Description

Method for manufacturing concentrated powder of pear

[0001] The present invention relates to a method for producing a concentrated powder of a pear, and more specifically, to a method for producing a concentrated powder of a pear, which can maintain the antioxidant properties inherent in the pear even when the pear is powdered.

[0002] Pyrus pyrifolia is a member of the Rosaceae family, with over 59 species native to Korea. It has been widely used in the Korean diet since before the Three Kingdoms period. Among its components, chlorogenic acid, caffeic acid, vanillin, and p-coumaric acid have been proven to have functional effects in vascular disease, bronchial inflammation, immunity, and detoxification (Escara et al., 2000). Therefore, it is a medicinal resource for which demand and supply have recently been rapidly increasing (ReSEAT Analysis Report, 2011, etc.). Pyrus pyrifolia is known to contain a large amount of antioxidant components and is involved in bronchial inflammation, blood vessel cleansing, and detoxification.

[0003] Currently, pear juice is sold in containers as a concentrate. However, this concentrate has the disadvantage of being difficult to store for long periods. Furthermore, when pear juice is dried and then powdered, a significant amount of its antioxidant properties are lost.

[0004] The present invention is intended to solve the problems of the above-mentioned prior art, and is characterized by providing a method for producing a powdered concentrate of pear that can be stored for a long period of time by producing the concentrate in a powder form.

[0005] In addition, the present invention is characterized by providing a pear concentrate powder capable of maintaining the unique antioxidant components of pear.

[0006] In addition, the present invention is characterized by providing a concentrated powder of pear with enhanced antioxidant properties.

[0007] In addition, the present invention is characterized by providing a concentrated powder of pear that has excellent dispersibility and can be used for various industrial purposes.

[0008] A method for producing a pear concentrate powder according to one embodiment of the present invention may include the steps of (a) washing pear fruits; (b) crushing the washed pear fruits; (c) extracting the crushed pear fruits with hot water to produce a pear extract; (d) filtering the pear extract; (e) concentrating the filtered pear extract to produce a pear concentrate; (f) mixing dextrin with the pear concentrate to produce a mixture; and (g) spraying the mixture to produce a pear concentrate powder.

[0009] In addition, the step (c) may be performed by adding 800 to 1,000 parts by weight of water to 100 parts by weight of the crushed pears and performing a heating and pressure extraction at 90 to 110°C for 250 to 350 minutes.

[0010] In addition, the step (d) may be performed by mixing an organic selenium solution into the pear extract and filtering the pear extract containing organic selenium through a filter membrane.

[0011] Additionally, the organic selenium solution may include at least one of ethylendiaminetetracetic acid (EDTA), hydroxide, selenium oxide (SeO2), and acetyl thiazolidine carboxylic acid (ATCA).

[0012] According to the present invention, a pear powder with enhanced antioxidant function can be produced by providing a pear powder containing organic selenium.

[0013] In addition, the present invention can provide a method for producing a powdered pear concentrate that can be stored for a long time and can be easily added to food or cosmetics by producing the pear concentrate in a powder form.

[0014] In addition, the present invention can provide a concentrated powder of pear with improved antioxidant function while maintaining the unique taste and flavor of pear.

[0015] In addition, the present invention can provide a concentrated powder of pear with excellent dispersibility.

[0016] The present invention relates to a method for producing a pear concentrate powder, comprising the steps of: (a) washing pear; (b) crushing the washed pear; (c) extracting the crushed pear with hot water to produce a pear extract; (d) filtering the pear extract; (e) concentrating the filtered pear to produce a pear concentrate; (f) mixing the pear concentrate and dextrin to produce a mixture; and (g) spraying the mixture to produce a pear concentrate powder.

[0017] The above step (a) is a step for washing the pear to remove foreign substances on the surface of the pear. The pear is washed with running water to remove pesticides and various foreign substances on the surface. Preferably, the pear can be washed at least three times in running water.

[0018] The above step (b) is a step of crushing the washed pears, and the washed pears can be crushed using a crusher. By crushing the pears, the pears can be made soft and flexible, and thus the antioxidant components contained in the pears can be easily extracted.

[0019] The above step (c) is a step for producing a pear extract by hot water extraction of the crushed pear. 800 to 1,000 parts by weight of water may be added to 100 parts by weight of the crushed pear, and the extraction may be performed under heating and pressure at 90 to 110°C for 250 to 350 minutes. Preferably, 1,000 parts by weight of water may be added to 100 parts by weight of the crushed pear, and the extraction may be performed under heating and pressure at 100°C for 5 hours.

[0020] The above step (d) is a step of filtering the extract of the pear, and the extract of the pear can be filtered using a 100 mesh filter. The above step (d) is a step of filtering the extract of the pear, and after filtering the extract using a filter, a filter membrane, etc., only the filtrate can be separately obtained and concentrated.

[0021] In addition, the present invention can filter the pear extract by adding an organic selenium solution and then passing the solution through a filter tank during the filtering step. The antioxidant function of the pear extract can be further enhanced through the organic selenium solution.

[0022] The organic selenium solution may include at least one of ethylendiaminetetracetic acid (EDTA), hydroxide, selenium oxide (SeO2), and acetyl thiazolidine carboxylic acid (ATCA).

[0023] Preferably, 5 to 10 parts by weight of the organic selenium solution may be mixed with 100 parts by weight of the pear extract, and then filtered. By adding the organic selenium solution in the above amount, the antioxidant function can be further enhanced without reducing the flavor of the pear extract.

[0024] At this time, the above-mentioned pear concentrate or pear concentrate with organic selenium solution added preferably has a solid content of 10 to 30 wt%. If the solid content is less than 10 wt%, it is difficult to manufacture a powder of uniform size, and if the solid content exceeds 30 wt%, there is a disadvantage in that processability is reduced.

[0025] The step (e) above is a step of concentrating the filtered pear extract (or pear extract containing organic selenium) to produce a pear concentrate (or pear extract containing organic selenium). The filtered pear extract (or pear extract containing organic selenium) can be concentrated using a vacuum concentrator to produce a pear concentrate (or pear concentrate containing organic selenium).

[0026] The above step (f) is a step of mixing a pear concentrate and dextrin to prepare a mixed solution. By mixing dextrin into the prepared pear concentrate, powder agglomeration can be prevented and the spraying process can be improved. Preferably, the dextrin may be maltodextrin. The dextrin may be mixed in an amount of 65 to 70 parts by weight based on 100 parts by weight of dried pear. Alternatively, the dextrin may be 10 to 35 parts by weight based on 100 parts by weight of the pear concentrate. If the dextrin content is less than 10 parts by weight, the stickiness of the pear concentrate cannot be resolved, and thus the spraying process may be difficult due to powder agglomeration. If the content exceeds 35 parts by weight, there is a disadvantage in that the powder is uneven.

[0027] The above step (f) is a step of producing a powder of concentrated pear juice by spraying the mixture. The powder of concentrated pear juice can be produced by putting the mixture into a spray drying device such as a spray dryer and evaporating the moisture while fluidizing it.

[0028] The above mixture is injected into a spray drying device and sprayed, so that moisture evaporates simultaneously with the flow, and a solid pear concentrate powder can be produced.

[0029] The present invention also relates to a powdered concentrate of pear produced according to the above-described production method.

[0030] The concentrated pear powder of the present invention has the advantages of long-term storage and easy addition to foods and cosmetics, thereby enhancing its industrial applicability. Furthermore, the concentrated pear powder has the advantages of excellent antioxidant properties while maintaining the unique flavor and aroma of pear.
