Description

[0001] The invention relates to a tumbler as used for food processing, in particular for meat processing.

[0002] Such tumblers, also called mixing or tumbling machines, are used in meat processing or refinement to even out the properties of the food to be treated or to coat the food with sauces or mix it with other ingredients so that (ready-made) meals can be made from it, for example.

[0003] To achieve a consistent result, homogeneous treatment of the product with the shortest possible processing time is desired. The tumbler used for this purpose preferably has a horizontally arranged drum and a rotary drive that can set the drum in intermittent left and right rotation. Mixing is achieved by deflection blades mounted inside the tumbler, which circulate the product due to the rotation of the tumbler and thus enable an even application and massage of a processing agent, such as a curing solution. At the same time, the product's structure should be specifically changed during processing by the tumbler. The cell walls of the product should be broken down to achieve the desired bite structure. This requires intensive massage of the product.

[0004] The tumblers known in practice require a long dwell time of the product in the tumbler while simultaneously being driven by an external motor. Accordingly, the treatment of a product using these tumblers results in long production times and high energy consumption. The known solutions are therefore not efficient in terms of the capital investment. The object of the present invention is to provide a tumbler that allows the treatment of food products efficiently while simultaneously achieving a high-quality end result.

[0005] The present invention relates to a tumbler for treating food, preferably meat, as defined in claim 1. The tumbler comprises a first, cylindrical, hollow body defining a central longitudinal axis; and a second, hollow body with a conical outer surface, which body has its longitudinal axis aligned with the central longitudinal axis of the first cylindrical body and is connected to a first end portion of the first cylindrical body, the diameter of the second body being largest at the junction with the first cylindrical body; wherein at least one deflection vane extends over and is attached to at least a portion of the inner surfaces of the first and second bodies and extends into the inner volume defined by the first and second bodies;and wherein the at least one deflection vane comprises at least two segments along the central longitudinal axis that differ in angle with respect to the central longitudinal axis and with respect to an axis arranged orthogonal to the central longitudinal axis, such that rotation of the tumbler about the central longitudinal axis causes the product to move in a generally helical trajectory about the central longitudinal axis.;

[0006] The tumbler according to the invention offers the possibility of achieving uniform mixing of product and treatment agent, as well as massaging the product, with the shortest possible processing time. This is particularly due to the deflection vanes with at least two segments arranged at an angle to each other. Thus, the product experiences a sudden change in its direction of movement during a transition between the at least two segments. The associated impulse on the product leads to a faster disruption of the cell structures.

[0007] The helical trajectory is characterized by the interaction between the deflector blades and the product, as well as the rotation of the tumbler around its central longitudinal axis, causing the product to move in a helical motion whose motion vector includes components from all three spatial directions. The helical trajectory of the product achieves more intensive mixing and massaging of the product. The deflector blades are responsible for lifting the product during processing in the tumbler. For this purpose, the deflector blades are equipped with a specific, scoop-like geometry that allows them to pick up products from the reservoir of products and processing agents that forms in the lower section of the horizontally arranged tumbler as a result of the tumbler's rotational movement and to transport them along a circular path around the tumbler's central longitudinal axis. The angled segments of the deflector blades also result in a sudden change in the product's direction of movement as the product moves along the longitudinal direction of a deflector blade. The resulting momentum transferred from the deflector blade to the product leads to a faster disruption of the cell structures within the product. This reduces the product's processing time.

[0008] The number of deflection vanes mounted in the tumbler, as well as the number of segments of the respective deflection vanes, can be chosen arbitrarily. To the extent advantageous, different types of deflection vanes according to the invention can also be mounted in a corresponding tumbler, differing from one another in terms of their length and the design of the respective segments arranged at a corresponding angle to one another. Likewise, the deflection vanes according to the invention can also be combined with deflection vanes known from practice.

[0009] Preferred configurations of the claimed invention are defined in dependent claims 2 to 24.

[0010] In a preferred embodiment, the tumbler may comprise a third hollow body having a conical outer surface, which may be aligned with its longitudinal axis on the central longitudinal axis of the first body and connected to a second end portion of the first body, wherein the diameter of the third body may be largest at the connection to the first body.

