Abstract

An edible oil composition comprises polyglycerol fatty acid esters and palm oil or palm oil fraction, wherein the polyglycerol fatty acid esters are present in an amount of 0.01 to 0.1 wt. % based upon the weight of the said composition, its method for preparation and the use of polyglycerol fatty acid esters to delay the clouding of an edible oil composition comprising palm oil or a palm oil fraction.

Oil Composition with improved freezing resistanceFIELD OF THE INVENTION

[0001] The present invention relates to the technical field of edible oils, and more specifically to an oil composition with improved freezing resistance and a method for improving the clouding of an edible oil comprising palm oil or a palm oil derivative.BACKGROUND OF THE INVENTION

[0002] Palm oil is the oil extracted from the fruit of the oil palm tree. It is the most widely consumed oil in the world, and finds its applications in various technical fields, from food and personal-care products to biofuel.

[0003] Palm oil has a unique fatty acid profile, having approximately 50%saturated fatty acids and 50%unsaturated fatty acids. Due to such a fatty acid profile, palm oil has a high smoke point and is naturally stable against oxidative deterioration. Furthermore, it does not have a strong flavor. As such, it is particularly suitable for use as a cooking or frying oil. However, due to the presence of a high amount of saturated fatty acids, palm oil is prone to clouding when stored at room temperature in cold weather, which affects consumer perception of the oil’s quality.

[0004] Clouding of palm oil or a palm oil derivative refers to the process of crystallization and precipitation of high melting saturated fatty acids and derivatives thereof contained in the oil. The precipitated crystals result in a hazy or cloudy appearance of the oil, which consumers may perceive as an indication of quality deterioration. As such, extensive research has been done to study the crystallization behavior of palm oil, to prevent or delay the clouding of palm oil or its derivative during storage for quality control purposes.

[0005] For instance, scientists found that the presence of diacylglycerols in high concentration inhibits nucleation and slows down crystal growth of certain ingredients in palm oil. Also, sorbitan esters as additives were found to inhibit palm oil crystallization.

[0006] There is still a need in the industry to identify a composition comprising palm oil or palm oil derivatives that are less prone to clouding. The present invention provides such a composition.SUMMARY OF THE INVENTION

[0007] The present invention relates to an edible oil composition comprising polyglycerol fatty acid esters and palm oil or palm oil fraction wherein the polyglycerol fatty acid esters are present in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.

[0008] It further relates to a method for producing the edible oil composition of the present invention.

[0009] Finally, it relates to the use of polyglycerol fatty acid esters to delay the clouding of an edible oil composition comprising palm oil or a palm oil fraction.DETAILED DESCRIPTION

[0010] The present invention relates to an edible oil composition comprising polyglycerol fatty acid esters and palm oil or palm oil fraction wherein the polyglycerol fatty acid esters are present in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.

[0011] Polyglycerol fatty acid esters (PGEs) are a type of emulsifier formed by the esterification of polyglycerol with fatty acids. They are non-ionic surfactants and are currently as such in use in the food, pharmaceutical, and cosmetic industries.

[0012] Preferably the polyglycerol fatty acid esters are present in an amount of 0.02 to 0.1 wt. %based upon the weight of the composition, more preferably in an amount of 0.05 to 0.07 wt. %based upon the weight of the composition.

[0013] Palm oil or palm oil fraction such as palm oil stearin has a unique fatty acid profile. With fatty acid profile is meant the percentages of fatty acids that are bound as acyl groups in the (tri) glycerides. The fatty acid profile is determined by standard techniques, such as fatty acid methyl ester (FAME) analysis using gas chromatography according to AOCS method Ce1-62. The %of fatty acid residues discussed in this description are based on the total weight of all C8 to C24 fatty acids, both saturated as well as unsaturated.

[0014] Due to the presence of a high amount of saturated fatty acids, palm oil is prone to clouding when stored at room temperature in cold weather, which affects consumer perception of the oil’s quality. Clouding of palm oil or a palm oil derivative refers to the process of crystallization and precipitation of high melting saturated fatty acids and derivatives thereof contained in the oil. The precipitated crystals result in a hazy or cloudy appearance of the oil, which consumers may perceive as an indication of quality deterioration.

[0015] In certain applications, palm oil is also identified by degree. The degree of palm oil refers to its melting point. The term “10 degree palm oil” refers to palm oil which is liquid at 10 ℃ or higher and solidifies below 10 ℃. In the food industry, palm oil of 24 degree or below is usually used as cooking oil or raw material for food products such as cookies and instant noodles. In general, the lower the degree of palm oil is, the higher the cost will be. As such, 14 degree and 18 degree palm oil are more often used given the balance between their melting points and production costs in the food industry.

