Abstract

The invention provides a method for rapidly detecting the sucrose content in fresh ginseng, which comprises the following steps: respectively measuring the sugar degree value and the sucrose content of sample particles obtained by pretreating a fresh ginseng sample, then carrying out linear fitting on the sugar degree value and the sucrose content, establishing a correction model of the sucrose content and the sugar degree value in the fresh ginseng sample, and calculating the sucrose content in the fresh ginseng sample according to the correction model. The content of sucrose in the fresh ginseng sample is determined by fitting the measured sugar degree value through a correction model, a fitting curve in the correction model of the content of sucrose in the fresh ginseng sample and the sugar degree value is calculated according to a formula (1), and the formula (1) is as follows: sucrose = 0.3705 * sugar degree-2.859. According to the rapid detection method for the sucrose content in the fresh ginseng, a correction model for the sucrose content and the sugar degree in the fresh ginseng can be established through linear fitting, the model is accurate and reliable, the sucrose content can be accurately and rapidly obtained, and a liquid phase method which is high in technical requirement and expensive in equipment or a developing method which is complex in experiment is not needed for detection.
