the cleaning program has ended. This is also achieved by a targeted control of the heating device by the control unit 24.The control unit 24 is capable of adapting the cleaning program during the running time of the cleaning program. Cleaning parameters or cleaning steps can therefore be adapted or skipped while the cleaning program is already running. The adaptation of the cleaning program can also be carried out several times during the cleaning program. Thus, depending on external conditions and the available resources such as energy, water, cleaning agent and the running time of the cleaning program, the cleaning program can be adjusted during the entire cleaning running time either automatically by the method or manually by the user. The cleaning program therefore no longer follows a rigidly predetermined sequence.FIG. 4 shows the method with which the best possible cleaning result can be achieved, even if there is no longer sufficient cleaning agent available for producing a cleaning solution. For this purpose, in a first step S 1, the cleaning program is started by the control unit 24.In a second step S 2, the first sensor 42 measures whether a sufficient amount of available cleaning agent is still present in the cleaning chemistry container 28 to produce a cleaning solution. This signal of the first sensor 42 is subsequently forwarded in a third step S 3 to the control unit 24, which compares the signal with a setpoint value. The setpoint value represents the amount of cleaning agent that must be at least present in order that a cleaning solution can still be produced.Depending on the result of the comparison of the setpoint value with the measured value, the cleaning program is either adapted in step S 6 or it can be executed unchanged. In the case that the cooking appliance 10 has a second sensor 44, its signal is also taken into account for the adaptation of the cleaning program, wherein the signal indicates the degree of contamination of the cooking chamber 14.Depending on this degree of soiling, it may be that certain cleaning parameters have to be further adapted, such as the amount of wash liquor or the temperature of the cleaning program. In this case, in a fourth step S 4, the signal of the second sensor 44 is taken into account in the adaptation of the cleaning program by the control unit 24 in order to achieve an optimum cleaning result despite the absence of a cleaning agent. It can also occur that in a fifth step S 5 a user also indicates via the user interface 22 that a specific cleaning parameter and / or a specific cleaning step is to be skipped, independently of the amount of cleaning agent available. This is always the case when the cleaning chemistry container is sufficiently filled, but the user specifies that one or more cleaning parameters and / or one or more cleaning steps should nevertheless be skipped. If this is the case, the control unit 24 takes into account the value entered by the user in step S 5 and adjusts the cleaning program accordingly in step S 6.With the method, the course of the cleaning program in cooking appliances with cleaning chemistry assemblies 26 can be adapted. If the first sensor 42 measures that a sufficient dosing capability of the cleaning agent is no longer possible, a sufficient cleaning result can nevertheless be achieved by adjusting the cleaning parameters. It is of course also possible that the cleaning program can be adapted with the method even when sufficient cleaning agent is present. For this purpose, the degree of soiling of the cooking chamber 14 is determined by the second sensor 44, wherein the control unit 24 takes into account the signal of the second sensor 44 when adapting the cleaning program. In particular, one or more cleaning parameters of the cleaning program can be adapted and / or one or more steps of the cleaning program can be skipped. It is also possible that based on the degree of contamination the amount of cleaning agent is calculated which is needed to achieve a good cleaning result. The cleaning program can thus also be optimized exclusively depending on the degree of contamination of the cooking chamber 14, even if sufficient cleaning agent is still available. The method can be carried out before the start of the cleaning program and / or during the running time of the cleaning program, so that a subsequent dosing of the cleaning agent is likewise possible.
