[0001] The present patent application relates to the field of molding and making a layered culinary preparation, and more particularly to the field of making layered pastries.
[0002] The present invention will find advantageous applications in a non-exclusive manner in the field of pastry making. State of the art
[0003] The making of layered pastries generally consists of alternately superimposing food layers of different types, for example by alternating solid layers of the sponge cake type, with layers of filling of the cream and / or mousse type, to obtain a cylindrical pastry.
[0004] For this purpose, it is known to use a cylindrical mold, also called a cookie cutter, in which the solid layers of the pastry are made one by one.
[0005] Once the solid layers have been made, the layered pastry is built by alternately superimposing a solid layer and a layer of filling, until the desired pastry is obtained.
[0006] Making a layered pastry as described above is tricky and generally results in a pastry whose layers are assembled irregularly.
[0007] In addition, imprecise superposition of the layers of the pastry can cause problems with the balance of the pastry, or even cause the pastry to fall. Statement of the invention
[0008] The present invention aims in particular to resolve the drawbacks of the aforementioned prior art by proposing a device for molding a layered culinary preparation which makes it possible both to mold the solid layers of the pastry beforehand and to guide the different layers during assembly of the pastry to obtain a regular pastry.

[0034] [Fig.l] shows a device 10 for molding and making a tiered culinary preparation 12.
[0035] As a preferred example, the culinary preparation 12, illustrated in [Fig. 3], is a layered pastry, that is to say a pastry which alternates food layers of different types, for example by alternating first layers 14 called “solid”, of the sponge cake or cake dough type, with second layers 16 of filling of the cream and / or mousse type.
[0036] The device 10 comprises successively, from bottom to top, a base 18, a first level mold 20 which is fitted into the base 18, a first second level mold 22a and a second second level mold 22b.
[0037] The base 18, the first level mold 20 and each second level mold 22a, 22b, are solids of revolution which are generated around a central axis A of the device 10 and which have a constant thickness, as can be seen in [Fig.3].
[0038] With reference to [Fig.2], the base 18 has a cup shape which includes a bottom 24 in the shape of a radial disc adapted to support the culinary preparation 12.
[0039] Also, the base 18 comprises a peripheral wall 26 forming a cylindrical rim which extends axially around the central axis A of the device 10, from the bottom 24 of the base 18, to an upper edge 28 of the free end.
[0040] The peripheral wall 26 of the base 18 is delimited radially by an inner face 30 which is turned towards the central axis A and, opposite, by an outer face 32.
[0041] The first level mold 20 comprises a cylindrical barrel 34 which extends axially around the central axis A, from a lower section 36, to an upper section 38.
[0042] With reference to [Fig. 4], the first level mold 20 is removably mounted on the base 18, in a molding position in which the lower section 36 of the barrel 34 of the first level mold 20 is removably fitted against the peripheral wall 26 of the base 18, so that the barrel 34 of the first level mold 20 is retained by friction on the base 18.
[0043] Also, the barrel 34 of the first level mold 20 is delimited radially by an inner face 40 intended to mold all or part of the culinary preparation 12, and by an opposite outer face 42.
[0044] The free end of the upper section 38 of the barrel 34 of the first level mold 20 is equipped with an upper female fitting member 44 which extends around the central axis A.
[0045] As can be seen in [Fig. 4], the female fitting member 44 has the shape of an annular angle iron 45 comprising a seat 46 which extends radially from the free end of the upper section 38 of the associated barrel 34, towards the outside of the first level mold 20, and a rim 48 which extends axially from a peripheral end of the associated seat 46.
[0046] Advantageously, the female fitting member 44 projects radially relative to the barrel 34 to form a gripping handle.
[0047] The first second-level mold 22a comprises a cylindrical barrel 50a which extends axially around the central axis A, from a lower section 52a, to an upper section 54a, and which is delimited by an inner face 56a intended to mold the culinary preparation 12.
[0048] The free end of the lower section 52a is equipped with a lower male fitting member 58a which has the shape of a collar 60a which extends radially around the central axis A, from a free end of the lower section 52a of the associated barrel 50a, to a peripheral edge 62a.
[0049] The second level mold 22a is adapted to be stacked on the first level mold 20 in a nested molding position illustrated in Figures 1, 3 and 4, in which the male nesting member 58a of the first second level mold 22a is received in the complementary female nesting member 44 of the first level mold 20, so that the barrel 34 of the first level mold 20 extends coaxially with the barrel 50a of the first second level mold 22a.
[0050] In this nested molding position, the collar 60a bears axially on the seat 46 to ensure a seal between the first level mold 20 and the first second level mold 22a.
[0051] Similarly, the peripheral edge 62a of the collar 60a cooperates with the rim 48 of the angle iron 45 to axially center the first level mold 20 and the first second level mold 22a along the central axis A.
[0052] With reference to [Fig. 4], it will be noted that when the second level mold 22a is stacked on the first level mold 20, the inner face 56a of the first second level mold 22a extends in the extension of the inner face 40 of the first level mold without axial opening, in a flush manner, to provide the culinary preparation 12 with a perfectly cylindrical shape.
[0053] Also, the free end of the upper section 54a of the barrel 50a of the first second-level mold 22a is equipped with an upper female fitting member 64a which extends around the central axis A, and which is identical to the female fitting member 44 of the first-level mold 20 described previously.