[0011] In a preferred embodiment, the at least one deflection vane can extend at least partially over the first, second, and third bodies. This ensures effective capture and circulation of the products over a larger portion of the tumbler's internal volume. In other embodiments, the deflection vanes can extend over only one body each. The deflection vanes can be attached to various bodies distributed over the circumference of the tumbler's internal volume. Thus, the deflection vanes can be mounted offset from one another in the circumferential direction, so that the deflection vanes can form, among other things, a staircase pattern around the circumference.

[0012] Preferably, the transition between the segments of the at least one deflection blade can have a bend. The segments arranged at an angle to each other in this way prevent the product from sliding along the longitudinal direction of the deflection blades, as is the case with a rounded transition between two segments. A change in momentum occurs suddenly, thus facilitating the disruption of the cell structures.

[0013] In a preferred embodiment, the edges of the deflection vanes oriented toward the inner volume can be rounded. This can reduce the risk of injury during interaction between the tumbler operator and the tumbler. Furthermore, direct tearing of the product by sharp edges is avoided. The product thus retains its original shape during treatment in the tumbler, and fragmentation of the product can be avoided. Depending on the embodiment and the desired product, other edge shapes are also conceivable. For example, the edges can be provided with a sawtooth pattern or hooks for fragmenting the product. Additional bending of the deflection vanes at the edges oriented toward the inner volume is also possible.

[0014] The transition between the segments of the at least one deflection blade can preferably be rounded. This prevents the deposition of product residues or treatment agents at the corresponding joining points between the segments.

[0015] Preferably, the at least one deflection blade can comprise more than two segments. This makes it possible to increase the number of changes in direction of a product's trajectory along the longitudinal axis of the deflection blade during treatment in the tumbler. By further segmenting the deflection blade, the treatment of a product in the tumbler can be further accelerated. By further segmenting the deflection blade, the product can have a serrated shape. The individual segments can have a surface structure. The individual segments can be provided with, among other things, thorns, spikes, or small elevations to achieve more intensive massaging of the product. In a further embodiment, grooves can be applied to the segments.

[0016] In a preferred embodiment, the positions of the transitions between the respective segments of the at least one deflecting blade can correspond to the positions of the transitions between the first and second bodies, as well as between the first and third bodies. In this embodiment, the corresponding bodies can be joined to the respective segments of the deflecting blades in a first step, while the prefabricated bodies are connected in a second step. Particularly in large versions of the present invention, the manufacturing process can thus be designed more ergonomically.

[0017] Preferably, the segments of the at least one deflection vane can be connected to one another along their entire length extending in the direction of the central longitudinal axis of the tumbler. This prevents the accumulation of product residues or treatment agents in the corresponding gaps between the segments.

[0018] In a further embodiment, the at least one deflecting vane can be connected to the respective inner surfaces of the first, second, and third bodies over its entire length extending along the direction of the central longitudinal axis of the tumbler. This prevents the accumulation of product residues or treatment agents in a gap between the deflecting vanes and the inner surface of the tumbler. The connection can be designed as a weld. A weld represents a permanent and easy-to-clean connection between the deflecting vanes and the inner surface of the tumbler. In other embodiments, the deflecting vanes can be screwed or riveted to the inner surface of the tumbler. Additional sealing can then prevent the accumulation of product residues or treatment agents. Fastening using an adhesive is also possible.

[0019] Preferably, the middle segment of the at least one deflecting blade can preferably have an angle of 30° with respect to the central longitudinal axis. Alternatively, the middle segment can also have other angles with respect to the central longitudinal axis. In another embodiment, the middle segments of the respective deflecting blades can also have different angles with respect to the central longitudinal axis. In other exemplary embodiments, negative angles are also possible, so that the middle segments of the respective deflecting blades can extend in different directions with respect to the central longitudinal axis, for example in a Z-shape. Analogously, other segments of the deflecting blades can also be angled in different directions.

[0020] In a preferred embodiment, more than one deflection vane, preferably four, can be mounted on the inner surface defined by the first, second, and third bodies. In other embodiments, any number of deflection vanes is possible. The number of deflection vanes can be selected depending on the product to be treated.

