[0003] The disclosure generally relates to processing of slaughtered poultry, and more particularly to deskinning of poultry parts such as poultry legs or leg parts.

[0004] BACKGROUND

[0005] Removing the skin from the poultry parts is of great importance to the food processing industry. Animal skin is relatively rich in saturated fats, and health conscious consumers therefore prefer skinless meat products, especially skinless poultry products. Furthermore, as removing the skin from the animal part is generally a tedious process, and due to today’s convenience society, there is an increasing demand for purchasing animal meat skinless and ready to cook.

[0006] Various methods and systems have been developed for removing skin from poultry parts. WO2014 / 069992 for example proposes a deskinning arrangement in which a poultry part is conveyed along deskinning device that includes a roller and a knife that define a gap therebetween, wherein by rotation of the roller a skin portion of the poultry part is entrapped and drawn into the gap. The skin is hence pulled off the poultry part by the deskinning device.

[0008] It is an object to propose an improved system and method for removing skin from an poultry part. In a more general sense it is an object to overcome or reduce at least one of the disadvantages of the prior art. It is also an object to provide alternative solutions which are less cumbersome in assembly and operation and which moreover can be made relatively inexpensively. Alternatively it is an object to at least provide a useful alternative.

[0009] An aspect provides a device for removing skin from a poultry part, particularly a poultry leg or leg part, being conveyed by a conveyor along a path of conveyance. The device comprises a first roller and a second roller. The first roller is rotatable about a first rotation axis. The first roller is associated with a gap and configured for entrapping and drawing a portion of the skin of the poultry part in the gap. The second roller is rotatable about a second rotation axis. The second rotation axis is transverse to the first rotation axis. The first roller and the second roller are arranged on opposite lateral sides of the path of conveyance to define a passage therebetween for the poultry part to pass through while being conveyed by the conveyor. The passage is such that the first roller and the second roller engage the poultry part as it passes through the passage. The poultry part is hence engaged by the first roller for entrapping the skin in the gap and pulling the skin off the poultry part. The poultry part is hence also engaged by the second roller. The second roller can accordingly provide a counter force to the poultry part for enhancing the engagement of the first roller thereby increasing efficacy of the skin removal by the first roller. Particularly with the second rotation axis arranged transverse to first rotation axis, the poultry part can be slightly deformed at the passage along the direction of the first rotation axis to increase the engagement area between the poultry part and the first roller in that direction. The first roller can hence grip a larger skin portion to draw into the gap, thus reducing the risk of tearing the skin and leaving substantial skin portions attached to the poultry part.

[0010] The poultry part may be a poultry leg or leg part. The poultry part may particularly have a bone, e.g. the tibia bone, surrounded by meat. The poultry part may hence be a drumstick. Optionally, the second rotation axis extends transverse to the path of conveyance. Hence, the second roller can be rotatable about the second rotation axis in such rotation direction that, at the passage, a tangential velocity direction of a perimeter of the second roller is in the conveyance direction of the conveyance or opposite thereto.

Hence, the gap can be formed between the first roller and a third roller. Figure 1A shows a side view, figure IB shows a frontal view, and figure 1C shows a top view of the system 100. In this example the poultry parts 2 are poultry leg parts, particularly the lower leg part or drum of poultry legs.

In the intermediate angular position, the second roller 20 can engage the poultry leg part 2, such as to spread the meat of the poultry leg part 2, here particularly by opening the incision 3. Figure 1A shows an example of four consecutively conveyed poultry leg parts 2, wherein the right-most poultry leg part 2 is in the first angular end position and the leftmost poultry leg part 2 is in the second angular end position. Claims1. A device for removing skin from a poultry part being conveyed by a conveyor along a path of conveyance, the device comprising a first roller rotatable about a first rotation axis, the first roller being associated with a gap and configured for entrapping and drawing a portion of the skin of the poultry part in the gap; and a second roller rotatable about a second rotation axis transverse to the first rotation axis; wherein the first roller and the second roller are arranged on opposite lateral sides of the path of conveyance to define a passage therebetween for the poultry part to pass through while being conveyed by the conveyor, the passage being such that the first roller and the second roller engage the poultry part as it passes through the passage.

2. The device according to claim 1, wherein the second rotation axis extends transverse to the path of conveyance.

3. The device according to claim 1 or 2, wherein the second roller is rotationally drivable about the second rotation axis such that, at the passage, a tangential velocity of a perimeter of the second roller is different from a conveyance velocity of the conveyor.

