Low-temperature germination in the early stages further promotes the production of hydrolytic enzymes, while gradually increasing the germination temperature in the middle and late stages. This effectively promotes protein breakdown, increases glycine (high glycine content favors the production of DMHF) and total serine (high serine content favors the production of 2-AP), and increases the content of specific amino acids. This promotes the development of caramel and bread aromas, contributing to the production of crystalline malt with high caramel and bread aromas. To ensure the malt's bready aroma, green malt is fed into the kiln at a low moisture content and roasted at a low temperature during the initial roasting process, resulting in crystalline malt with a high 2-AP content. However, due to the low moisture content of green malt entering the furnace and the low roasting temperature, the DMHF content of the crystallized malt is affected, resulting in a low DMHF content in the crystallized malt, which cannot meet the taste requirements of caramel aroma; therefore, this embodiment adopts the method of quickly raising the roasting temperature to 140-145°C and performing two spray water replenishment. This process mainly performs high-temperature extreme water replenishment to promote the formation of DMHF, and finally obtains crystallized malt with high caramel aroma and high bread aroma.