[0021] The deflector vanes can be evenly distributed around the circumference of the inner surfaces defined by the first, second, and third bodies. This results in even product treatment. Furthermore, a rotationally symmetrical arrangement of the deflector vanes results in an even distribution of the mass across the circumference of the tumbler. This allows for longer intervals between necessary maintenance and repairs on the tumbler, as the forces generated by the rotation of the tumbler are reduced. An uneven distribution of the deflector vanes across the circumference of the tumbler is also possible. Any imbalances that may occur can be compensated for using balancing weights on an outer surface of the tumbler.

[0022] In a preferred embodiment, the more than one deflection vane can differ in their length relative to the central longitudinal axis, whereby preferably each pair of deflection vanes can have the same length relative to the central longitudinal axis. In this embodiment, different pairs of deflection vanes of different lengths can also be combined with one another. With regard to the above-mentioned embodiments, a combination of deflection vanes of unequal length, which are unevenly distributed over the circumference of the inner surface of the tumbler, is conceivable.

[0023] In the preferred embodiment, the third body can have an opening to the internal volume formed by the first body, the second body, and the third body. This allows ergonomic loading and unloading of the tumbler in a configuration in which the central longitudinal axis of the tumbler is aligned horizontally. Loading and unloading of the tumbler in a configuration in which the central longitudinal axis is aligned vertically can also be implemented in this way. Openings can also be provided on the first, second, and third bodies of the tumbler. In further embodiments, these can be used not only for loading and unloading but also for introducing measuring devices, such as thermometers, into the internal volume of the tumbler.

[0024] The opening of the third body can preferably comprise a reversibly closable and openable hatch for separating the internal volume of the tumbler from the environment. This can be used, among other things, for loading and unloading the tumbler with product. Securely closing the hatch enables safe operation of the tumbler during rotation. The hatch can be used not only for loading and unloading product, but also, among other things, for taking samples or adding treatment agents or additives during, before, or after operation of the tumbler. A possible feedback system can prevent the tumbler from rotating when the hatch is open.

[0025] In a further embodiment, the outer surfaces of the second body and the third body can have different angles with respect to the central longitudinal axis. Embodiments with the same angle with respect to the central longitudinal axis are also possible. Overall, this allows for a space-saving design of the tumbler, with the design of the outer contour facilitating the integration of peripheral devices required for the operation of the tumbler.

[0026] The inner surfaces of the second body and the third body can preferably have different angles with respect to the central longitudinal axis. The design of the inner surfaces can further specify the movement of the product during rotation of the tumbler. Particularly high angles with respect to the central longitudinal axis can, for example, lead to an accumulation of products in the area of the first body. Depending on the design of the tumbler in a horizontal or vertical rotation axis, the angles of the inner surface of the second and / or the third body can be adjusted. Furthermore, a design of the inner surfaces of the second and / or the third body parallel to the inner surface of the first body is also possible.

[0027] In a preferred embodiment, the walls of the first body and / or the second body and / or the third body can be double-walled, wherein a connection can exist between the volumes of the first body and the second body, as well as between the first body and the third body, each defined by the double wall. The double wall can have an insulating effect with respect to a product to be cooled during treatment in the tumbler. For this purpose, the inner volume of the double wall can be filled with an insulator or evacuated. Furthermore, a double-walled design allows the use of different materials for an inner and outer surface of the tumbler. This makes it possible to meet the various requirements for the material on the inside and outside, such as ease of cleaning, surface quality, coatings, etc.

[0028] The second body can have an insert on the side opposite the first body, wherein the insert can be arranged on the central longitudinal axis and can provide a connection between the environment and the volume defined by the double walls of the first body, the second body and the third body. A fluid can be introduced into the interior of the double walls via the insert. In other embodiments, a connection between the environment and the internal volume of the tumbler can be established by means of the insert. Treatment agents can be introduced via this connection during operation of the tumbler. In other embodiments, measuring instruments such as thermometers can be introduced into the internal volume of the tumbler and / or into the volume defined by the double walls of the first body, the second body and the third body.

