AN EMULSION COMPRISING AN OIL COMPOSITION AND AN AQUEOUS-SOLUBLE PHASEFIELD OF THE INVENTION
[0001] The present invention relates to an emulsion, in particular an emulsion comprising an oil composition and an aqueous-soluble phase.BACKGROUND
[0002] There are many kinds of margarine products in the market with the rapid development of bakery industry. Currently, the additives such as artificial flavors, pigments / coloring agents, and preservatives / antioxidants need to be added to margarine to enhance the milky or butter flavor, etc. However, these additives are considered as not being natural or not healthy enough, and thus the consumers would prefer bakery products with natural flavor but without the additives.
[0003] Adding more natural butter to margarine would give a more natural and rich flavor to bakery products; however, it would increase the margarine’s costs. Moreover, natural butter has a high level of trans fatty acid which is not desirable. There are currently no margarine products in the market which have rich and natural milky / butter flavor and good texture performance but without any artificial flavors, coloring, emulsifiers and preservatives.
[0004] Therefore, there are needs to develop an emulsion such as a margarine which can have good natural flavor but without artificial additives.SUMMARY
[0005] The present invention relates to an emulsion comprising: a. an oil composition; and b. an aqueous-soluble phase wherein the aqueous phase is a dairy product, wherein the emulsion does not include a component selected from an added emulsifier, an added pigment, an added antioxidant, and a mixture of two or more thereof.
[0006] The present invention relates to a method of preparing the emulsion discussed, comprising:
[0007] a. mixing ingredients of aqueous-soluble phase to obtain a first mixture;
[0008] b. heating the first mixture to 50-80℃;
[0009] c. mixing ingredients of oil composition to obtain a second mixture;
[0010] d. heating the second mixture to 50-80℃; and
[0011] e. blending the first mixture and the second mixture for 15-40 minutes and keeping a temperature of 55-85℃ preferably 65-75℃ during the blending to obtain the emulsion.

[0075] The following examples are presented to further illustrate and explain the present invention and should not be taken as limiting in any regard.
[0076] Example 1-preparation of emulsions
[0077] Three emulsions of the present invention and three control samples are prepared with the ingredients shown in Table 1.

[0079] First the water phase was prepared, and ingredients such as water, liquid milk, butter, enzymatically treated butter are added, according to the amounts mentioned in the corresponding recipes.
[0080] Water phase was heated to 70℃, then milk powder, optionally whey powder (see recipes) was added into the water phase. The oil phase is heated to 70℃, then (only in the control samples) lecithin and saturated monoglyceride are added into the oil phase. The water phase was added into the oil phase, mixing for 20-30 minutes, while keeping a temperature of 65-75℃. Then the emulsions were cooled down with cooling equipment, using pin rotor to mix. The emulsions were then filled in a carton, and tempered at 15℃ for two days.
[0081] Enzymatically treated butter can be obtained by natural butter enzymolysis using enzymolysis technology with protease and lipase.

[0083] Example 2-Texture hardness
[0084] Texture hardness analysis was conducted on the emulsions of Example 1. The texture hardness was determined by the below method.
[0085] The sample had the following dimensions: 10 cm*10 cm*10 cm and stored at target temperature (5 ℃ and 15 ℃) . The hardness was measured at by means of an SMS texture meter type TA. XT. PLUS, using a probe of 5 mm diameter, with a probe penetration rate of 10 mm / sec, and a depth of 20 mm. The hardness was measured after 14~16h storage at 5 ℃ and 15 ° C and the results can be seen in Table 2.

[0093] take 500g sample into the whipping equipment, choose a flat mixer, stir for 5 minutes at level 4;

[0095] put the emulsion sample into a vessel, scrape the surface, weigh and test every 5 minutes after stirring.

Emulsions 1-3 exhibit a better whipping performance than control sample 2 and the butter purchased from market, as the whipping data of emulsions 1-3 are lower at 10 minutes, 15 minutes, 20 minutes and 25 minutes. Emulsions 1-3 perform better even than the margarine purchased from the market in terms of whipping test at 10 minutes, 15 minutes and 20 minutes. Emulsions 1-3 exhibit a similar data as the margarine at 25 minutes.

[0101] Slip melting point (SMP) , solid fat content (SFC) at 10℃, 20℃, 25℃, 30℃, 35℃ and 40℃, and the content of saturated fatty acid, unsaturated fatty acid, and trans fatty acid were analyzed and the results are shown in Table 4.

[0103] It can be seen that emulsions 1-3 have similar SMP and SFC as butter, which shows that emulsions 1-3 can exhibit similar melting properties as butter. [0105] Emulsions 1-3, control samples, butter purchased from market and margarine purchased from market were used to make toast bread with the same recipe.
[0106] Sensory test was conducted on the toast bread made with the different emulsions. The sensory test for toast bread includes melting performance in mouth and natural flavor retention. The sensory test was evaluated by a panel consisting of 19 people. On a scale of 1 to 10, the lower the score is obtained, the worse the melting performance and natural flavor retention are. Mean values among 19 people for the sensory test are obtained and shown in Tables 5 and 6.