[0016] In general, palm oil has a fatty acid profile including from 35%to 40 wt. %of palmitic acid (C16: 0) and from 2%to 5 wt. %of stearic acid (C18: 0) in palm oil. In fact, 14 degree palm oil has a fatty acid profile of 35 to 37.5 wt. %of palmitic acid and 2.0 to 4.5 wt. %of stearic acid. 18 degree palm oil has a fatty acid profile with a higher content of these saturated fatty acids, i.e. 37.5 to 40 wt. %of palmitic acid and 3 to 5 wt. %of stearic acid.

[0017] In a further aspect of the present invention, the edible oil composition is further comprising a liquid oil that is liquid at 20℃. Preferably, the liquid oil is selected from sunflower oil, corn oil, soybean oil, canola oil, rapeseed oil, cottonseed oil, rice bran oil, safflower oil, flaxseed oil, linseed oil, peanut oil, or mixtures of two or more thereof.

[0018] In an aspect of the invention, the liquid oil is soybean oil.

[0019] In an aspect of the present invention, the palm oil or palm oil fraction is present in an amount of 20%to 99%by weight of the edible oil composition. The palm oil or palm oil fraction is present in an amount of 50%to 90%by weight of the edible oil composition, in an amount of from 60%to 85%by weight of the edible oil composition.

[0020] In an aspect of the invention, the palm oil is present in an amount of 95 to 99%by weight of the edible oil composition, preferably from 98 to 99 by weight of the edible oil composition. Soybean oil is present in an amount of 1 to 5%, preferably from 1 to 2 %by weight of the edible oil composition.

[0021] Similar compositions are obtained by selecting the liquid oil from canola oil, rapeseed oil, corn oil sunflower oil, peanut oil, sesame oil or mixtures of two or more thereof, instead of the soybean oil.

[0022] In a further aspect of the invention, the edible oil composition is tea polyphenol palmitate in an amount of 0.02 to 0.1 wt. %based upon the weight of the composition, preferably in an amount of 0.02 to 0.05 wt. %based upon the weight of the composition.

[0023] Tea polyphenol palmitate is a natural plant component that is well-known as an antioxidant and it is applied as such in several applications. It is a non-toxic, and fat-soluble food antioxidant.

[0024] Surprisingly, it has been found that polyglycerol fatty acid esters and tea polyphenol palmitate have anti-freeze properties, and it can be used to delay the clouding of edible oil compositions comprising palm oil or palm oil fraction.

[0025] Surprisingly it has been found that there is a synergistic effect is observed by having polyglycerol fatty acid esters and tea polyphenol palmitate present in the edible oil composition of the present invention and the anti-freeze properties are more pronounced..

[0026] In a preferred aspect of the invention, polyglycerol fatty acid esters are present in an amount 0.01 to 0.1 %and tea polyphenol palmitate is present in an amount of 0.01 to 0.02 %based upon the weight of the composition.

[0027] In an even more preferred aspect of the invention, polyglycerol fatty acid esters are present in an amount 0.03 to 0.05 %and tea polyphenol palmitate is present in an amount of 0.01 to 0.02 %based upon the weight of the composition.

[0028] The current invention further relates to method for producing a composition of the present invention and the method is comprising the following steps:

[0029] a. Making an edible oil composition by adding polyglycerol fatty acid esters to an edible oil comprising palm oil or palm oil fraction;

[0030] b. Bringing the temperature to at least 80℃ and stir the edible oil composition for at least 1 minute;

[0031] c. optionally adding tea polyphenol palmitate in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition;

[0032] d. optionally continue stirring the composition at a temperature of at least 80℃ for at least 1 minute;

[0033] Wherein the polyglycerol fatty acid esters are added in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.

[0034] First the palm oil or palm oil fraction is provided or is blended with the liquid oil selected from sunflower oil, corn oil, soybean oil, canola oil, rapeseed oil, cottonseed oil, rice bran oil, safflower oil, flaxseed oil, linseed oil, peanut oil, or mixtures of two or more thereof. Polyglycerol fatty acid esters in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition are added to the edible oil blend and temperature is increased to 80℃. This allows a smooth homogenisation. Meanwhile the edible oil composition is stirred for at least 1 minute, 5 minutes, up to 10 minutes.

[0035] Optionally, tea polyphenol palmitate is added to the edible oil blend at temperature at 80℃ or higher. This allows a smooth homogenisation. Meanwhile the edible oil composition is stirred for at least 1 minute, 5 minutes, up to 10 minutes.

[0036] After cooling the edible oil composition of the present invention is obtained and this composition demonstrates anti-clouding properties. The edible oil composition of the present invention was still clear without any demonstration of crystal formation after 6 hours. The corresponding comparative oil blend that did not contain polyglycerol fatty acid esters showed clouding even after 3.5 hours and resulted in a blend that is rejected for use as frying oil.