[0029] In one embodiment, the double walls of the first body and of the second body can have an internal structure that allows a flow of a fluid from the insert in the second body to a position within the double wall, wherein the return flow of the fluid to the insert in the second body can occur via a different flow path than the inflow. This configuration allows the tumbler to be connected to a coolant circuit. The product can thus be temperature-controlled during treatment in the tumbler. Furthermore, openings to the inner volume of the tumbler can allow a fluid to be introduced into the inner volume. Thus, a treatment agent can be introduced evenly into the inner volume during operation.

[0030] In a preferred embodiment, the insert may extend into the internal volume defined by the first, second, and third bodies. Alternatively, the insert may be flush with the inner surface of the second body.

[0031] Preferably, a cover can extend radially from the end portion of the insert positioned in the inner volume of the tumbler, wherein the cover can have a conical shape and is connected to the end portion of the insert positioned in the inner volume of the tumbler and to the inner surface of the second body. This can prevent products from dwelling unfavorably for long periods on the insert. In other embodiments, additional deflection vanes can be mounted on the cover. A connection to the deflection vanes on the inner surfaces of the tumbler is also possible. The surface of the cover can further be used to introduce or withdraw fluids into the inner volume of the tumbler.

[0032] The first body can preferably have at least one running surface on its outer peripheral surface, which is configured to support the tumbler during operation. This allows the forces generated as a result of the rotation of the tumbler and the products contained therein to be absorbed. In other embodiments, running surfaces can be provided on the second and / or third body of the tumbler. In addition to absorbing forces, the running surfaces can also be used to apply a torque for rotating the tumbler.

[0033] Further advantageous embodiments are explained below in connection with the drawings listed below. The terms used in this description, such as "left," "right," "top," and "bottom," refer to the orientation of the drawings in which the designations used therein are normally legible. Here, they are: Fig. 1: a sectional view of a tumbler in a preferred embodiment; Fig. 2: a view of a deflection vane in a preferred embodiment; and Fig. 3: a sectional view of a tumbler in a preferred embodiment with double wall

[0034] A particularly preferred embodiment is in Fig. 1 shown.

[0035] As in Fig. 1, the base body of the tumbler 10 comprises a cylindrical hollow body 12 having a central longitudinal axis X z A second hollow body 14 is attached to this at a first end portion. This body has a conical outer surface. The longitudinal axis of the second body 14 is aligned with the central longitudinal axis X. zof the first body 12 or coaxial with it. The conical shape of the second body 14 is oriented such that the largest outer diameter of the second body 14 corresponds to the outer diameter of the first body 12 and is reached at the connection to the first body. The first and second bodies 12, 14 are connected to each other in a fluid-tight manner over their entire circumference. The fluid-tight connection is ensured by a weld seam.

[0036] In the Fig. In the preferred embodiment shown in Figure 1, a third hollow body 16 is attached to a second end portion of the first body 12. This third hollow body 16 has a conical outer surface. The longitudinal axis of the third body 16 is aligned with the central longitudinal axis X. zof the first body 12 or coaxial with it. The conical shape of the third body 16 is aligned such that the largest outer diameter of the third body 16 corresponds to the outer diameter of the first body 12 and is reached at the connection to the first body 12. The first body 12 and the third body 16 are connected to each other in a fluid-tight manner over their entire circumference.

[0037] The third body 16 has an opening 18 to the internal volume defined by the first body 12, the second body 14, and the third body 16. The opening 18 includes a reversibly closable and openable hatch for separating the internal volume from the environment. This can be used, among other things, for loading and unloading the tumbler 10 and can prevent the processing agent or product from escaping during operation. The outer surfaces of the second and third bodies 12, 14 have different angles with respect to the central longitudinal axis X. z . The inner surface of the second body 14 and the third body 16 have different angles with respect to the central longitudinal axis X z .

