[0001] The present invention relates to a sweet potato processing device and a sweet potato processing method. In particular, the present invention relates to a processing device and a processing method capable of sterilizing sweet potatoes for long-term storage. This application claims priority based on Japanese Patent Application No. 2024-197050 filed on November 11, 2024, and the entire contents of that application are incorporated herein by reference.
[0002] Sweet potato is a vine-like perennial plant cultivated in various regions. It is a hardy vegetable that is resistant to high temperatures and drought and can grow well even in poor soil. The tubers (root tubers) are used as food. Popular types of sweet potatoes in Japan include Beniharuka, Beni Azuma, Silk Sweet, Purple Sweet Road, etc.
[0003] As a method for long-term storage of raw sweet potatoes, for example, those disclosed in Patent Document 1 are known. Patent Document 1 discloses a method for long-term storage of raw sweet potatoes used as raw materials for sweet potato shochu. Raw sweet potatoes used as raw materials for sweet potato shochu are difficult to store, unlike rice and wheat that can be stored well, and are generally said to rot three days after harvest. For storing raw sweet potatoes, temperature setting and temperature control during storage are extremely important. Furthermore, 13-14°C is the temperature at which sweet potatoes mature and become sweeter; therefore, sweet potatoes taste better after being stored in a warehouse at the optimal temperature than immediately after harvest.

Claims
1. A processing apparatus for sweet potatoes, comprising: a sterilization and washing apparatus for sterilizing and washing sweet potatoes; an introduction and conveying apparatus for introducing sweet potatoes into the sterilization and washing apparatus; and a sweet potato discharge apparatus for moving the sweet potatoes processed by the sterilization and washing apparatus downstream, wherein the sterilization and washing apparatus is provided with a plurality of brush rollers for rotating the sweet potatoes while moving them downstream, and a spraying apparatus for spraying washing water containing ozonated water toward the plurality of brush rollers.
2. The processing apparatus according to claim 1, wherein each of the plurality of brush rollers is composed of a brush rotation shaft and a contact brush, and with respect to a center line flowing from upstream to downstream in the sterilization and cleaning apparatus, a plurality of brush rotation shafts are provided on one side away from the center line, and a plurality of brush rotation shafts are provided on the other side away from the center line, and the plurality of brush rollers are arranged so as to be generally concave, and the arrangement surface of the plurality of brush rollers arranged so as to be concave is inclined to descend along the direction of flow from upstream to downstream.
3. The processing apparatus according to claim 1, wherein each of the plurality of brush rollers is composed of a brush rotation shaft and a contact brush, a plurality of contact brushes are provided on one brush rotation shaft from upstream to downstream of the processing apparatus, the plurality of brush rollers are arranged so as to be curved in a concave shape overall, the spraying device has a plurality of spray nozzles arranged from upstream to downstream of the processing apparatus, and the plurality of spray nozzles are provided above the plurality of brush rollers.
4. The processing apparatus according to claim 3, wherein the plurality of brush rollers include both a brush rotation axis that rotates clockwise and a brush rotation axis that rotates counterclockwise.
5. The processing apparatus according to claim 3, wherein the plurality of brush rollers include at least one brush roller having a brush rotation axis that rotates the sweet potato in a direction away from the center line of the sterilization and washing apparatus, with reference to the center line through which the sweet potato flows from upstream to downstream in the sterilization and washing apparatus.
6. The processing apparatus according to claim 3, wherein the plurality of brush rollers are composed of brush rollers equipped with brush rotation axes that rotate the sweet potatoes in a direction away from the center line of the sterilization and washing apparatus, with reference to the center line through which the sterilization and washing apparatus flows from upstream to downstream.
7. The processing apparatus according to claim 3, wherein, in a configuration in which the plurality of brush rollers are arranged, the contact brushes are arranged in a grid pattern.
8. The processing apparatus according to any one of claims 2 to 7, wherein, in a configuration in which a plurality of brush rollers are arranged, a first contact brush and a second contact brush having a smaller diameter than the diameter of the first contact brush are alternately arranged on the brush rotation axis.
