Abstract

The invention discloses a fresh-keeping processing and packaging process for lotus seeds. The process comprises the following steps: draining fresh lotus seeds for 1 h, and precooling the lotus seeds in an air-cooled cold storage at 0-2 DEG C for 24 hours, until temperature at the lotus seed center drops to 2 DEG C; stripping the lotus seeds off seedpod of the lotus, and keeping the cyan skin; immersing the cyan lotus seeds with a chlorine dioxide solution with concentration of 100ppm for 15 min, taking out the lotus seeds, and rinsing the lotus seeds with clear water for 5 min; immersing the lotus seeds into a mixed solution containing 25% of VC and 0.5% of citric acid for 10 minutes, with temperature of the immersion solution controlled at 0-4 DEG C, taking out and draining the lotus seeds; and filling the cyan lotus seeds without any water on the surface into a box, and packaging the fruits by a controlled atmosphere packaging method. According to the above process provided by the invention, a fresh-keeping period of the lotus seeds is prolonged from an original 15 days to 3 months, without loss of appearance, color or taste of the lotus seeds.
