Title of the invention: INNOVATIVE VINIFICATION UNIT AND CORRESPONDING OENOLOGICAL AGING PROCESS
[0001] The present invention relates to an innovative winemaking assembly, in which the container intended to contain an oenological liquid is supported by a support structure which allows said container to move relative to said support structure.
[0002] The present invention further relates to a method for oenological aging of an oenological liquid in which a winemaking assembly according to the present invention is used.
[0003] Wine-making assemblies are known in which the container is placed on support elements and shear forces are exerted on these containers, which could cause the containers to break, in particular when these containers are made of materials such as ceramic, stoneware and / or porcelain, and / or when said containers are of large dimensions, consequently capable of containing high volumes of oenological liquid.

Claims
1.
