A near-infrared fruit sugar degree nondestructive detecting device with adjustable illumination parameters comprises two parts, namely a spectrum collecting module and a data processing and operating interface module, wherein the spectrum collecting module mainly realizes the adjustment of light source irradiation parameters and the function of collecting sample spectral information; the data processing and operating interface module mainly realizes the reading, saving, displaying and transforming of the spectral information, the parameter setting, the prediction of fruit sample sugar degree, and the displaying function. According to the invention, the irradiation angle of the light source can be adjusted, or the position of the light source in a sliding chute of a lamp bracket can be changed, so as to achieve the purposes that different parts of fruits, fruits with different sizes and different kinds of fruits are detected; the position of the lamp bracket in the V-shaped bracket sliding chute can be changed to change the intensity of the light source irradiating on the fruits, so that fruits with different peel thicknesses and different sizes can be detected.
