Description

The invention is based on a furnace or grill system according to the preamble of claim 1 and on a gas burner insert configured for combustion of a gaseous fuel and for defined insertion into a combustion chamber of a furnace or grill system according to claim 16.Such oven or grill systems are flexible to use and are suitable for frying, grilling, cooking or baking a variety of foods, such as, in particular, bread, meat, sausages, pizza, flash cake, vegetables, potatoes, etc.A generic oven or grill system is known from WO 2021 / 165261 A1 and has a baking or grill chamber and a first opening and a second opening in a baking or grill chamber base impermeable to thermal energy, wherein the first opening is connected to a first receiving region for a solid fuel insert and the second opening is connected to a second receiving region for a gas burner insert. Depending on the occupancy of the first receiving area by a solid fuel insert and / or the second receiving area by a gas burner insert, several configurations are possible for heating the baking or grilling chamber via the first opening and / or via the second opening. According to a first configuration, the first receiving region is occupied by a solid fuel insert and the second receiving region is unoccupied, according to a second configuration, the first receiving region is unoccupied and the second receiving region is occupied by a gas burner insert. A third configuration provides that the first receiving region occupies a solid fuel insert and the second receiving region occupies a gas burner insert. Two heating sources, which react differently above all with respect to the heating time, at different positions of the baking or grilling chamber entail the problem that the time planning of a baking or grilling process is made more difficult above all.The object of the invention is to provide an oven or grill system which can be realized more simply and economically on the one hand and which facilitates planning a baking or grilling process. Furthermore, a gas burner insert for burning a gaseous fuel is also to be provided, which is configured for defined insertion into a combustion chamber of the furnace or grill system and with which a baking or grilling process is facilitated. This object is achieved by the features of claims 1 and 16.Disclosure of the InventionIn a first aspect, the invention relates to a kiln or grill system configured for selectively heating at least one item of cooking or grilling with the aid of a gaseous fuel or with the aid of a solid fuel, comprising a) a housing in which a cooking or grilling chamber configured for accommodating and heating the item of cooking or grilling is arranged, b) a cooking or grilling chamber base within the housing, which has a first cooking or grilling chamber base surface facing the cooking or grilling chamber, which at least partially delimits the cooking or grilling chamber and is configured to store the item of cooking or grilling for heating, and a second cooking or grilling chamber base surface facing away from the cooking or grilling chamber, c) a receiving region for a heating source arranged within the housing, d) a gas burner insert configured for burning the gaseous fuel, e) an open connection between a receiving region for a heating source arranged within the housing and the baking or grilling chamber.Suitable solid-state fuel is, for example, wood, wood crystallites, wood pellets, wood chips, coal, charcoal and / or branches, and suitable (during combustion) gaseous fuel is, for example, gases such as propane, butane or else gas mixtures.According to the first aspect of the invention, it is provided that f) the receiving region is configured for selectively receiving f1) either the gas burner insert, f2) or the solid fuel as alternative heating sources. The receiving region for the gas burner insert and for the solid fuel is therefore the same in both cases. In particular, a surface exists in the receiving region which is contacted, covered or covered by both the gas burner insert and the solid fuel when the gas burner insert or the solid fuel is received in the receiving region. The user of the kiln or grill system therefore has the choice between two heating sources, namely between the solid fuel as the first heating source and a gas burner insert which burns gaseous fuel as the second heating source. Thus, two configurations of the kiln or grill system are possible, namely a first configuration in which the solid fuel, such as wood, wood grit, wood pellets, wood chips, coal, charcoal and / or branches, is accommodated in the accommodation region and a second configuration in which the gas burner insert is accommodated in the accommodation region. As gaseous fuel, for example, liquid gases such as propane, butane or also gas mixtures can be used.In contrast to WO 2021 / 165261 A1 mentioned at the beginning, in particular only a single or the same receiving position is provided in the receiving region for the gas burner insert or for the solid fuel, which brings advantages with respect to a simple and compact construction of the furnace or grill system. In