Abstract

To provide a method for producing a rare sugar syrup containing calcium, in which a reducing sugar is employed as a raw material under the presence of commonly available eggshell.SOLUTION: By subjecting a reducing sugar to heating under pressure in subcritical water with eggshell being present, efficient isomerization into a rare sugar is achieved, thus allowing production of various calcium-containing rare sugar syrups.