[0054] The female fitting member 64a of the first second-level mold 22a has the shape of an annular angle iron 66a comprising a seat 68a which extends radially from the free end of the upper section 54a of the barrel 50a of the first second-level mold 22a, towards the outside, and a rim 70a which extends axially from a peripheral end of the associated seat 68a.
[0055] Complementarily, the second second-level mold 22b is equipped with a lower male fitting member 58b which is adapted to be fitted with the upper female fitting member 64a of the first second-level mold 22a.
[0056] The second second-level mold 22b is identical to the first second-level mold 22a previously described and will therefore not be described in detail subsequently.
[0057] It will be noted, however, that the second second-level mold 22b is also equipped with an upper female fitting member 64b which is adapted to be fitted with a male fitting member of a third additional second-level mold (not shown).
[0058] The second second-level mold 22b comprises a cylindrical barrel 50b which extends axially around the central axis A, from a lower section 52b, to an upper section 54b.
[0059] The free end of the lower section 52b is equipped with the lower male fitting member 58b which has the shape of a collar 60b which extends radially around the central axis A, from a free end of the lower section 52b of the associated barrel 50b, to a peripheral edge 62b.
[0060] Thus, the device 10 according to the invention makes it possible to choose the final height of the assembly formed by the different molds by stacking a plurality of second-level molds.
[0061] It will also be noted that the two second-level molds 22a, 22b and the first-level mold 20 have the same internal diameter, so as to provide the pre- culinary preparation 12 of a finished cylindrical and regular shape.
[0062] The present invention also relates to a method for molding the tiered culinary preparation 12, which is implemented by means of the device 10 previously described.
[0063] According to an exemplary implementation, the method according to the invention comprises a first step of mounting the first level mold 20 on the base 18 in a molding position in which the lower section 36 of the barrel 34 of the first level mold 20 is removably fitted against the peripheral wall 26 of the base 18, so that the barrel 34 of the first level mold 20 is retained by friction on the base 18.
[0064] With reference to [Fig.5], the first assembly step is followed by a molding step which consists of molding a first food layer 14 of the sponge cake type, in the assembly formed by the first level mold 20 and the base 18 previously assembled.
[0065] The molding step is for example carried out by pouring a paste into the assembly formed by the first level mold 20 and the base 18 then by cooking this paste to obtain the first layer 14 of sponge cake.
[0066] Following the molding step, the method comprises a step of dismantling the first level mold 20 and the base 18, following which the first layer 14 of sponge cake is demolded and rests on the base 18, as illustrated in [Fig.6].
[0067] Then, the first layer 14 of sponge cake is cut by means of a cutting tool 72 which bears on the upper edge 28 of the free end of the peripheral wall 26 of the base 18, during a cutting step.
[0068] The cutting step makes it possible to obtain a first layer 14 of perfectly calibrated and perfectly cut sponge cake.
[0069] By way of example, the molding step, the dismantling step and the cutting step are repeated three times in order to obtain three first layers 14 of sponge cake.
[0070] Furthermore, the method according to the invention comprises a step of manufacturing the tiered culinary preparation 12 which consists of alternately depositing in the molding device 10, the first layers 14 of sponge cake and the second food layers 16 of the cream type, to obtain a culinary preparation 12 as illustrated in [Fig.3],
[0071] For this purpose, a first layer 14 of sponge cake is deposited in the assembly formed by the first level mold 20 and the base 18, then the first layer 14 is covered with a second layer 16.
[0072] Advantageously, the second layer 16 is deposited up to the seat 46 of the first level mold 20, the seat 46 serving as a visual guide which makes it possible to smooth the surface of the second layer 16 in a flat manner, at the height of the seat 46.
[0073] Next, the first second-level mold 22a is fitted onto the first-level mold 20, then another first layer 14 is deposited on the second layer 16 previously deposited, then another second layer 16 is deposited up to the seat 68a of the first second-level mold 22a.
[0074] Finally, the second second-level mold 22b is fitted onto the first second-level mold 22a, then another first layer 14 is deposited on the second layer 16 previously deposited, then another second layer 16 is deposited up to the seat 68b of the second second-level mold 22b.
[0075] Once all the layers 14, 16 have been deposited, the device 10 is dismantled to unmold the culinary preparation 12.
[0076] Thus, the device 10 according to the invention makes it possible both to pre-mould the solid layers of the culinary preparation 12 and to guide the different layers during the assembly of the culinary preparation 12 to obtain a result with a homogeneous appearance.
[0077] Preferably, the device 10 according to the invention comprises a plurality of interchangeable bases 18 which are each of a different height, to allow the production of first layers 41 of different thicknesses during the molding step.
[0078] Also, according to an alternative embodiment shown in [Fig.7], the base 18 is made in two parts to facilitate the demolding of the preparations prepared by means of the base 18.
[0079] According to this variant, the base 18 comprises a removable bottom 76 and an annular crown 74 which extends around the central axis A and which has an internal diameter equal to the diameter of the base 18 as described previously.
[0080] The bottom 76 has a cup shape which is mounted on the crown 74 by shape cooperation.
[0081] Naturally, the invention is described in the above by way of example. It is understood that those skilled in the art are able to carry out different variant embodiments of the invention without departing from the scope of the invention.
[0082] For example, the elements of the device 10 according to the invention may have a generally polygonal shape rather than a generally cylindrical shape.
