[0249] Analysis of odorants in fermented products
[0250] Odorants contained in the seven types of fermented products in Table 1 above were analyzed.
[0251] Specifically, for each of the seven fermented products in Table 1, the flavor was adsorbed using solid phase microextraction (SPME) and analyzed by gas chromatography-mass spectrometry (GC-MS). Specifically, 4.0 g of the fermented product sample was placed in a vial, sealed, and shaken at 250 rpm for 10 minutes at 40°C to achieve equilibrium conditions, and then adsorbed onto a 50 / 30 μm DVB / CAR / PDMS SPME fiber at 40°C for 30 minutes. The adsorbed sample was then introduced into a GC injector and desorbed at 200°C for 5 minutes. [0256] Analysis of Key Odorants in Edible Compositions
[0257] Key odorants, which are the main factors of flavor of the four types of sauces obtained in Example 1 above, were analyzed.
[0258] Specifically, the volatile aroma components in the headspace of the sample vials containing each of the four sources obtained in Example 1 were adsorbed and concentrated on a polymer film coated on a fiber (DVB / CAR / PDMS) through solid phase microextraction (SPME). The volatile aroma components separated by GC (gas chromatography) were subjected to GC-O (Gas Chromatography Olfactometry) equipped with an olfactory detection port (Olfactory Detection Port, ODP4, Gerstel) by a human evaluator who detected the odor (i.e., scent) of the separated components through the sense of smell and described the perceived odor or evaluated the intensity of the odor or the duration of odor activity.