1.An emulsion comprising:a. An oil composition;b. An aqueous-soluble phase wherein the aqueous phase is a dairy product; andwherein the emulsion does not include a component selected from an added emulsifier, an added pigment, an added antioxidant and a mixture of two or more thereof.2.The emulsion according to claim 1 wherein the oil composition is present in an amount of 50 to 80 wt. %based upon the total weight of the emulsion.3.The emulsion according to claim 1 or 2 wherein the oil composition is comprising a vegetable oil and an interesterified oil.4.The emulsion according to anyone of the preceding claims wherein the dairy product is present in an amount of 20 wt. %to 50 wt. %.5.The emulsion according to any one of the preceding claims wherein the dairy product is selected from milk, milk powder, whey, whey powder, butter and a mixture of two or more thereof.6.The emulsion according to anyone of the preceding claims wherein the butter is present in an amount of 5-20wt. %based upon total weight of the emulsion.7.The emulsion according to any one of the preceding claims wherein the butter is selected from natural butter, fermented butter, enzyme modified butter, anhydrous butter, and a mixture of two or more thereof.8.The emulsion according to any one of the preceding claims wherein the milk is present as liquid milk in an amount of 10-30wt. %based upon total weight of the emulsion.9.The emulsion according to any one of the preceding claims wherein the milk powder is present in an amount of 0.5-10wt. %based upon total weight of the emulsion, and wherein the whey is present in an amount of 0-10wt. %based upon total weight of the emulsion.10.The emulsion according to any one of the preceding claims wherein the emulsion is a margarine.11.The emulsion according to any one of the preceding claims wherein the oil composition is comprising a vegetable oil and an interesterified oil, and further wherein the vegetable oil is a liquid oil, a lauric oil, or a combination of the liquid oil and the lauric oil.12.The emulsion according to any one of the preceding claims wherein the oil composition comprises 10-30wt. %of the vegetable oil, and 50-90wt. %of the interesterified vegetable oil, based upon the weight of the oil composition.13.The emulsion according to claim 11,wherein the liquid oil is selected from the group consisting of double fractionated palm olein, cottonseed oil, corn oil, groundnut oil, linseed oil, olive oil, rapeseed oil, rice bran oil, sesame oil, safflower oil, soybean oil, sunflower oil, oil from any variety of oilseeds with increased level of unsaturated fatty acids compared to the original seed variety, such as mid or high oleic sunflower oil; orwherein the liquid oil is selected from the group consisting of canola oil, cottonseed oil, corn oil, flaxseed oil, grapeseed oil, groundnut oil, linseed oil, olive oil, peanut oil, rapeseed oil, rice bran oil, sesame oil, safflower oil, soybean oil, sunflower oil, their corresponding high oleic varieties, and mixtures of two or more thereof, andwherein the lauric oil includes coconut oil, palm kernel oil, babassu oil, cohune oil, tacum oil and cuphea oil or any mixture of two or more thereof, andwherein the interesterified oil is selected from interesterified palm olein oil, interesterified palm oil, interesterified oil of palm oil and lauric oil, interesterified oil of palm oil and a liquid oil, interesterified oil of lauric oil and the liquid oil, interesterified oil of palm kernel oil and the liquid oil, interesterified oil of palm oil, lauric oil and the liquid oil, and a mixture of two or more thereof.14.The emulsion according to any one of the preceding claims, wherein the emulsion has at least one of the followings:a. texture hardness of the emulsion at 5℃ and 15℃ is 600-1,200 gram and 200-500 gram, respectively;b. trans fatty acid of the emulsion is less than 2ppm;c. saturated fatty acid of the emulsion is less than 40ppm;d. 3-monochloropropanediol (3MCPD) of the emulsion is less than 2,500ppm;e. glycidyl fatty acid esters (GE) of the emulsion is less than 1,000ppm;f. a slip melting point of the emulsion is less than 36;g. a solid fat content of the emulsion at 10℃ and at 40℃ is less than 50 and less than 1, respectively;h. any combination of two or more thereof.15.A method of preparing the emulsion of any one of the preceding claims, comprising:a. mixing ingredients of aqueous-soluble phase to obtain a first mixture;b. heating the first mixture to 50-80℃;c. mixing ingredients of oil composition to obtain a second mixture;d. heating the second mixture to 50-80℃; ande. blending the first mixture and the second mixture for 15-40 minutes and keeping a temperature of 55-85℃ preferably 65-75℃ during the blending to obtain the emulsion.