The device according to any of the preceding claims, the second roller is rotationally drivable about the second rotation axis in such rotation direction that, at the passage, a tangential velocity of a perimeter of the second roller is directed opposite a conveyance direction of the conveyor, or wherein the second roller is rotationally drivable about the second rotation axis in such rotation direction and at such speed that, at the passage, atangential velocity of a perimeter of the second roller is directed in the conveyance direction and is lower than a conveyance speed of the conveyor.

5. The device according to any of the preceding claims, comprising an edge extending parallel to the first rotation axis and being arranged relative to the first roller to form the gap between the first roller and the edge.

6. The device according to any of the preceding claims, wherein the first rotation axis extends parallel to the path of conveyance.

7. The device according to any of the preceding claims, wherein the path of conveyance is in a horizontal plane and wherein the second rotation axis extends in a vertical direction.

8. The device according to any of the preceding claims, wherein the second roller includes a ribbed perimeter for engaging the poultry part.

9. The device according to any of the preceding claims, wherein the second roller includes a first perimeter radius and a second perimeter radius different from the first perimeter radius.

10. The device according to any of the preceding claims, comprising a third roller rotatable about a third rotation axis parallel to the first rotation axis, the third roller being arranged proximate the first roller for defining the gap between the first roller and the third roller.

11. The device according to any of the preceding claims, wherein the second roller is a compliant roller, for example being made of a compliant material.

12. A system comprising a conveyor for conveying a poultry part along path of conveyance, and a device according to any of the preceding claims arranged in the path of conveyance for removing skin from the poultry part while being conveyed by the conveyor.

13. The system according to claim 12, wherein the conveyor is an overhead conveyor.

14. The system according to claim 12 or 13, wherein the path of conveyance is in a horizontal plane.

15. The system according to any of claims 12-14, wherein the conveyor includes a poultry part holder for holding the poultry part, wherein the poultry part holder is pivotable about pivot axis that extends parallel to the second rotation axis.

16. The system according to claim 15, wherein the poultry part holder is configured to pivot about the pivot axis while being conveyed along the first roller.

17. The system according to any of claims 12-16, comprising a cutting station, with respect to the path of conveyance upstream of the device, for making a preparatory incision in the poultry part.

18. The system according to claim 17, wherein the poultry part is a leg or leg part having a bone that extends longitudinally and that is surrounded by meat, and wherein the cutting station is configured for making a longitudinal preparatory incision longitudinally of the poultry part.

19. The system according to claim 18, wherein the cutting station is configured for making a transverse preparatory incision at a circumference of the poultry part, transverse to the longitudinal direction of the poultry part.

20. The system according to claim 19, wherein the transverse preparatory incision includes a first section and a second section, the first section and the second section being separated from each other within a transverse plane and provided on opposing sides of the poultry part.

21. The system according to claim 20, wherein one of the first or second sections intersects with the longitudinal preparatory incision.

22. A method for removing skin from a poultry part, comprising providing a device according to any of claims 1-11, or a system according to any of claims 12-21, and conveying the poultry part along the path of conveyance through the passage between the first roller and the second roller.

23. The method according to claim 22, comprising driving the second roller about the second rotation axis that, at the passage, a tangential velocity of a perimeter of the second roller is different from a conveyance velocity of the conveyor.

24. The method according to claim 22 or 23, comprising driving the second roller in rotation in such rotation direction about the second rotation axis that, at the passage, a tangential velocity of a perimeter of the second roller is directed opposite a conveyance direction of the conveyor, and / or driving the second roller in rotation in such rotation direction and at suchspeed about the second rotation axis that, at the passage, a tangential velocity of a perimeter of the second roller is directed in the conveyance direction and is lower than a conveyance velocity of the conveyor.

25. The method according to any of claims 22-24, wherein the poultry part is a poultry leg or leg part having a bone extending therein.

26. The method according to claim 25, wherein the poultry leg or leg part is held by a bone holder of the conveyor and conveyed by the conveyor depending from the bone holder.

27. The method according to claim 26, wherein the poultry leg or leg part has an incised side where the poultry leg or leg part has been incised longitudinally, and wherein the method comprises conveying the poultry part through the passage with the incised side of the poultry leg or leg part facing away from the first roller.

28. The method according to claim 27, wherein the poultry leg or leg part has been incised transversely at only a part of a circumference of the poultry leg or leg part, at or near a joint of the poultry leg or leg part proximate the bone holder.

29. The method according to any of claims 22-28, comprising, while conveying the poultry part along the first roller, pivoting the poultry part about a pivot axis that extends parallel to the second rotation axis.

30. The method according to claim 29, wherein the pivoting comprises pivoting the poultry part about the pivot axis in a rotation direction opposite to the rotation direction of the second roller.
