Description

Beverages containing cinnamic acid, cinnamic acid derivatives or combinations thereof

[0001] The present invention relates to a beverage containing cinnamic acid, a cinnamic acid derivative, or a combination thereof, an acidulant, and a sweetener, and a method for producing the same. The present invention also relates to a method for improving the taste of a beverage containing a sweetener using cinnamic acid, a cinnamic acid derivative, or a combination thereof, and an acidulant.

[0002] A wide variety of beverages have been developed and sold to meet consumer tastes. Among these, numerous attempts have been made to improve the negative taste characteristics of beverages. For example, Japanese Patent Application Laid-Open No. 2008-50349 (Patent Document 1) discloses that blending (a) branched-chain amino acids at a concentration of 110 mg / 50 mL or more and (b) one or more selected from Bupleurum Root, Eucommia Root, Eucommia Fruit, Cistanche Salicylate, and Cinnamon Bark at a concentration of 50 mg / 50 mL or more in terms of crude drug, suppresses the generation of unpleasant odors over time even when branched-chain amino acids are blended in high concentrations in a beverage. Furthermore, Japanese Patent Application Laid-Open No. 2006-296324 (Patent Document 2) discloses that adding black vinegar, salt, and honey to a herbal extract health beverage suppresses the generation of a distinctive, peculiar taste.

Examples of salts include sodium citrate (monosodium citrate, disodium citrate, or trisodium citrate), sodium ascorbate, and the like. Among these sour substances, ascorbic acid, phosphoric acid, citric acid, gluconic acid, tartaric acid, lactic acid, malic acid, phytic acid, acetic acid, succinic acid, and salts thereof are preferred, and one or more acidulants selected from phosphoric acid, citric acid, lactic acid, tartaric acid, and acetic acid, and salts thereof, are more preferred. These acidulants may be used alone or in combination.

[0027] The content of acidulants in beverages can be determined by their acidity. The acidity (in terms of citric acid) of a beverage can be measured by neutralization titration using an automatic potentiometric titrator (e.g., the AT-500N manufactured by Kyoto Electronics Manufacturing Co., Ltd.). Specifically, distilled water is added to 10 g of a beverage sample to make a total volume of 50 mL, and then sodium hydroxide solution (0.1 N, volumetric reagent) is added dropwise from a burette while stirring until the pH reaches 8.0. The acidity in terms of citric acid can then be calculated using the following formula: "Total beverage acidity (g / 100 g)" = titration amount (mL) × F × A × (100 / sample amount (g)) F: Approximately 1.00 (factor of 0.1 N sodium hydroxide solution) A: 0.0064 (number of grams of citric acid equivalent to 1 mL of sodium hydroxide solution)

[0028] The type of acidulant added to a beverage can be analyzed by known methods such as HPLC. When the amount of the acidulant added is known and no other acidulants are added, the acidity can be calculated from the amount of the acidulant added.

[0029] The acidity of the beverage in the first and third aspects of the present invention may be 0.65 to 2.5 g / 100 g in terms of citric acid. The acidity ranges are 0.65 to 2.0 g / 100 g, 0.65 to 1.8 g / 100 g, 0.65 to 1.5 g / 100 g, 0.65 to 1.3 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1 g / 100 g, 0.65 to 0.95 g / 100 g, 0.65 to 0.90 ....1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to 1.1 g / 100 g, 0.65 to The acidity may be 0.70 to 2.0 g / 100 g, 0.70 to 1.8 g / 100 g, 0.70 to 1.5 g / 100 g, 0.70 to 1.3 g / 100 g, 0.70 to 1.1 g / 100 g, 0.70 to 1 g / 100 g, 0.70 to 0.95 g / 100 g, or 0.70 to 0.90 g / 100 g. The acidity is preferably 0.65 to 1 g / 100 g, more preferably 0.65 to 0.95 g / 100 g, and even more preferably 0.70 to 0.90 g / 100 g.

[0030] The acidity of the beverage in the second and fourth aspects of the present invention may be 0.20 to 0.65 g / 100 g, calculated as citric acid. [0032] (Sweetener) Beverages according to some embodiments of the present invention contain one or more sweeteners. Such sweeteners may be low-intensity sweeteners, high-intensity sweeteners, or a combination thereof. As used herein, a low-intensity sweetener refers to a sweetener having a sweetness equivalent to or less than that of sucrose. For example, a low-intensity sweetener, when used in the same amount as sucrose, exhibits a sweetness that is at least 0.1 times, but less than 5 times, less than 3 times, less than 2 times, less than 1.5 times, less than 1.0 times, less than 0.8 times, less than 0.7 times, less than 0.6 times, less than 0.5 times, or less than 0.4 times that of sucrose. Low-intensity sweeteners that can be used in the present invention include, for example, sweeteners selected from glucose, sucrose, xylitol, erythritol, fructose, maltose, oligosaccharides, high-fructose corn syrup (HFCS), lactose, psicose, allose, tagatose, xylose, ribose, and combinations thereof. In a preferred embodiment of the present invention, the beverage contains glucose, fructose, sucrose, high-fructose corn syrup, or rare sugars (such as psicose (allulose), xylitol, and erythritol).

[0033] As used herein, the term "high-intensity sweetener" refers to a compound that has a sweetness greater than that of sucrose, and may be a naturally-derived compound, a synthetic compound, or a combination of a naturally-derived compound and a synthetic compound. A high-intensity sweetener, per equivalent amount of sucrose, exhibits a sweetness that is at least 5, 10, 50, 100, 500, 1,000, 5,000, 10,000, 50,000, or 100,000 times sweeter than sucrose. The above-mentioned steviol glycosides are also considered high-intensity sweeteners.

