[0002] Fats and oils are important components of food and are widely used in the food industry. Confectionery products such as chocolate, chocolate-like products, coatings, fillings, or spreads contain fats and oils, which play an important role in texture and sensory properties such as mouthfeel, texture, flavor release, flavor intensity, processability, and shelf life.

[0007] According to the present invention, a confectionery product is provided comprising 20% to 70% by weight of a sweetener; and 20% to 70% by weight of a plant-based fat phase; wherein the plant-based fat phase has 1.0% to 10.0% by weight of total lauric acid (C12:0) and myristic acid (C14:0); and 20.0% to 70.0% by weight of total palmitic acid (C16:0) and stearic acid (C18:0); the percentage of acids refers to acids bound as acyl groups in the glycerides of the plant-based fat phase and is based on C8 to C9. Fifteen panel members participated in the sensory evaluation, conducted in a room at approximately 20°C. Samples were presented alongside a series of coded test samples, one of which served as a blinded reference for another product sample. Panel members were required to evaluate multiple pairs, with the reference sample evaluated each time, followed by the coded test sample / blinded reference. The order of sample presentation was balanced throughout the panel and meeting sessions.

Claims
1. A confectionery product comprising 20 to 70 wt% of a sweetener; and 20 to 70 wt% of a plant-based fat phase; wherein the plant-based fat phase has: 1.0 to 10.0 wt% of total lauric acid (C12:0) and myristic acid (C14:0); and 20.0 to 70.0 wt% of total palmitic acid (C16:0) and stearic acid (C18:0); the percentage of the acid refers to the acid bound as acyl groups in the glycerides of the plant-based fat phase and is based on the total weight of C8 to C24 fatty acids; a total palmitic acid (C16:0) and stearic acid (C18:0) in the second position of the triglycerides in a percentage of the total palmitic acid (C16:0) and stearic acid (C18:0) in the triglycerides of the plant-based fat phase (Sn-2 total palmitic and stearic acid %) of at least 1.0%; at most 10.0 wt% of total CN32, CN34, CN36, CN38 and CN40 triglycerides; based on the total triglycerides present in the plant-based fat phase.
2. The confectionery product according to claim 1 comprising: 30 to 65 wt%, preferably 35 to 60 wt%, more preferably 40 to 55 wt%, and even more preferably 40 to 50 wt% of the sweetener; and / or 20 to 60 wt%, preferably 20 to 50 wt%, more preferably 20 to 45 wt%, and even more preferably 20 to 40 wt% of the plant-based fat phase; and / or wherein the product further comprises at most 10 wt% of water, more preferably at most 5 wt% of water, more preferably at most 1 wt% of water, and even more preferably at most 0.1 wt% of water.
3. The confectionery product according to claim 1 or claim 2 further comprising one or more ingredients selected from the group consisting of cocoa powder, cocoa mass, skimmed milk powder, vanillin, emulsifiers, colorants and flavorings.
4. The confectionery product according to claim 3 wherein the confectionery product further comprises at most 0.10 wt%, preferably at most 0.05 wt%, more preferably at most 0.01 wt%, and even more preferably at most 0.0005 wt% of butter flavoring.

The confectionery product according to any one of the preceding claims further comprising a plant-based milk powder, such as almond milk powder, soy milk powder, coconut milk powder, rice milk powder, oat milk powder, pea milk powder, peanut milk powder, cashew milk powder, black wheat milk powder, wheat milk powder, barley milk powder, spelt milk powder, millet milk powder, derivatives thereof and mixtures thereof, preferably wherein the plant milk powder is oat milk powder or rice milk powder, and more preferably wherein the plant milk powder is oat milk powder.
6. The confectionery product according to claim 5, wherein the confectionery product further comprises 0.001 to 0.5 wt.%, preferably 0.001 to 0.050 wt.%, more preferably 0.005 to 0.030 wt.%, and even more preferably 0.010 to 0.025 wt.% plant-based milk powder.

The confectionery product according to any one of the preceding claims, wherein the confectionery product is a chocolate, a chocolate-like product, a coating, a filling, a sugar coating or a spread, preferably a chocolate, a chocolate-like product, a coating or a sugar coating, and more preferably a chocolate or a chocolate-like product.

The confectionery product according to any one of the preceding claims, wherein the plant-based fat phase in the confectionery product has: 0.5 to 5.0 wt%, preferably 1.0 to 4.0 wt%, and more preferably 1.5 to 3.5 wt% diglycerides; and / or at most 2.0 wt%, preferably 0.1 to 1.5 wt%, and more preferably 0.5 to 1.0 wt% 1,2-diglycerides; and / or at most 3.0 wt%, preferably 0.5 to 3.0 wt%, and more preferably 1.0 to 2.5 wt% 1,3-diglycerides.
13. The confectionery product according to any one of the preceding claims, wherein the plant-based fat phase in the confectionery product comprises: 3 to 20 wt%, preferably 5 to 15 wt% interesterified fat blend comprising at least lauric fat, preferably wherein the lauric fat is selected from the group consisting of coconut oil, palm kernel oil, fractions thereof, and mixtures thereof; and wherein the lauric fat in the interesterified fat blend is present in an amount of 30 to 80 wt%, preferably 35 to 75 wt%, based on the total weight of the interesterified fat blend; optionally wherein the plant-based fat phase in the confectionery product further comprises 3 to 15 wt%, preferably 5 to 10 wt% liquid oil, preferably wherein the liquid oil is selected from the group consisting of sunflower oil, high oleic sunflower oil, high stearic high oleic sunflower oil, high oleic rapeseed oil, high oleic canola oil, high oleic soybean oil, rapeseed oil, rice bran oil, soybean oil, chia seed oil, flaxseed oil, corn oil, safflower seed oil, olive oil, canola oil, grape seed oil, pumpkin oil, sesame oil, walnut oil, hazelnut oil, coconut oil, palm olein, fractions thereof, and mixtures thereof.
