Abstract

The invention relates to a method for studying the interaction between eggplant extract and bovine serum albumin by fluorescence spectroscopy. Flavonoid compounds are extracted from different parts ofeggplants by a refluxing technology under different solvent conditions, and are analyzed by the fluorescence spectroscopy, the interaction between the eggplant extract and the bovine serum albumin isstudied at a pH value being 7.40 and being close to the physiological environment of human bodies, and the influences of the eggplant extracts of the different parts of and the type of solvents on the fluorescence intensity are discussed. Experimental results show that when methanol is used as a solvent, each of the extracts of eggplant stems, eggplant skins and eggplant pulp quenches the fluorescence of BSA, and the maximum fluorescence emission wavelength has no obvious red shift; and when ethanol is used as a solvent, each of the extracts of eggplant stems, eggplant skins and eggplant pulpquenches the fluorescence of the BSA, and the maximum fluorescence emission wavelength is significantly red-shifted. The fluorescence value of the interaction between the eggplant methanol extractand the BSA and the fluorescence values of the interaction between the eggplant ethanol extract and the BSA decrease with the increase of the extract concentration, and the decrease ways and the decrease degrees are different.
