AI Technical Summary
Existing coffee and tea drink mixtures lack specific proportions, leading to cumbersome and non-reproducible preparations, and require a significant amount of a binding agent for mechanical stability, limiting their widespread use and applicability in coffee machines.
A composition comprising specific proportions of coffee and tea components, including a spray-dried green tea extract, with optional additives like zinc salts and antioxidants, formulated as a dry, free-flowing, water-soluble powder, allowing preparation of ready-to-drink beverages in coffee machines with high homogeneity and solubility, and providing an antioxidant effect.
The composition enables simple, reproducible preparation of cold and hot drinks with high solubility, homogeneity, and stability, preventing component segregation during transport and storage, and offers health benefits such as improved brain function and stroke prevention.
Abstract
Description
[0001] Zosammensetzong auf basis von Kaffee und Tee
[0002] The invention relates to a composition based on coffee and tea according to the preamble of claim 1 and to a method for producing the composition according to the preamble of claim 17.
[0003] Mixing coffee and tea drinks is already known, but in an unspecific way, i.e., without specifying particular proportions of the two components. Such mixtures are cumbersome to prepare and use, not reproducible, and therefore have not become widespread.
[0004] Furthermore, WO 2022 / 078896 DELICA AG discloses a capsule for preparing a hot beverage, which consists of a tablet containing several materials listed in a non-specific manner, including coffee. However, the document does not disclose a specific mixture of coffee and tea materials and therefore also not the proportions of these two materials. Moreover, the tablet of this known capsule is absolutely dependent on a significant amount of a binding agent (milk powder) for its mechanical stability.
[0005] The invention is based on the objective of providing a composition suitable for the simple, reproducible production of cold and hot drinks with water.
[0006] The invention solves the stated problem with a composition having the features according to claim 1, and a method for producing such a composition according to claim 16.
[0007] The advantages achieved by the invention, which result from the specific proportions of the components of the composition, are essentially to be seen in the fact that the composition according to the invention...
[0008] (i) allows the preparation of a ready-to-drink beverage in a simple manner by dissolving it in cold or hot water;
[0009] (ii) is usable in a coffee machine known as such; (iii) exhibits a high degree of homogeneity;
[0010] (iv) does not undergo segregation of the components during transport and prolonged storage:
[0011] (v) possesses high water solubility; and
[0012] (vi) exhibits an antioxidant effect after dissolution in water.
[0013] Further advantageous embodiments of the invention can be commented on as follows:
[0014] In a particular embodiment of the invention, component B of the composition is in the form of a spray-dried extract of green tea, preferably of the species Camellia sinensis. This composition exhibits very good solubility in water and a high catechin content.
[0015] Component B preferably contains a water content of no more than 5 wt.%, preferably no more than 3.5 wt.%.
[0016] In a special embodiment, the composition may comprise at least one further component selected from the following group:
[0017] (i) Zinc salts, preferably zinc lactate, zinc gluconate, zinc acetate, zinc bisglycinate, zinc chioride, zinc citrate, zinc carbonate, zinc oxide and zinc sulfate;
[0018] (ii) Vitamins,
[0019] (iii) Plant-based milk, in particular oat milk and soy milk;
[0020] (iv) Calcium salts;
[0021] (v) Antioxidants;
[0022] (vi) Catechins, preferably epigallocatechin gallate, expediently in an amount of 100 - 500 ppm, preferably from 170 ppm to 340 ppm;
[0023] (vii) Caffeine; and
[0024] (viü) Amino acids, especially non-proteinogenic amino acids and in particular 5~ N-ethyl-L-glutamine.
[0025] The zinc salt(s) content in the composition is preferably 50 - 300 ppm, preferably 100 - 200 ppm.
[0026] The lead, cadmium, arsenic, or mercury content in component B, each individually, is preferably less than 0.1 mg / kg. The tea leaf extract of component B is preferably obtained using an aqueous solution.
[0027] In a further embodiment of the invention, the composition is in the form of a dry, free-flowing, water-soluble powder suitable for the production of beverages. The composition can also be in the form of a homogeneous mixture.
[0028] The weight fraction of the two components A + B of the composition should expedite to be at least 90%, preferably at least 60% of the total composition.
[0029] In another embodiment, one or both components A and B are based on freeze-dried extracts of coffee or tea. Component 3 can also be based on a spray-dried extract of tea.
[0030] In a particular embodiment of the invention, the particles of the powder of component A1 have a mean diameter ΔAI of at most 600 µm, preferably at most 450 pm. The particles of the powder of component A1 expediently have a mean diameter dA-t of at least 200 pm, preferably at least 250 pm.
[0031] In a further embodiment of the invention, 95 wt.% of the particles of the powder of component B have a mean diameter ds of at most 125 pm, preferably at most 100 pm.

The invention further comprises a green tea extract with a water content of at most 5 wt.%, preferably at most 3.5 wt.%, for use in a composition according to the invention. The green tea extract for use in a composition according to the invention can be in the form of a solid powder, wherein 95 wt.% of the powder particles have a mean diameter ds of at most 125 pm, preferably at most 100 pm.
[0034] The composition according to the invention can be used to produce a cold or hot water-based beverage.
[0035] The composition according to the invention can be used in the treatment and prevention of memory disorders, concentration disorders and dementia, especially after a stroke, as well as to improve brain function and concentration. It also serves to reduce the susceptibility to strokes.
