[0021] The present disclosure is based on the finding that sweet proteins can be effectively utilized in the preparation of various nutraceutical products, particularly in sugar-reduced functional foods and dietary supplements.
[0022] Nutraceutical products such as dietary supplements and functional foods, typically include functional ingredients including, inter alia, vitamins, minerals, and / or herbal extracts, are formulated to support overall well-being and address specific health concerns.
[0023] One of the challenges in the formulation of many of these products is the presence of added sugars. Sugar is commonly used in such products to improve taste, improve texture, and increase consumer acceptability, including, for example, in chewable tablets, gummies, syrups, and flavored powders. This may result in a situation in which people while seeking health benefits from supplements may unknowingly consume high amounts of sugar, counteracting the intended positive effects of these products and lead to health risks, such as obesity, diabetes, metabolic disorders, and dental problems.
[0024] The use of proteins and specifically sweet proteins presents an advantage in the preparation of these products.
[0025] Initially, the growing awareness of sugar-related health risks has driven demand forlow-sugar or sugar-free dietary supplements. However, reducing or eliminating sugar while maintaining product stability, palatability, taste and efficacy poses significant formulation challenges.
[0026] The use of sweet proteins as shown here successfully addresses this concern as the addition of sweet proteins results in a nutraceutical product that is characterized by reduced sugar as compared to the full-sugar counterpart nutraceutical product without the sweet proteins. It should be noted that the reduction of sugar achieved by addition of sweet protein(s) may be also significant even if the counterpart nutraceutical product is a reduced sugar product by itself. In addition, the addition of sweet protein(s) can be used in order to replace sugar alternatives in the counterpart nutraceutical product while maintaining a similar level of sweetness.
[0027] In addition, due to the high sweetness intensity of the sweet proteins, small quantities of the protein may be added in order to achieve the desired level of sweetness, thereby leaving more space within the product for other beneficial ingredients including, inter alia, vitamins or minerals. This efficient use of space enables products to pack a higher concentration of essential nutrients and bioactive compounds into the product, maximizing its nutritional value and potential health benefits for consumers.
[0028] Many nutraceutical products, including functional foods such as beverages, confections, or dietary supplements, traditionally rely on sucrose for sweetness, texture, and bulk. However, reducing sugar content through the incorporation of sweet proteins presents both advantages and challenges. As noted herein, sugar reduction may enhance the nutritional profile and facilitate the incorporation of additional bioactive compounds.

1. A food product comprising one or more bioactive compounds and one or more sweeteners, wherein said one or more sweeteners is or comprises at least one sweet protein.
2. The food product of claim 1, wherein said bioactive compound is or comprises one or more of a vitamin, a mineral, a botanical extract, a phytochemical, an amino acid, a probiotic, a prebiotic, a postbiotic, a peptide, a protein, a nucleotide, a nucleoside, a polyphenol, a flavonoid, a carotenoid, an alkaloid, a glycoside, a lipid, an essential fatty acid, an antioxidant, an enzyme, a metabolite, an electrolyte, a stimulant, a fiber or any combination thereof.
3. The food product of claim 1 or 2, wherein said bioactive compound is one or more of a vitamin, a mineral, an antioxidant, caffeine, taurine, a fiber or any combination thereof.
4. The food product of any one of claims 1 to 3, wherein said vitamin is one or more of vitamin C, vitamin B, vitamin A, vitamin D, vitamin E, vitamin K or any combination thereof.
5. The food product of claim 4, wherein said vitamin B is one or more of vitamin B 1 (Thiamine), vitamin B2 (Riboflavin), vitamin B3 (Niacin), vitamin B5 (Pantothenic acid), vitamin B6 (Pyridoxine), vitamin B7 (Biotin), vitamin B9 (Folic Acid), vitamin B12 (Cobalamin) or any combination thereof.
6. The food product of any one of claims 1 to 3, wherein said mineral is a mineral salt.
7. The food product of claim 6, wherein said mineral salt is one or more of a is a magnesium salt, a potassium salt, a calcium salt, a sodium salt or any combination thereof.
8. The food product of any one of claims 1 to 3, wherein said fiber is inulin, fructooligosaccharides (FOS), Galactooligosaccharides (GOS) or any combination thereof.
9. The food product of any one of claims 1 to 8, comprising at least 20% of a daily recommended value of said at least one bioactive compound.
10. The food product of any one of claims 1 to 9, wherein said sweet protein is at least one protein selected from the group consisting of Monellin, Thaumatin, Miraculin, Curculin, Brazzein, Mabinlin, sweet protein from honey truffle or a variant or combination thereof.

