Abstract

The application belongs to the technical field of microcapsule preparation, and discloses a lutein microcapsule with high stability and antioxidant activity and a preparation method thereof. In the application, protein is dissolved, then Tagetes erecta polyphenol solution and lutein solution are added, and after sufficient stirring for a certain time, polysaccharide solution is added, pH is adjusted, and magnetic stirring is carried out for 1-2 hours, and then lutein microcapsule powder is obtained by freeze-drying. In the application, the lutein microcapsule is prepared by using Tagetes erecta polyphenol, protein and polysaccharide, so that the stability of lutein is improved, the antioxidant activity of lutein is enhanced, and the prepared Tagetes erecta polyphenol composite lutein microcapsule has high application value in the fields of food and medicine.
