[0008] The foaming granules of the present invention have foaming properties due to the inclusion of the foaming raw material, and contain foaming raw material powder in the dispersed phase and hardened oil in the continuous phase, so that the foaming raw material is less likely to react with moisture, and carbon dioxide gas generated during storage due to the reaction of the foaming raw material with moisture in the air or inside the package can be suppressed, resulting in low hygroscopicity and high storage stability. Furthermore, a process of coating the foaming raw material individually is not required, and granules with low hygroscopicity and high storage stability can be easily produced simply by compressing and granulating a powder containing the foaming raw material powder and hardened oil powder. DETAILED DESCRIPTION OF THE PREFERRED EMBODIMENTS

[0009] The foaming granules described in the present invention contain hardened oil in the continuous phase and foaming raw material powder in the dispersed phase, and are obtained by compressing and granulating a mixed powder of foaming raw material powder containing carbonate and organic acid and hardened oil powder, and react with water to generate carbon dioxide gas.

[0010] The foaming raw material used in the present invention may be at least two kinds of raw materials that generate carbon dioxide gas by reacting with water, and a powder of a carbonate and an organic acid is used as the foaming raw material powder. Examples of the carbonate include sodium carbonate, sodium bicarbonate, potassium carbonate, potassium bicarbonate, calcium carbonate, magnesium carbonate, etc., with calcium carbonate being preferred, and examples of the organic acid include citric acid, acetic acid, malic acid, succinic acid, etc., with citric acid being preferred. The ratio of the organic acid to the carbonate can be set according to the number of moles of the reaction formula that generates carbon dioxide gas, and it is preferable to include 15 to 200 parts by weight of the carbonate relative to 100 parts by weight of the organic acid, more preferably 20 to 150 parts by weight, even more preferably 30 to 100 parts by weight, and particularly preferably 50 to 80 parts by weight. When the foaming granules or mixed powder is taken as 100% by weight, the foaming raw material powder is preferably contained in an amount of 15 to 99% by weight, more preferably 20 to 97% by weight, and even more preferably 25 to 95% by weight.

[0011] The hardened oil used in the present invention may be in the form of a powder, and examples of the hardened oil include rapeseed hardened oil, soybean hardened oil, palm hardened oil, beef tallow hardened oil, and coconut hardened oil. Palm hardened oil is preferred, and the hardened oil powder has a melting point of 40° C. or higher, preferably 45° C. or higher, more preferably 50 to 70° C., even more preferably 53 to 68° C., and particularly preferably 55 to 65° C. If the melting point is less than 40° C., it is difficult to compress and granulate the mixed powder at temperatures other than those at which the fats and oils do not melt, and even if granulation is possible, the granules may not be able to maintain their shape in summer, etc., making this unsuitable.

[0012] The emulsifier described in the present invention is not particularly limited, and commercially available food emulsifiers such as polyglycerin fatty acid ester, sucrose fatty acid ester, polyoxyethylene sorbitan fatty acid ester, etc. can be used, and may be used alone or in combination of two or more. Polyglycerin fatty acid ester or sucrose fatty acid ester is preferable, and examples of polyglycerin fatty acid ester include Ryoto (registered trademark) Polyglyester (manufactured by Mitsubishi Chemical Foods Co., Ltd.), etc., and examples of sucrose fatty acid ester include Ryoto Sugar Ester (manufactured by Mitsubishi Chemical Foods Co., Ltd.). Lipophilic emulsifiers are preferable, and the HLB value (Hydrophile-Lipophile Balance Value) of the emulsifier is preferably 1 to 6, more preferably 5 or less, and more preferably 4 or less. When an emulsifier is added, the amount of oil remaining after eating the granules can be suppressed, and foamed granules with a better texture can be obtained.

