Background technique [0001] Dishwashers, especially commercial dishwashers, must effectively clean a variety of items such as pots and pans, glasses, plates, bowls, and utensils. These items include a variety of soils including protein, grease, starch, sugar, and coffee and tea stains, which can be difficult to remove. Sometimes, these foulants are burned or sintered, or otherwise thermally degraded. At other times, the soil may be allowed to remain on the surface for a period of time making it more difficult to remove. Dishwashers remove soil by using strong detergents, high heat, disinfectants, or mechanical action from large volumes of water.