[0034] Specific examples of high-intensity sweeteners include peptide sweeteners such as aspartame, neotame, and advantame; sucralose and other sucrose derivatives; and synthetic sweeteners such as acesulfame potassium (acesulfame K), saccharin, saccharin sodium, sodium cyclamate, dulcin, disodium glycyrrhizinate, trisodium glycyrrhizinate, and neohesperidin dihydrochalcone (including those that exist naturally, but are primarily sold as synthetic products, such as neohesperidin dihydrochalcone). ); sweeteners extracted from plants such as thaumatin, monellin, curculin, mabinlin, brazzein, pentadin, hernandulcin, 4β-hydroxyhernandulcin, miraculin, glycyrrhizin, rubusoside, and phyllodulcin; steviol glycosides such as rebaudioside A, rebaudioside D, and rebaudioside M; glycosides of cucurbitan derivatives such as mogroside IV and mogroside V; or plant extracts containing high-intensity sweetener components such as stevia extract and monk fruit extract.

[0035] The beverage in another embodiment of the present invention may preferably contain a peptide-based sweetener, a sucrose derivative, or a synthetic sweetener. For example, the beverage in another embodiment of the present invention may contain one or more high-intensity sweeteners selected from acesulfame K and sucralose. That is, the beverage in another embodiment of the present invention may contain only acesulfame K, only sucralose, or a combination of acesulfame K and sucralose. The beverage in another preferred embodiment contains one or more low-intensity sweeteners selected from the group consisting of sucrose, glucose, fructose, high-fructose corn syrup, psicose, and erythritol.

[0036] The sweetener content is not particularly limited, but it is preferable that the sweetness intensity of the beverage be 5 or more (e.g., 10 to 25) in terms of sucrose equivalent value (SEV). A sucrose equivalent of 1 is the sweetness intensity exhibited by sucrose (cane sugar) per unit concentration Brix 1. Here, Brix 1 means that 1 g of sucrose is dissolved in 100 g of aqueous sucrose solution (sucrose concentration 1 w / w%). In this specification, the sucrose equivalent of a beverage can be obtained by multiplying the concentration (w / v% (which can be considered equivalent to w / w% in the case of beverages)) of the sweetener contained in the beverage by the sweetness of that sweetener and adding up the resulting values. For example, in the present specification, if the sweetness of sucrose is taken as 1, the sweetness of rebaudioside D is about 225 times, that of rebaudioside M is about 230 times, that of rebaudioside A is 200 to 300 times (median value 250), that of monk fruit extract is about 110 to 150 times (median value 130), that of mogroside V is about 240 to 300 times (median value 270), that of thaumatin is about 2,000 times, that of acesulfame potassium is about 200 times, that of sucralose is about 600 times, and that of aspartame is about 200 times. In addition, as used herein, for example, when the sweetness of sucrose is taken as 1, glucose has a sweetness of about 0.6 to about 0.7, xylitol is about 1, erythritol is about 0.75 to about 0.85, fructose is about 1.3 to about 1.7, maltose is about 0.4, fructooligosaccharide is about 0.6, maltooligosaccharide is about 0.3, isomaltooligosaccharide is about 0.4 to about 0.5, galactooligosaccharide is about 0.7, high-fructose liquid sugar is about 0.75, lactose is about 0.2 to 0.3, psicose is about 0.7, allose is about 0.8, tagatose is about 0.9, xylose is about 0.6 to about 0.7, and ribose is about 0.6. Note that, among the relative ratios of the sweetness of various sweeteners to the sweetness of sucrose of 1, those not described herein can be determined from known sugar sweetness conversion tables, etc. Here, since the sweetness of aspartame is about 200 times that of sucrose, if a beverage containing 0.005% by weight (50 ppm) of aspartame does not contain any other sweeteners, the sweetness of the beverage will be 1 in sucrose equivalent. If the beverage contains other sweeteners (high-intensity sweeteners and low-intensity sweeteners), the sweetness intensity of the beverage is expressed as the sum of the sucrose equivalents of the sweetness intensities provided by each of those sweeteners.

[0037] Beverages according to some embodiments of the present invention may contain high intensity sweeteners in the following amounts: 5-100 mg / 100 g, 5-90 mg / 100 g, 5-80 mg / 100 g, 5-70 mg / 100 g, 5-60 mg / 100 g, 5-50 mg / 100 g, 5-40 mg / 100 g, 5-30 mg / 100 g, 5-20 mg / 100 g, 10-100 mg / 100 g, 10-90 mg / 100 g, 10-80 mg / 100 g, 10-70 mg / 100 g, 10-60 mg / 100 g, 10-50 mg / 100 g, 10-40 mg / 100 g, 10- The high-intensity sweetener content may be 30 mg / 100 g, 10 to 20 mg / 100 g, 20 to 100 mg / 100 g, 20 to 90 mg / 100 g, 20 to 80 mg / 100 g, 20 to 70 mg / 100 g, 20 to 60 mg / 100 g, 20 to 50 mg / 100 g, 20 to 40 mg / 100 g, 20 to 30 mg / 100 g, 30 to 100 mg / 100 g, 30 to 90 mg / 100 g, 30 to 80 mg / 100 g, 30 to 70 mg / 100 g, 30 to 60 mg / 100 g, 30 to 50 mg / 100 g, or 30 to 40 mg / 100 g.