The food product of any one of claim 1 to 10, wherein said sweet protein is or comprises one or more proteins denoted by SEQ ID NO:1, SEQ ID NO:2, SEQ ID NO:3, SEQ ID NO:4, SEQ ID NO:5, SEQ ID NO:6, SEQ ID NO:7, SEQ ID NO:8, SEQ ID NO :9, SEQ ID NO : 10, SEQ ID NO : 11 , SEQ ID NO : 12, SEQ ID NO : 13 , SEQ ID NO :352, a variant thereof or any combinations thereof.
12. The food product of any one of claim 1 to 9, wherein said sweet protein is or comprises a protein denoted by SEQ ID NO: 14, SEQ ID NO: 350, a variant thereof or a combination thereof.
13. The food product of any one of claim 1 to 9, wherein said at least one sweet protein is or comprises one or more proteins denoted by SEQ ID NO: 14- SEQ ID NO:351, SEQ ID NO:353-SEQ ID NO:479, a variant thereof or any combination thereof.

The food product of any one of any one of claims 1 to 13, wherein said at least one sweet protein is or comprises one or more proteins denoted by SEQ ID NO: 16, SEQ ID N0:17, SEQ ID NO:39, SEQ ID NO:53, SEQ ID NO:104, SEQ ID NO:186, SEQ ID NO:217, SEQ ID NO:263, SEQ ID NO:257, SEQ ID NO:351, a variant thereof or any combinations thereof.
15. The food product of any one of claims 1 to 14, wherein said at least one sweet protein is at a concentration of at least about 0.00001 / w%.
16. The food product of any one of claims 1 to 15, comprising stevia or any derivative thereof.
17. The food product of claim 16, wherein said stevia or any derivative thereof is or comprises at least one of steviol glycoside, Rebaudioside A (Reb A), Rebaudioside M (Reb M), Rebaudioside D (Reb D), Stevioside, Rebaudioside or a combination thereof.
18. The food product of any one of claims 1 to 15, comprising one or more sweetener selected from the group consisting of at least one sugar, high intensity sweetener, a natural sweetener, a sugar alcohol, a rare sugar, an amino acid or a combination thereof.
19. The food product of claim 18, wherein said sugar is one or more of sucrose, glucose, lactose, fructose, palatinose or a combination thereof.
20. The food product of claim 18, wherein said high intensity sweetener is one or more of saccharin, aspartame, acesulfame, potassium (ace-k), neotame, advantame or a combination thereof.
21. The food product of claim 18, wherein said natural sweetener is one or more of monk fruit, mycodulcein, glycine, honey, agave, maple syrup, Silan, black treacle, molasses or a combination thereof.
22. The food product of claim 18, wherein said sugar alcohol is one or more of mannitol, maltitol, sorbitol, xylitol, lactitol, isomalt, erythritol or a combination thereof.
23. The food product of claim 18, wherein said rare sugar is one or more of allulose, turanose, isomaltulose, isomaltose, tagarose or a combination thereof.
24. The food product of any one of claims 1 to 23, comprising one or more non-tastemodulating proteins.
25. The food product of claim 24, comprising said non-taste-modulating protein is one or more of whey protein, a casein protein, a soy protein, a pea protein, a rice protein, a chickpea protein or any combination thereof.
