[0039] [Fig.5] illustrates an assembly comprising a frying machine (or device), a lifting system and two frying baskets in one or more embodiments. Description of the embodiments
[0040] [Fig.l] illustrates an assembly comprising a frying machine (or device) and a lifting system in one or more embodiments.
[0041] For example, the frying machine of the set 100 can be used in the catering field such as fast food restaurants and allow the cooking of all kinds of food, for example fries, chicken, donuts, etc.
[0042] The frying machine may comprise a tank 105 configured to receive the frying oil and typically heating means for heating a frying oil to a predetermined temperature, for example to a temperature between 100 and 200 degrees Celsius. The heating means may typically comprise a heating resistor immersed in the tank, or even a thermostat comprising a temperature probe, for example a thermocouple.
[0043] The thermostat may comprise a heating resistor control circuit which powers the heating resistor from the mains electricity in order to raise the temperature of the oil as long as the signal from the probe is below a determined threshold. This threshold corresponds to a set temperature, and is configured to cut off the electrical power supply to the heating resistor as soon as the signal from the temperature probe exceeds the determined threshold. A user interface comprising for example a rotary knob or any other means, may make it possible to adjust the set temperature, and therefore the threshold.
[0044] In order to allow the food to enter and exit the heated oil bath, the frying machine may comprise a lifting system 110 configured to move a basket 113, for example a frying basket, comprising the food from a position immersed in the tank to a position raised out of the tank, or vice versa.
[0045] For this purpose, the lifting system 110 may comprise a fixed frame configured to be mounted on at least one edge of the tank. According to one or more embodiments, the fixed frame may be mounted on at least two edges of the tank, and for example two opposite edges. The lifting system may typically be removable from the fryer. The lifting system may in particular be compatible with pre-existing fryers.
[0046] The frame may comprise at least one upright 110a connected by one of its ends to a base 110b resting on one of the edges of the tank and connected by another of its ends to a crosspiece 110c. The crosspiece may comprise a housing 110c configured to house the actuating device.
[0047] In one or more embodiments, the frame may comprise at least two uprights, each upright being connected by one of its ends to a respective base resting on one of the edges of the tank and connected by another of its ends to the crossmember. The two bases 110b associated with the two uprights 110a rest on the two edges, typically opposite and parallel, of the tank. The crossmember typically extends from one of its ends to one of the uprights, and to another end to the other upright.
[0048] Each base 110b may comprise a first substantially horizontal surface bearing on an upper surface of one of the rims configured to transmit the vertical load of the lifting system to the tank and a second substantially vertical surface, extending projecting below the first surface, configured to come into abutment with an internal surface of a side wall of the tank in order to ensure that the lifting system is held in position relative to the tank in the longitudinal direction of the crossbar. In particular, the second surface of one of the bases ensures the locking of the lifting system relative to the tank in the direction of the crossbar in a first direction, while the second surface of the other of the bases ensures the locking in a second direction. Each base 110b may for example comprise an angle profile, of inverted L-shaped section, the two angle profiles extending.
[0049] The locking of the lifting system relative to the tank, in the longitudinal direction of the two edges, can be obtained by dimensioning at least one of the two bases with the interlocking clearance after following this direction of the tank, and for example by dimensioning the length of the angle profile, so that its two longitudinal ends are configured to come into abutment against two end walls of the tank, parallel and opposite, these end walls being adjacent to the side walls of the tank.
[0050] At least according to one embodiment, the lifting system can be configured to be placed on the fryer tank, simply by fitting the bases onto the two edges of the tank, and preferably without any additional locking operation.
[0051] The basket 113 may be a removable basket configured to be fixed to a support 110d movable relative to the fixed frame, the movement of the support causing the basket to move. For example, the basket may have a fixing means such as a curved edge bearing on the upper edge of the support 110d. According to one example, the basket may comprise a bottom wall and pierced side walls allowing the passage of oil.
[0052] The movement of the support, such as an ascent or descent, may be provided by a guidance system 210 configured to guide the movement of the support in a lifting direction Z0 and an actuating device configured to move the support relative to the frame by allowing the movement of the removable basket from a position immersed in the tank to a position raised out of the tank. The lifting direction Z0 may typically be a vertical direction, or close to vertical, in a normal position of the fryer.
[0053] Furthermore, the guidance system 210 may comprise shaking generating means configured to shake the support during movement of the support by the actuating device.
[0054] The jolt generating means may be configured to ensure an oscillating movement of the support 110d in a direction transverse to the lifting direction Z0.
[0055] The oscillating movement of the support in a direction transverse to the lifting direction causes the oscillating movement of the basket 113 thus allowing automatic draining without requiring external intervention for draining such as an operator for example. Figures 2a to 2d illustrate the guidance system in one or more embodiments.