[0013] The foamed granules of the present invention may be compression granules, and contain hardened oil in a continuous phase, and when an emulsifier is used, the hardened oil and the emulsifier in the continuous phase, and contain foaming raw material powder containing carbonate and organic acid in a dispersed phase. When the foamed granules or mixed powder is taken as 100% by weight, the hardened oil having a melting point of 40°C or higher and the emulsifier are contained in a total of 0.5 to 25% by weight, preferably 1.0 to 20% by weight, and more preferably 1.5 to 15% by weight. The hardened oil content is preferably 0.5 to 25% by weight, more preferably 1.0 to 20% by weight, and even more preferably 1.5 to 15% by weight. The emulsifier content is preferably 0 to 15% by weight, more preferably 0.2 to 10% by weight, and even more preferably 0.5 to 7% by weight. The emulsifier is preferably 0 to 2 parts by weight, more preferably 0.1 to 1.5 parts by weight, and even more preferably 0.2 to 1.3 parts by weight, per part by weight of the hardened oil. In addition, when the foaming raw material powder is taken as 100% by weight, the total content of the hardened oil having a melting point of 40°C or higher and the emulsifier is preferably 0.5 to 30% by weight, more preferably 1.0 to 20% by weight, and even more preferably 2.0 to 15% by weight.

[0014] In the present invention, a foaming raw material powder containing carbonate and organic acid and hardened oil powder is mixed, and the mixed powder contains 0.5 to 25% by weight of hardened oil having a melting point of 40° C. or more and emulsifier in total, and is compressed and granulated to obtain foaming granules containing hardened oil in a continuous phase and foaming raw material powder in a dispersed phase. In detail, the foaming granules can be produced by crushing a sheet-shaped compression molded product obtained by compression molding the mixed powder using a dry compression granulator and preferably a granulator, and then sieving the crushed product. The average particle size of the foaming granules is not particularly limited, but is preferably 0.1 to 10 mm, more preferably 0.2 to 8 mm, even more preferably 0.5 to 5 mm, particularly preferably 1 to 3 mm, and most preferably 1.5 mm or more.

[0015] In the present invention, other raw materials such as seasonings such as sugar, salt, various amino acids, nucleic acids, milk powder, cocoa powder, caramel powder, coffee powder, matcha powder, fruit juice powder, etc., seasoning powders such as extract powders (livestock extract powder, kelp extract powder, vegetable extract powder, etc.), powdered spices (chili pepper powder, pepper, garlic, curry powder, etc.), colorants, fragrances, etc. can be blended into the mixed powder, and the blending amount is preferably 0.01 to 80% by weight, more preferably 0.05 to 75% by weight, and even more preferably 0.1 to 70% by weight, when the foamed granules or mixed powder is taken as 100% by weight.

[0016] The effervescent granules of the present invention can be used as an oral composition by themselves, but oral compositions containing the effervescent granules can also be produced, such as foods and beverages including confectionery, powdered beverages, seasonings, functional foods, cooking aids such as mousse-making agents, medicines, quasi-drugs, etc. The content of the effervescent granules in the oral composition is not particularly limited, but is preferably 0.1 to 100% by weight, more preferably 0.2 to 95% by weight, and even more preferably 0.5 to 90% by weight. EXAMPLES

[0017] The present invention will be described in detail below with reference to examples, but the present invention is not limited to the following examples. In the present invention, all % is by weight unless otherwise specified.

[0018] [Example 1] Powders of calcium carbonate (derived from quicklime), anhydrous citric acid, and powdered oil (Unishort (registered trademark) K, melting point approximately 58°C, Fuji Oil Co., Ltd.) were mixed in the amounts shown in Table 1, and compression-molded using a roller compactor (TF-MINI: manufactured by Freund Corporation). The resulting sheet-like compression-molded product was crushed using a one-rotor type granulator (oscillator: manufactured by Freund Corporation), and then passed through a 5 mesh (sieve with nominal openings of 4 mm) and an 11 mesh (sieve with nominal openings of 1.6 mm) sieve to obtain granules of Example 1.