addition, advantages also result with regard to the baking or grilling process, because the respectively selected heating source acts only on the same receiving region or in particular only on a single receiving position of the receiving region in the housing and comprises only one fuel.Receptacle in connection with the gas burner insert means that receptacle means are present on or in the receptacle region, by means of which receptacle means the (initially loose) gas burner insert can be received, held or fastened on or in the receptacle region in a defined operating position. These receiving means remain or are preferably arranged in the housing even when the oven or grill system is operated in the above-described first configuration.Receptacle in connection with the solid fuel, which is in particular loose or present as bulk material, means that, for example, an in particular loose solid fuel insert such as a container or a trough can be provided in the receptacle region, which is then inserted into the receptacle region from the outside. For this purpose, the geometry of the receiving region and the geometry of the solid fuel insert can be configured such that a positive fit or a frictional fit is produced between the receiving region and the solid fuel insert. In this case, the solid fuel insert is filled with the solid fuel and then inserted into the receiving region. Alternatively, the receiving region for the solid fuel can also form a solid component of the housing, wherein the (loose) solid fuel is then poured into the receiving region as loose bulk material. The oven or grill system is further preferably configured to be portable. Preferably, the oven or grill system is also configured such that it can be mounted on a table top and operated there as intended.Advantages and preferred developments of the measures according to the invention are described in the dependent claims. The receiving region is preferably arranged in a combustion chamber of the housing, in which the combustion of the gaseous fuel or of the solid fuel is provided.According to a preferred embodiment of the oven or grill system, it is provided that a) the baking or grill chamber base is configured to be heat-conducting, and b) the receiving region is configured in a combustion chamber at least partially delimited by the second baking or grill chamber base surface, in which combustion of the gaseous fuel or of the solid fuel generates a thermal energy which, on the one hand, directly heats the second baking or grill chamber base surface and which, on the other hand, is introduced into the baking or grill chamber via the open connection. The baking or grilling chamber base, which is designed to be heat-conducting, can be designed, for example, as a one-part or multi-part plate, in particular as a stone plate or as a chamot stone plate. Schamott stone has the property that it can absorb and store heat very well. Alternatively or additionally, the cooking or grilling chamber base can also be designed as a grill grid which has gaps between grill grid bars. A combination of a one- or multi-part plate and a grill grid for the cooking or grilling chamber floor is also possible, wherein the plate and the grill grid are then arranged next to one another in a plane. If, on the one hand, the combustion of the gaseous fuel or of the solid fuel then generates a thermal energy which directly heats the second baking or grilling chamber base surface, i.e. the second baking or grilling chamber base surface is directly exposed to a flame of the combustion or a glow, then the other side of the baking or grilling chamber base, namely the first baking or grilling chamber base surface, is also heated over time. As a result, a heat under the cooking chamber is generated for the food to be grilled or baked, because the first cooking chamber bottom surface is provided for the food to be grilled or baked to rest on it.On the other hand, when the heat energy from the combustion is introduced from the receiving region into the cooking chamber via the open connection, a top heat is generated in the cooking chamber for the food to be grilled or baked. The above-described particularly preferred measures therefore ensure an improvement in the grilling and baking properties of the oven or grilling system.According to a further development, the oven or grill system can be designed such that when the gas burner insert is accommodated in the accommodation region of the combustion chamber, then a) first gas nozzles can be directed in particular directly onto the second baking or grill base surface, and / or b) second gas nozzles can be directed into the open connection between the accommodation region and the baking or grill chamber or project through this open connection into the baking or grill chamber. With such a preferred embodiment of the gas burner insert, on the one hand, a direct heating of the second cooking or grilling base surface for generating the under heat and / or, on the other hand, the generation of the over heat for the grilling or cooking material can be realized. In the furnace or grill system, the housing can also have at least one first