[0056] More specifically, [Fig.2a] is an enlarged perspective view of the guidance system, [Fig.2b] is a sectional view along an axis A-A' of a top view of the assembly 100 and enlarged at the level of the guidance system, [Fig.2c] is a sectional view along an axis B-B' of a top view of the assembly 100 and enlarged at the level of the guidance system, and [Fig.2d] is a rear view of the assembly enlarged at the level of the guidance system.
[0057] With reference to figures 2a to 2c, the guidance system may comprise a first guidance means 210a which forms a sliding connection in the lifting direction Z0.
[0058] The first guide means may comprise a first slide element 210al secured to the support 110d by an articulated connection A1 and which is in sliding connection with a second slide element 210a2 of the chassis to move the support in translation along the lifting direction, the support being moved by movement of the first slide element by the actuating device (along the lifting direction Z0).
[0059] In one or more embodiments, the oscillating movement of the cam during movement of the first slide member may be a rotation about the first slide member (embodiment shown) or may be a sliding transverse to the translation of the first slide member (embodiment not shown).
[0060] The actuating device may be any device adapted to move the first slide element in translation along the lifting direction Z0.
[0061] In one or more embodiments, the actuating device may be a motor coupled to a worm screw nut system, or a motor coupled to a pulley-belt system, etc. For example, the motor may be housed in the housing of the crosspiece 110c 1 of the lifting system.
[0062] In one or more embodiments, when the actuating device comprises a motor 220 coupled to a worm-nut system, the first slide element may correspond to the nut. The nut may comprise a planar face and at least one upright of the frame may be in sliding connection with the planar face of the nut for the second upright thus forming the second slide element. The actuation of the worm 220a by the motor 220 makes it possible to translate the nut 210a along the lifting direction.
[0063] Furthermore, the guidance system may comprise a second guidance means 210b comprising a cam 210b integral in translation with the support 110d and may comprise a cam follower 210b2 arranged on the chassis along the lifting direction Z0.
[0064] In order to allow the generation of jolts to shake the support and therefore the basket, the cam follower 210b2 may comprise at least one sinuous guide portion 210b3 configured to ensure the oscillating movement of the support relative to the first slide element according to the articulated connection A1 in the direction transverse to the lifting direction during the movement of the cam along the guide portion.
[0065] With reference to Figures 2a, 2b and 2c, by way of example, when the movement of the cam 210bl is a rotation around the first slide element 210al such as the nut, the movement along the lifting direction Z0 of the nut by the endless screw 220a actuated by the motor 220 causes the movement of the cam secured to the support and which is guided by the cam follower 210b2. When the cam passes through the sinuous guide portion 210b3, the cam, and therefore the support and the basket, oscillates by pivoting R0 around the nut allowing the basket to drain.
[0066] For example, the winding guide portion 210b3 may be comprised between two rectilinear guide portions 210b4; 210b5. Furthermore, the length of the winding guide portion along the lifting direction may be between 1 and 30 centimeters. In one or more embodiments, the cam follower 210b2 may comprise a plurality of rectilinear guide portions and a plurality of winding guide portions, for example, a rectilinear guide portion spacing two winding guide portions, or vice versa.
[0067] With reference to [Fig.2d], the cam follower may further comprise a curved upper end 240.
[0068] This curved upper end can be configured so as to allow the support and the basket to be inclined at the end of the lifting stroke, the bottom being inclined towards an edge between the bottom wall and one of the side walls. Such arrangements make it possible to improve the draining of the basket.
[0069] Such an inclination of the basket at the end of the lifting stroke is obtained for a normal operating position of the fryer when the fryer and the tank are resting on a horizontal surface.
[0070] [Fig.3] schematically illustrates the cooking and draining process of a basket of a frying machine in one or more embodiments.
[0071] The frying machine may correspond to the machine described in [Fig. 1], and it may comprise a lifting system according to the present disclosure.
[0072] The method may comprise:
[0073] / C / proceed 310 to the lifting and draining of the basket from a submerged position in the tank, by the actuating device and the guidance system, to a raised position, outside the tank, along the lifting direction, with generation of jolts implemented by the jolt generating means.
[0074] During lifting, the basket passing from a position immersed in the tank to a position outside the tank by moving the support along the lifting direction will be shaken when the cam passes through the sinuous guide portion, thus allowing draining. In the example illustrated in the figures, the sinuous portion implements three successive oscillations of the basket during the same direction of movement of the basket (i.e. when lifting or lowering): generally, the number N of oscillations implemented by the sinuous portion in the same direction of movement of the basket can typically be between 1 and 10, for example 2, 3, 4, 5, 6, 7, 8, 9 or 10 oscillations.