9. The processing apparatus according to any one of claims 3 to 7, wherein the arrangement surfaces of the plurality of brush rollers in the sterilization and cleaning apparatus are inclined to descend along the direction of flow from upstream to downstream.
10. The processing apparatus according to any one of claims 1 to 7, wherein the spraying device is provided with a washing water pipe to which the plurality of spray nozzles are attached, the sterilization and washing apparatus is provided with a plurality of washing water pipes, and the plurality of spray nozzles are arranged in the sterilization and washing apparatus so as to be symmetrical with respect to a center line extending from upstream to downstream of the processing apparatus.
11. A processing apparatus according to any one of claims 1 to 7, wherein a sweet potato discharge device for discharging the sweet potatoes is provided downstream of the sterilization and washing device, and a collection container for collecting the sweet potatoes is provided downstream of the sweet potato discharge device.
12. The processing apparatus according to claim 11, wherein the collection container has a storage space in which a storage basket capable of storing the sweet potatoes is arranged, and the collection container is provided with a storage basket transport device for moving the storage basket.
13. The processing apparatus according to any one of claims 1 to 7, wherein the sterilization and washing apparatus is connected to an ozone water generator that generates ozonated water, an input port for introducing sweet potatoes is provided on the upstream side of the introduction and conveying apparatus, and the processing apparatus is configured such that the sweet potatoes placed on the introduction and conveying apparatus move continuously from the upstream to the downstream side of the processing apparatus and are discharged from the sweet potato discharge apparatus.
14. The processing apparatus according to any one of claims 1 to 7, further comprising a sweet potato storage section for storing sweet potatoes in an ozone atmosphere, wherein the sweet potatoes stored in the sweet potato storage section are supplied to the introduction conveying device and introduced to the sterilization and washing device.
15. A method for processing sweet potatoes, comprising: an introduction step of introducing sweet potatoes into a sterilization and washing device for sterilizing and washing sweet potatoes; a sterilization and washing step of sterilizing and washing the sweet potatoes in the sterilization and washing device; and a discharge step of discharging the sweet potatoes from the sterilization and washing device, wherein the sterilization and washing step involves rotating the sweet potatoes with a plurality of brush rollers, moving them downstream within the sterilization and washing device, and spraying ozonated water to wash and sterilize the sweet potatoes.
16. The processing method according to claim 15, wherein each of the plurality of brush rollers is composed of a brush rotation shaft and a contact brush, and with respect to a center line flowing from upstream to downstream in the sterilization and cleaning device, a plurality of brush rotation shafts are provided on one side away from the center line, and a plurality of brush rotation shafts are provided on the other side away from the center line, and the plurality of brush rollers are arranged so as to be generally concave, and the arrangement surface of the plurality of brush rollers arranged so as to be concave is inclined to descend along the direction of flow from upstream to downstream.
17. The processing method according to claim 16, wherein a plurality of contact brushes are provided on a single brush rotation shaft, extending from upstream to downstream of the sterilization and cleaning device, a spraying device for spraying cleaning water containing ozonated water has a plurality of spray nozzles arranged from upstream to downstream of the sterilization and cleaning device, the plurality of spray nozzles are provided above the plurality of brush rollers, and in the sterilization and cleaning step, the sweet potatoes move towards the upstream or downstream of the sterilization and cleaning device, scattering laterally over the plurality of brush rollers which are arranged to be curved in an overall concave shape.
18. The processing method according to any one of claims 15 to 17, in a configuration in which a plurality of brush rollers are arranged, wherein the contact brushes are arranged in a grid pattern, and a first contact brush and a second contact brush having a smaller diameter than the diameter of the first contact brush are alternately arranged on the brush rotation axis, and the sweet potato moves from upstream to downstream on the plurality of brush rollers.
19. The processing method according to any one of claims 15 to 17, wherein the sweet potatoes are introduced into the sterilization and washing device using an introduction and conveying device, and the sweet potatoes supplied to the introduction and conveying device are cured.
20. The processing method according to claim 19, wherein the sweet potatoes that have undergone the curing process are stored in an ozone atmosphere.
21. The processing method according to any one of claims 15 to 17, further comprising the step of making baked sweet potatoes by heating the sweet potatoes that have undergone the sterilization and washing step.