opening which is configured to introduce the gas burner insert or the solid fuel from the outside into the receiving region, in particular into the combustion chamber. In the oven or grill system, the receiving region can also be provided with a first guide device which is configured to a) guide the gas burner insert in a defined manner with a second guide device when the gas burner insert is inserted into the receiving region from the outside through the first opening, and b) to bring the gas burner insert into a defined operating position and in particular to hold it there.According to a development, a first closure element which is movable with respect to the housing and is configured to open the first opening in an open position and to close the first opening in a closed position can be provided. Optionally, the first closure element can be configured to assume at least one intermediate position between the open position and the closed position. The first closure element can be designed, for example, as a flap pivotable about an axis. Depending on the pivoted position of the flap, the flow cross section for external air into the combustion chamber or into the receiving region in which the combustion takes place can then be controlled.Preferably, the first closure element can have at least one through-opening which provides a flow cross section in order to introduce external air into the receiving region, in particular into the combustion chamber, wherein the at least one through-opening is configured so that the flow cross section can be changed. This realizes a throttle, which is variable with respect to the flow cross section, for the air flow into the receiving region, in particular into the combustion chamber, with which the flow cross section can be controlled or adjusted. In particular, the flow cross section through the at least one through-opening of the first closure element can be changed depending on the position of a slide movably mounted on the first closure element. As a result, a type of slide valve for the flow cross section of outside air into the combustion chamber or into the receiving region is provided. In the oven or grill system, the first closure element can also be mounted on the housing by a mounting which enables removal of the first closure element, in particular in the case where the gas burner insert is introduced through the first opening into the receiving region or into the combustion chamber.According to a particularly preferred measure, the housing a) can have a second opening which is configured for loading and unloading the item to be baked or grilled with respect to the baking or grilled chamber, and b) a second closure element which is movable with respect to the housing in order to open and close the second opening. In the oven or grill system, the first opening and the second opening can preferably be formed on a common surface of the housing, whereby ergonomic operation of the oven or grill system is possible. In particular, when the oven or grill system is in the use position, the first opening can be arranged below the second opening. In the furnace or grill system, the receiving region can preferably be configured in particular within the combustion chamber in order to receive the solid fuel a) by direct introduction into the receiving region, or b) by indirect introduction into the receiving region by means of a solid fuel insert which is designed to carry the solid fuel and to be inserted into the receiving region in a defined position. As already explained above, the solid fuel insert can be designed as a trough or container. Alternatively, the receiving region can be configured such that the solid fuel can be introduced directly into the receiving region. In this case, the receiving region can be designed in particular in the combustion chamber in the manner of a trough or container. Such a configuration of the housing in the receiving region is also possible. Therefore, the receiving area, the combustion chamber or the solid fuel insert may be configured to receive wood, wood pellets, wood chips, coal, charcoal and / or branches as the solid fuel.Preferably, the open connection between the receiving region and the baking or grilling chamber can comprise a gap between an end face of the baking or grilling chamber base and an inner face of the housing and / or at least one opening in the baking or grilling chamber base. This end face of the cooking chamber bottom is in particular facing away from the first opening of the housing.According to a further aspect of the invention, a gas burner insert is proposed, configured for burning a gaseous fuel and for defined insertion into a receiving region of a furnace or grill system, in particular into the receiving region of the furnace or grill system described above. The gas burner insert preferably has a guide device which is configured to cooperate with a complementary guide device of the receiving region of a housing oven or grill system in order to guide the gas burner insert into a defined operating position within the housing, in particular within a combustion chamber of the housing. The gas