[0075] For example, the raised position may be when the cam is located in the curved upper end of the cam follower.
[0076] In one or more embodiments, the method may comprise in / C / :
[0077] - carry out a round trip or a plurality of round trips of the basket between the raised position and up to a second position outside the tank, lower than the raised position along the lifting direction, the sinuous guide portion of the cam follower cooperating with the cam on the strokes of the plurality of back and forth movements to drain the basket a plurality of times.
[0078] According to another example, the second position may be located between, on the one hand, the raised position, in particular located at the curved upper end of the cam follower, and on the other hand, the lower end of the sinuous guide portion, or slightly below the latter, for example in a range of 30 mm or even 20 mm below the lower end.
[0079] According to one example, said round trip or the plurality of round trips may be between 1 and 20 round trips, preferably between 5 and 10 round trips. For example, by implementing a round trip, the method is configured so that the cam moves three times over the stroke of the sinuous portion with 3N oscillations in total, the first lifting from the submerged position to the raised position ensuring the implementation of the number N of oscillations, the round trip from the raised position to the second position being able to ensure a number of additional oscillations equal to 2N.
[0080] In one or more embodiments, the plurality of back-and-forth movements may depend on the type of food to be cooked. Indeed, the adhesion of the oil to the cooked food after leaving the bath may be different, with certain cooked foods requiring longer draining, or vice versa.
[0081] In one or more embodiments, prior to / C / the method may comprise: - / A / proceed 330 to lower the basket out of the tank to a position immersed in the tank, and - / B / keep the basket immersed in the tank for a period of time predetermined and at the end of said predetermined duration trigger the lifting and draining according to / C / .
[0082] The predetermined time during which the basket is immersed in the tank may depend on the type of food to be cooked according to the frying cooking method. For example, this predetermined time may be between 1 and 10 minutes. According to another example, for cooking fries, the predetermined time may be between 2 and 5 minutes, for example the predetermined time may be 3 minutes.
[0083] [Fig.4] shows a device for controlling cooking by a frying machine to implement the method of the present disclosure according to one or more embodiments.
[0084] The cooking control device can, for example, be housed in the HOcl housing of the lifting system.
[0085] In this embodiment, the device 400 may comprise a control unit 401 comprising a memory 402 for storing program instructions loadable into a circuit, and adapted to cause the circuit 403 to execute the method of the present disclosure when the program instructions are managed by the circuit 403.

In addition, the device 400 may include a screen in order to display the current step of the cooking process, to display a countdown of the cooking time of the food, to display the selected cooking and draining program.
[0087] The memory 402 may also store data and information useful for carrying out the method of the present disclosure as described above. For example, the memory 402 may store predetermined cooking and draining programs. For example, the predetermined programs may have different parameters, such as cooking time, number of round trips in the winding guide portion, depending on the type of food to be cooked.
[0088] The circuit 403 can be for example: - a processor or processing unit capable of interpreting instructions in a computer language, the processor or processing unit may comprise, be associated with or be attached to a memory comprising the instructions, or - the combination of a processor / processing unit and a memory, the processor or processing unit being adapted to interpret instructions in a computer language, the memory comprising said instructions, or - an electronic card in which the process sequence is described in silicon, or - a programmable electronic chip such as an FPGA chip (for “Field-Programmable Gate Array”).
[0089] The control unit may comprise an input interface 405 for receiving input data used to provide 407 predetermined times and temperatures depending on the type of food to be cooked, or to receive a command to start the process by actuating an activation button 409 connected to the input interface 405.
[0090] Optionally, the device 400 may comprise telecommunication means so as to receive and / or send data or instructions over a telecommunication network such as an RF network, wifi, Bluetooth, etc. For example, the input data such as the predetermined programs may be received via a telecommunication network and then stored in the memory of the control unit.
[0091] The control unit may further comprise an output interface 410 used to drive (or control) at least one actuating device 411 for moving the support and the frying pan. The output interface may also be used to send information data to a display screen 413 connected to the control unit or to the circuit. For example, the display screen may be used to display the cooking program selected for cooking and draining from a plurality of preconfigured cooking and draining programs stored in memory.
[0092] For example, after introduction into a frying basket of food to be cooked using frying cooking, it is possible to choose the cooking and draining program according to the type of food via the buttons, then to activate the process via the buttons connected to the input interface. The control unit automatically controls the descent of the support towards the heated oil tank by activating the actuating device until the basket is immersed in the tank. Depending on the cooking program chosen, the basket can remain immersed for a predetermined time, then once the predetermined time has elapsed, the control unit can control the actuating device in order to raise the basket to a position outside the tank and which is drained during its rise to the position outside the tank.Depending on the cooking and draining program selected, the control unit can control the actuating device to make one or a plurality of round trips through the winding guide portion.