[0037] In an aspect of the invention, the edible oil composition comprising polyglycerol fatty acid esters and tea polyphenol palmitate was still clear without any demonstration of crystal formation after 9 hours, even for more than 10 hours.

[0038] In an aspect of the invention, the edible oil composition comprising polyglycerol fatty acid esters in an amount 0.01 to 0.1 %and tea polyphenol palmitate in an amount of 0.01 to 0.02 %based upon the weight of the composition, was still clear without any demonstration of crystal formation for at least 9 hours.

[0039] In an aspect of the invention, the edible oil composition comprising polyglycerol fatty acid esters in an amount 0.03 to 0.05 %and tea polyphenol palmitate in an amount of 0.01 to 0.02 %based upon the weight of the composition, was still clear without any demonstration of crystal formation for at least 9.5 hours, even up to 10.8 hours.

[0040] The edible oil composition of the present invention is particular useful for its use as frying oil. The presence of the polyglycerol fatty acid esters and optionally the tea polyphenol palmitate in the edible oil composition prevents clouding and the content of palm oil in the blend can be increased with at least 10%, up to 30%compared to compositions that do not contain polyglycerol fatty acid esters and optionally tea polyphenol palmitate.

[0041] The present invention relates to the use of polyglycerol fatty acid esters to delay the clouding of an edible oil composition comprising palm oil or a palm oil fraction.

[0042] In an aspect of the invention, it relates to the use wherein the edible oil composition is comprising 20%to 99%of palm oil or palm oil fraction by weight of the edible oil composition.

[0043] In an aspect of the invention, it relates to the use wherein the delay of the clouding of an edible oil composition comprising palm oil or a palm oil fraction is elongated by adding polyglycerol fatty acid esters and tea polyphenol palmitate.

[0046] - The anti-clouding properties are further improved by adding in addition to polyglycerol fatty acid esters further tea polyphenol palmitate.

[0050] Measurement.

[0051] Anti-clouding properties

[0052] Use a sampling bottle to hold 200 ml of clear and transparent oil sample to be tested, seal the bottle mouth with sealing film, and place it in a constant temperature water bath at 40℃±0.5℃for 1 hour. Make sure that the liquid surface of the water bath covers the liquid surface of the oil.

[0053] Take it out from the 40-degree water bath and immediately place it in a 24.5±0.5℃ water bath to cool to room temperature for 1 hour. Take it out from the 24.5-degree water bath and immediately place it in a constant temperature box at 10±1℃. At the beginning, the observation time can be every 30 minutes. When it is close to the time of clouding, observe it every 10 minutes. Continue observing until it becomes clouded and record the clarification time.

[0055] Preparation method

[0056] After heating the base oil (= 99%of 18-degree palm oil) and 1%of soybean oil) to 80 degrees, add the corresponding proportion of polyglycerol fatty acid ester, stir for 5-10 minutes, and rotate at 200r / min; then continue to heat the oil to 80-120 degrees, add the corresponding proportion of tea polyphenol palmitate, stir for 5-10 minutes, and rotate at 200r / min. All the additives will be dissolved.

1.An edible oil composition comprising polyglycerol fatty acid esters and palm oil or palm oil fraction wherein the polyglycerol fatty acid esters are present in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.2.An edible oil composition according to claim 1 wherein the composition is further comprising tea polyphenol palmitate in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.3.The composition according to claim 1 or 2 wherein the composition is further comprising a liquid oil that is liquid at 20℃.4.The composition according to 2 wherein the liquid oil is selected from sunflower oil, corn oil, soybean oil, canola oil, rapeseed oil, cottonseed oil, rice bran oil, safflower oil, flaxseed oil, linseed oil, peanut oil, or mixtures of two or more thereof.5.The composition according to anyone of the preceding claims wherein the palm oil or palm oil fraction is present in an amount of 20%to 99%by weight of the edible oil composition.6.A method for producing a composition according to any one of claims 1 to 5 and the method is comprising the following steps:a. Making an edible oil composition by adding polyglycerol fatty acid esters to an edible oil comprising palm oil or palm oil fraction;b. Bringing the temperature to at least 80℃ and stir the edible oil composition for at least 1 minute;c. optionally adding tea polyphenol palmitate in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition;d. optionally continue stirring the composition at a temperature of at least 80℃ for at least 1 minute;Wherein the polyglycerol fatty acid esters are added in an amount of 0.01 to 0.1 wt. %based upon the weight of the composition.7.Use of polyglycerol fatty acid esters to delay the clouding of an edible oil composition comprising palm oil or a palm oil fraction.8.The use according to claim 7 wherein the edible oil composition is comprising 20%to 99%of palm oil or palm oil fraction by weight of the edible oil composition.9.The use according to claim 7 or 8 wherein the delay of the clouding of an edible oil composition comprising palm oil or a palm oil fraction is elongated by further adding tea polyphenol palmitate.