burner insert can also have at a first end at least one connection which can be coupled to a gas-conducting line, wherein the connection is fluidically connected to an internal gas-conducting duct of the gas burner insert.According to a further development of the gas burner insert, it can have a) in a central section adjoining the first end, first gas nozzles which are fluidically connected to the internal gas guide duct, and b) at a second end adjoining the central section, second gas nozzles which are fluidically connected to the internal gas guide duct, wherein c) the first gas nozzles and the second gas nozzles point in the same direction. As a result of this configuration, in the state of the gas burner insert inserted into the receiving region, the first gas nozzles can be directed in particular directly onto the second cooking or grilling base surface in order to generate the heat below for the grilling or baking item, and / or the second gas nozzles can be directed into the open connection between the receiving region and the cooking or grilling chamber or project through this open connection into the cooking or grilling chamber in order to generate the heat above in the cooking or grilling chamber, as has already been explained above.DRAWINGAn exemplary embodiment of the invention is illustrated in the drawing and explained in more detail in the following description. The drawing shows FIG. 1 is a front view of a oven or grill system according to a preferred embodiment configured in a first configuration for heating a food to be baked or grilled using a solid fuel; FIG. 2 is a side view of the oven or grill system of FIG. 1 ; FIG. 3 is a longitudinal sectional view of the oven or grill system of FIG. 1 along line A-A; FIG. 4 is a cross-sectional view of the oven or grill system of FIG. 1 taken along line B-B of FIG. 2 ; FIG. 5 is a front view of a oven or grill system according to a preferred embodiment configured in a second configuration for heating a food to be baked or grilled using a gas burner insert; FIG. 6 is a longitudinal sectional view of the oven or grill system of FIG. 5 taken along line A-A; FIG. 7 is a cross-sectional view of the oven or grill system of FIG. 5 ; FIG. 8A is a front view of a gas burner insert as constructed and provided for insertion into a receiving region of the oven or grill system of FIG. 5 ; FIG. 8B is a side view of the gas burner insert; FIG. 8C is a top view of the gas burner insert on an upper surface into which gas nozzles open.DESCRIPTION OF THE EMBODIMENTFIGS. 1 to 4 show views of a kiln or grilling system 1 according to a preferred embodiment, which is configured in a first configuration for heating a item of bakery or grilling with the aid of a (loose) solid fuel, such as wood here, in particular wood grit.As best shown in FIGS. 3 and 4, the oven or grill system 1 comprises a housing 2 in which a baking or grill chamber 3 configured to accommodate and heat the food to be baked or grilled is arranged, a baking or grill chamber bottom 4 within the housing 2 which has a first baking or grill chamber bottom surface 5 facing the baking or grill chamber 3 and delimiting the baking or grill chamber 3 and configured to store the food to be baked or grilled for heating, and a second baking or grill chamber bottom surface 6 facing away from the baking or grill chamber 3.Furthermore, an open connection 7 is provided between a receiving region 8 for a heating source arranged within the housing 2 and the baking or grilling chamber 3, which is formed here, for example, by a gap between an end face of the baking or grilling chamber base 4 and an inner surface 9 of the housing 2. The open connection represents a flow connection, in particular for conducting heated air. The receiving region 8 is arranged in a combustion chamber 11 within the housing 2, which is then likewise fluidically connected to the baking or grilling chamber 3 via the open connection 7. The combustion chamber 11 is provided to have combustion of the solid fuel therein in the first configuration or a gaseous fuel therein in a second configuration of the furnace or grill system 1.Furthermore, the baking or grilling chamber 3 is connected to an exhaust gas outlet formed on an upper wall in the housing 2, as viewed in the use position, to which exhaust gas outlet, for example a vertical chimney 12 is flange-connected here. Therefore, in the use position, the combustion chamber 11 is formed vertically below the cooking chamber base 4, which combustion chamber is configured to receive, at or in the receiving region 8, a heating source which is formed by the solid fuel in the first configuration according to FIGS. 1 to 4. As can be seen with reference to FIGS. 3 and 4, the combustion chamber 11 with the receiving region 8 is bounded by the second cooking chamber bottom surface 6. The combustion chamber 11 and the receiving region 8 formed therein are then preferably in flow communication here only via the open connection 7 with the baking or grilling chamber 3.In order that the solid fuel present here, in particular, in a loose form or as bulk material, can be accommodated on or in the accommodation