[0019] [Example 2] Granules of Example 2 were obtained by carrying out the same procedure as in Example 1, except that an emulsifier, sucrose fatty acid ester (Ryoto Sugar Ester S-170, HLB: 1, Mitsubishi Chemical Foods Corporation), was further used in the amounts shown in Table 1.

[0020] [Comparative Example 1] The same procedure as in Example 1 was carried out using the blending amounts shown in Table 1 to obtain granules of Comparative Product 1.

[0021] [Comparative Example 2] The powders were mixed in the amounts shown in Table 1, and then passed through a 20 mesh sieve (nominal opening of 0.85 mm) to obtain a mixed powder of Comparative Product 2.

[0022] [Evaluation test] The texture and storage stability of the granules of Examples 1 and 2 and Comparative Product 1, and the mixed powder of Comparative Product 2 were evaluated, and the results are shown in Table 1. For the texture, 0.5 g of each was directly eaten, and the effervescence, disintegrability, and roughness were evaluated. For effervescence, those with effervescence were rated as "present", for disintegrability, those that were easily chewed and disintegrated were rated as "good", and those with a hard texture and difficult to disintegrate were rated as "poor". For roughness, those that did not feel roughness on the tongue after chewing were rated as "absent", and those that did feel roughness were rated as "present". As for the overall evaluation of texture, those with a very good texture were rated as "◎", those with a good texture were rated as "○", and those with a slightly bad texture were rated as "△". Regarding storage stability, the granules of Example Products 1 and 2 and Comparative Product 1, and the mixed powder of Comparative Product 2 were packaged in aluminum packaging, sealed, and stored at 50°C for one month, after which the condition was evaluated. Packages that showed no swelling were marked with "○", and packages that showed swelling were marked with "×".

[0023] [Table 1]

[0024] Example product 1 was easy to chew, had good disintegration properties, and had a fizzing sensation after chewing. No fizzing was observed during storage, but oil remained on the tongue and felt rough. Example product 2 was easy to chew, had good disintegration properties, had a fizzing sensation after chewing, felt no roughness, and did not fizz during storage. Comparative product 1 had a fizzing sensation after chewing and did not feel rough, but had a hard texture, was difficult to disintegrate, and fizzing was observed during storage. Comparative product 2 melted easily in the mouth, had a fizzing sensation immediately, and did not feel rough, but fizzing was observed during storage.

[0025] From the above, it was found that foaming granules with excellent storage stability and reduced moisture absorption can be obtained by blending powdered oil, which is a hardened oil, with foaming ingredients containing carbonates and organic acids and then compressing and molding the mixture, and that foaming granules with excellent texture can be obtained by adding an emulsifier. It is believed that the heat generated during compression melts the hardened oil and turns it into a continuous phase, thereby suppressing the moisture absorption of the foaming ingredient powder contained as a dispersed phase.

[0026] [Example 3] In addition to the powdered fats and oils (Unishort (registered trademark) K, melting point about 58°C) as hardened oil, and the powdered sucrose fatty acid ester (Ryoto Sugar Ester S-170, HLB: 1) as emulsifier, in the amounts shown in Table 2, salt was further added in Example 3-1, and in Example 3-2, granulated sugar, cider oil as powdered flavoring, and Homo Blue (Yaegaki Fermentation Engineering Co., Ltd.) as powdered colorant were further mixed, and then compression-molded using a roller compactor (TF-MINI: manufactured by Freund Corporation). The obtained sheet-like compression-molded product was crushed using a one-rotor type granulator (oscillator: manufactured by Freund Corporation), and then passed through a 5 mesh (sieve with nominal opening of 4 mm) and an 11 mesh (sieve with nominal opening of 1.6 mm) to obtain granules of Examples 3-1 and 3-2.

[0027] [Table 2]

[0028] Both Products 3-1 and 3-2 had excellent effervescence and texture, and it was found that effervescent salt granules (Product 3-1) and effervescent soda granules (Product 3-2) could be easily produced.