[0038] In the illustrated preferred embodiment, the tumbler 10 includes four deflection vanes 26 attached to the inner surfaces of the tumbler 10. The deflection vanes 26 are evenly distributed around the circumference of the inner volume of the tumbler 10. The deflection vanes 26 extend over at least a portion of the inner surfaces of the first, second, and third bodies 12, 14, 16. The deflection vanes 26 are attached to the inner surface of the first, second, and third bodies 12, 14, 16 and extend into the inner volume defined by the first, second, and third bodies 12, 14, 16. The connection between the inner surface of the tumbler 10 and the deflection vanes 26 extends over the entire length of the deflection vanes 26 so that the product, a part of the product or the processing agent cannot be deposited in a gap between the inner surface of the tumbler 10 and the deflection vanes 26.In the preferred embodiment, the connection between the deflection vanes and the inner surface is designed as a weld.

[0039] In the Fig. In the preferred embodiment of the deflection blade 26 shown in Figure 2, it consists of three segments 28, 30, 32, although a smaller or larger number of segments is also possible. The segments 28, 30, 32 can be made of sheet metal that is firmly attached to the inside of the first, second, and third bodies 12, 14, 16. The segments extend into the inner volume of the tumbler. The transitions 34, 36 between the segments 28, 30, 32 are designed as a kink. In other words, the transition forms a sudden transition between the segments as opposed to a curved transition. At the transition points 34, 36, the angle that the respective segment 28, 30, 32 makes with the central longitudinal axis X changes. zIn addition, the angle that the respective segment 28, 30, 32 makes with an axis that is orthogonal to the central longitudinal axis X z The segments 28, 30, 32 of the deflection vane 26 or sections of the segments 28, 30, 32 extend to different distances from the inner surface of the first, second, and third bodies 12, 14, 16 into the inner volume of the tumbler 10. This can be achieved, for example, by using triangular segments. The transition point 34 is positioned at the transition position between the first body 12 and the second body 14, whereas the transition point 36 is positioned at the transition position between the first body 12 and the third body 16.

[0040] At the transition points 34, 36, the deflection vanes are connected to each other across the entire height of the segments 28, 30, 32, so that the product, part of the product, or the processing medium cannot become trapped in a gap between the segments 28, 30, 32. The transition points 34, 36 can be reworked after the respective segments have been connected. For example, in the case where the segments 28, 30, 32 are welded together, the weld seam bulging out of the plane of the segments 28, 30, 32 can be flattened.

[0041] The central axis X z aligned edges of the segments 28, 30, 32 of the deflection blades 26 can be rounded to avoid damage to the product. The angle between the central longitudinal axis X z and the middle segment 30 is preferably 30°.

[0042] Fig.Figure 3 shows a sectional view of a preferred embodiment of the tumbler 10. The second body 14 has an insert 20 on the end face facing away from the first body 12. The insert 20 is arranged on the central longitudinal axis X. zof the tumbler 10 and fastened to the second body 14. The insert 20 is connected to the second body 14 of the tumbler 10 over its entire circumference. The insert 20 extends into the inner volume of the tumbler 10. The insert 20 contains connections 22 for supplying and discharging a fluid. A cover 24 extends radially from the end section of the insert 20, which is positioned in the inner volume of the tumbler 10. The cover 24 has a conical shape and ensures that the product, a part of the product, or the processing agent cannot deposit at the transition between the inner surface of the second body 14 and the insert 20. The cover 24 is connected to the insert 20 over its entire circumference. The cover 24 is connected to the inner surface of the second body 14 over its entire circumference.

[0043] The walls of the first body 12 and the second body 14 are double-walled. The volumes formed by the double wall of the first body 12 and the second body 14 are connected to one another. A fluid can be introduced into the double wall via an inlet 22 on the insert 20. The inner volume 38 of the double wall contains structures, preferably a pipe system 40, which enable fluid flow within the double wall. The fluid flows through the pipe system 40 or a corresponding subdivision of the double wall along the double wall of the second body 14 and / or the first body 12 in the axial direction. At a deflection point, the fluid is deflected to flow along the inner wall of the double wall of the first body 12 and the second body 14 towards the insert 20. The returning fluid is removed from the insert 20 via an inlet 22.An outer surface of the first body 12 includes a running surface for supporting the tumbler 10 and facilitating rotation of the tumbler 10.