region 8 in the combustion chamber 11, the housing is shaped in the region of the accommodation region 8, for example, in the manner of a trough, such that the loose solid fuel can be poured onto a base of the accommodation region 8, which here, for example, also forms the base of the combustion chamber 11 or of the housing 2, from the outside via a first opening 13 on an end face 14 of the housing 2.It can be seen from FIGS. 3 and 4 that a first guide device 15 is formed in or on the receiving region 8 of the combustion chamber 11, which guide device is formed in a complementary manner to a second guide device 16 of a gas burner insert 17 described later, in order in a second configuration to insert the baking or grilling system 1 into the receiving region 8 and to insert a gas burner insert 17 through the first opening 13 and to hold it in a defined operating position. A gaseous fuel is then discharged in the combustion chamber 11 via the gas burner insert 17 in order to combust it and to heat the air in the combustion chamber 11.It is preferably provided that the cooking or grilling chamber base 4 is configured to be heat-conducting. The baking or grilling chamber base 4 embodied in a heat-conducting manner can be embodied, for example, as a Schamott stone, in particular as a Schamott stone plate. Schamott stone has the property that it can absorb and store heat very well.Combustion of the solid fuel heats the second cooking chamber bottom surface 6 immediately, as illustrated by the first arrows 18 in FIG. 4. The second baking or grilling chamber bottom surface is therefore preferably directly exposed to a flame of the combustion or a glutin of the solid fuel. Due to the heat-conducting property of the cooking chamber base 4, the first cooking chamber base surface 5 on which the food to be grilled or cooked is stored is also heated over time, so that under heat for the food to be grilled or grilled is thus generated. In parallel therewith, the thermal energy or hot air generated during the combustion of the solid fuel passes from the combustion chamber 11 via the open connection 7 into the cooking or grilling chamber 3, as illustrated by the second arrow 19 in FIG. 3, in order to generate a top heat for the grilling or baking item there. The items to be baked and grilled are therefore advantageously heated from below and from above, which ensures uniform cooking. In order to close the combustion chamber 11 and in particular also in order here to control the air flow from the outside into the combustion chamber 11, a first closure element 20 is provided which is movable relative to the housing 2 and is configured to in particular completely open the first opening 13 in an open position and in particular completely close it in a closed position. If the first closure element 20 is designed as a flap pivotable about a vertical axis, the first closure element 20 can also assume any desired intermediate positions between the open position and the closed position. Depending on the pivoted position of the first closure element 20, the flow cross section for the outside air into the combustion chamber 11 can then be controlled.Preferably, the first closure element 20 has through-openings 21, here for example in the form of vertical slots, which provide a further flow cross section in order to introduce external air into the combustion chamber 11. In particular, the flow cross section through the through openings 21 of the first closure element 20 can be controllable, here variable, for example, depending on the position of a slide 22 mounted horizontally displaceably on the first closure element 20. The slide 22 is therefore configured such that the flow cross section through passage openings varies depending on the position, i.e. fully or partially opens up or covers it. This additionally provides a type of slide valve for the flow cross section of outside air into the combustion chamber 11. Depending on the pivot position of the first closure element 20 and the position of the slide 22 relative to the first closure element 20, the flow of outside air into the combustion chamber 11 and thus the combustion process there can be controlled.Particularly preferably, a second opening 23 is provided on the end face 14 of the housing 2, which is configured for loading and unloading the baking or grilling chamber 3 with the items to be baked or grilled, as best shown in FIG. 1. Furthermore, a second closure element 24 is also provided which is movable with respect to the housing 2 in order to be able to open and close the second opening 23. The second closure element 24 is preferably formed here by a flap which can be pivoted about a horizontal axis, for example. Preferably, therefore, the first opening 13 and the second opening 23 are formed on the same end face 14 of the housing 2, whereby ergonomic operation of the oven or grill system 1 is possible. In particular, when the oven or grill system 1 is in the use position, the first opening 13 is arranged below the second opening 23.The user of the kiln or grill system 1 has the choice between two heating sources, namely between the solid fuel already