[0085] The experiments were carried out with careful analysis of published data on the oxidation of orange oil in spray-dried powders. The results of the experiments support a correlation between shelf life (determined by sensory panels and GC-MS measurements of oxidation products) and the number average molecular weight of the carrier carbohydrates used to encapsulate the flavouring.
