AI Technical Summary
Traditional chocolic forms have challenges in solubility and shelf life, especially the low permeability of solid forms leads to long dissolution times and moisture content in the pellet/powder form leads to microbial growth and shorter shelf life.
Free-flowing particles reach specific sizes and moisture levels by grinding and sieving sugar powders of sugar cane, palm or coconut, and compressing them into blocks in the mold, which are then dried and cooled, and finally packaged to ensure moisture control.
The high solubility and excellent shelf life of instant chocola cubes have been achieved, overcoming the solubility and shelf life problems of traditional chocola forms, making it a commercially acceptable alternative.
Abstract
Description
Technical Field
[0001] The present invention relates generally to the field of food products. In particular, the present invention provides an instant jaggery cube and a method for preparing the same. Background Art
[0002] The Background Description includes information that may be helpful in understanding the present invention. It is not an admission that any of the information provided herein is prior art or relevant to the presently claimed invention, or that any publication explicitly or implicitly referenced is prior art.
[0003] Today, people are becoming more aware of their food choices and are opting for organic or natural alternatives to processed or ultra-processed foods. There is an area where people are demanding better unprocessed food options rather than specific highly processed food options.
[0004] Around the world, about 3.7 billion cups of tea and about 4 billion cups of coffee are consumed every day. A study in Public Health in May 2017 found that about two-thirds of coffee drinkers and one-third of tea drinkers put sugar (sugar cubes / sugar powder) or sugary flavorings in their drinks. In addition to tea and coffee, many other hot / cold beverages are served around the world after refined sugar is added. Long-term use of white sugar (in the form of sugar cubes / sugar granules / sugar powder) (which is added to their cups of tea / coffee and other drinks) will affect their physical health. Even brown sugar cubes, which are touted as a better alternative to white sugar cubes, are not much better as they are also processed with various chemicals and have little nutritional value.
[0005] Overuse of this pure sugar with zero nutrition is leading to various health issues around the world. Refined sugar intake is linked to diseases like obesity, type 2 diabetes, and heart disease. According to the World Health Organization (WHO), obesity has almost tripled globally since 1975. In 2016, more than 1.9 billion adults aged 18 years and above (39% of adults) were overweight. Of these, more than 650 million people (13% of adults) were obese. Refined sugar intake is considered to be one of the major reasons for the increase in obesity worldwide. Aware of these issues, many people around the world want to switch from refined white / brown sugar to unrefined / organic / healthier sweeteners like jaggery, honey, etc.
[0006] Jaggery is considered the healthiest alternative to refined white / brown sugar as it is less likely to alter the taste of the food to which it is added. According to current technology, jaggery is produced in three forms: solid, granular and liquid. However, jaggery is less expensive and has nutritional and medicinal properties; its routine use in tea / coffee / other beverages and food preparations in its three existing forms is somewhat challenging. In the solid form of jaggery, the main challenge is the low solubility due to its extremely low osmotic pressure. The time-consuming process of dissolving solid jaggery in tea / coffee / other hot or cold beverages makes its use less attractive. Although jaggery in granular / powder form can be dissolved in tea / coffee / other beverages, its inherent moisture content can lead to microbial growth in it and shorten its shelf life to a few months. In addition, due to its inherent moisture, it becomes sticky and non-free-flowing, which makes it inconvenient to use. Therefore, there are convenience, hygiene and quality issues associated with the use of jaggery granules / jaggery powder, which makes it less attractive. The use of jaggery in liquid form is very limited in some food preparations, which is further impaired by the same limitations as jaggery in granular form.
[0007] At the industrial level, the raw sugar available in granular form is not produced in the form of fine powder and has uneven moisture locked in particles of different sizes. It also has some insoluble particles and stickiness. When compressed into a mold, the uneven moisture is destroyed and appears on the surface of the block and sticks to the mold, making it impossible to form a block.
[0008] Therefore, there is a need in the art to provide a new and improved form of raw sugar and a method for its preparation that is commercially acceptable and overcomes one or more problems associated with conventional forms and methods of preparation. The present disclosure satisfies this existing need.

[0080] In one embodiment, the cube has a shelf life of more than 6 months. In one embodiment, the cube has a shelf life of more than 12 months.
[0081] In one embodiment, the cubes have a lower density than solid raw sugar and are permeable, thus, dissolving quickly in hot / cold beverages and other food preparations, thereby overcoming the low solubility problem of solid raw sugar. In one embodiment, in cold beverages, refined white sugar cubes fail to dissolve completely despite vigorous stirring, while these raw sugar cubes dissolve quickly. This makes instant raw sugar cubes a perfect, healthy and even better alternative to refined white / brown sugar cubes.
[0082] In one embodiment, these cubes also overcome the moisture content problem inherent in raw sugar granules / raw sugar powder, as the moisture content of the raw raw sugar granules is balanced in the first stage of production by grinding and sieving, thereby evenly distributing the moisture over the desired size of the granules. This also solves the stickiness problem. Moreover, by using a specific quality of stainless steel material with a non-stick coating to make the mold of the machine, the stickiness problem is further solved. Thereafter, during the drying of the cubes, the moisture in the cubes is removed to acceptable industry standard levels to avoid microbiological activity. In one embodiment, the cubes are immediately packed into aluminum foil packaging into single cube packaging to further ensure that there is little to no microbiological activity over an extended shelf life.
[0083] Furthermore, it is easy for consumers to switch from one type of sweetener cube to a healthier type of sweetener cube as the convenience of use and storage is not changed and hence no change in consumer habit patterns is required. This would make instant jaggery cubes a commercially acceptable alternative.

Each cube showed a weight loss of 0.15 g (3%) after drying. The moisture level was checked in a Wensar moisture analyzer model PGB-1MB and the moisture reading of the cubes was 0.80%.
[0121] Step VII: The dried cubes obtained in step VI were cooled at a temperature of 25°C for 10 minutes. After cooling, the moisture level was checked in a Wensar moisture analyzer model PGB-1MB and the moisture reading of the cubes was 0.85%. The color of the final cubes was brown.
[0122] Step VIII: Pack the cooled cubes obtained in step VII in aluminum foil packaging as individual candy packaging for each cube.
[0123] Step IX: A dissolution test was performed by placing the cubes obtained in step VIII into hot water at 70°C and stirring at 50 RPM. The cubes completely dissolved in water within 15 seconds.
[0124] Step X: A dissolution test was performed by placing the cubes obtained in step VIII into cold water at 10°C and stirring at 50 RPM. The cubes completely dissolved in water within 35 seconds.
