The gas water heater is a sectional type gas water heater and at least comprises a first fire grate assembly and a second fire grate assembly, and the gas water heater further comprises a proportional valve for adjusting the gas supply amount as well as a first section valve and a second section valve communicating or closing gas entering the first fire grate assembly and the second fire grate assembly. The control method comprises the following steps: detecting that the change of heat demand; calculating a fire transfer point load caused by the change of the heat demand; and controlling the opening degree of the proportional valve to be adjusted to a valve switching point corresponding to the fire transfer point load. A fixed valve switching point during fire transfer is not set for the proportional valve, but a corresponding valve switching point suitable for the change of the heat demand is automatically calculated according to the heat demand, so that a controller controls a burner to be switched in different section modes, the temperature of the outlet water flow is more constant during switching, and meanwhile, the gas can be saved.