described here as the first heating source in the first configuration and a gas burner insert which burns gaseous fuel as the second heating source in the second configuration.FIGS. 5 to 7 show the second configuration of the oven or grill system 1, which is configured for heating a item of bakery or grillage with the aid of the gas burner insert 17 shown in isolation in FIGS. 8A to 8C.As already explained above, the first guide device is provided in the receiving region 8 of the combustion chamber 11, which guide device interacts with the second guide device of the initially loose gas burner insert 17 when the latter is introduced into the receiving region 8 from the outside through the first opening 13.If the gas burner insert is inserted through the first opening 13 into the receiving region 8 of the combustion chamber 11, it is advantageous if, as is preferred here, the first closure element 20 is mounted on the housing 2 by a mounting which enables removal of the first closure element 20. Therefore, in the second configuration (operation with the gas burner insert 17), the first closure element 20 is preferably removed. Then, for the conversion from the first configuration (solid fuel) to the second configuration (gaseous fuel), the gas burner insert 17 can be inserted through the first opening 13 from the outside into the receiving region 8 in the combustion chamber 11 by the second guide device 16 of the gas burner insert 17 sliding along the first guide device 15 until the gas burner insert 17 has assumed a defined operating position in the receiving region 8 or in the combustion chamber 11, as is best shown in FIG. 6 and in FIG. 7. An additional fixing device in the receiving region 8 can ensure that this operating position can be held by the gas burner insert 17.The first and the second guide device 15, 16 can have, for example, complementarily configured rail profiles which are configured to slide on or on one another in a form-fitting manner. As shown in FIGS. 8A to 8C, the gas burner insert 17 can have at a first end 26 at least one connection 25, which can be coupled to a gas-conducting line, wherein the connection 25 is fluidically connected to an internal gas guide channel of the gas burner insert 17, which is not visible here. In the state inserted into the receiving region 8, i.e. in the defined operating position of the gas burner insert 17, this connection 25 protrudes out of the first opening 13. Consequently, preferably after the gas burner insert 17 has been inserted into the receiving region 8, this connection 26 can be connected to a gas line, not shown here, which on the other hand is connected to a gas source such as a gas cylinder.Furthermore, the gas burner insert 17 has, for example, in a central section 27 adjoining the first end 26, first gas nozzles 28 which are fluidically connected to the internal gas guide duct, and, at a second end 29 adjoining the central section 27, second gas nozzles which are fluidically connected to the internal gas guide duct, wherein the first gas nozzles 28 and the second gas nozzles 30 preferably point in the same direction. As illustrated in particular in FIG. 8B, the first gas nozzles 28 are preferably designed as a planar gas nozzle array in order to be able to heat the second baking or grilling chamber bottom surface 6 in a planar manner and the second gas nozzles 30 as gas nozzles arranged next to one another in a line in order to be able to project into the open connection 7 in a closed manner. If the gas burner insert 17 is accommodated in the accommodation region 8 of the combustion chamber 11, then the first gas nozzles 28 are preferably directed directly onto the second baking or grilling base surface 6, and the second gas nozzles 30 are preferably directed into the open connection 7 between the combustion chamber 11 and the baking or grilling chamber 4. Alternatively, the gas burner insert 17 can also be designed such that the second gas nozzles 30 project through the open connection 7 as far as into the baking or grilling chamber 4.With such a preferred embodiment of the gas burner insert 17, on the one hand, a direct heating of the second cooking chamber bottom surface 6 for generating the heat under it and / or, on the other hand, the generation of the heat over it for the food to be grilled or baked is realized.List of reference characters1 Oven or grill system 2 Housing 3 Cooking or grill chamber 4 Cooking or grill chamber base 5 First cooking or grill chamber base surface 6 Second cooking or grill chamber base surface 7 Open connection 8 Receiving region 9 End face 10 Inner surface 11 Combustion chamber 12 Chimney 13 First opening 14 End face 15 First guide device 16 Second guide device 17 Gas burner insert 18 First arrows 19 Second arrow 20 First closure element 21 Through openings 22 Slide 23 Second opening 24 Second closure element 25 Connection 26 First end 27 Central section 28 First gas nozzles 29 Second end 30 Second gas nozzlesReferences included in the specificationThis list of documents cited by the applicant has been produced in an automated manner and is only included for the better information of the reader.
