Problems solved by technology

The nonionic emulsifier may be a low molecular weight emulsifier such as diacetyl tartrate of mono- and diglycerides, such as or However, a disadvantage of said low molecular weight emulsifiers is that when they are used in sufficient amounts to reduce the viscosity of the emulsion, they tend to stick to the walls of the spray dryer as well as to the surfaces of other particles in the spray dryer

Embodiment

[0085] The experiments were carried out with careful analysis of published data on the oxidation of orange oil in spray-dried powders. The results of the experiments support a correlation between shelf life (determined by sensory panels and GC-MS measurements of oxidation products) and the number average molecular weight of the carrier carbohydrates used to encapsulate the flavouring. First, it has been shown that the rate of oxidation product generation correlates with the rate of increase in the oxygen concentration in the substrate ( figure 2 ), based on Ref#12 and Ref#13 only. Second, the correlation between the rate of oxidation product formation and the sensory analysis performed and reported in Ref#13 at three different temperatures and extrapolated to other temperatures using Arrhenius. Third, an accelerated shelf-life test was developed to probe the rate of oxidation in dry particles over 13 days, assuming that the concentration of oxygen in the matrix will never be...

Abstract

A process for the preparation of shelf stable dry particles that include flavours or fragrances, in which an emulsion of the flavour or fragrance, an emulsifier of a natural extract containing saponins, water and a carbohydrate carrier system is spray-dried. Also provided are shelf stable dry particles and products containing them.

Description

[0001] The present invention is a divisional application of the No. 201480006757.X invention patent application filed on February 3, 2014 with the title of "storage-stable spray-dried particles". technical field [0002] The technical field relates to a process for the preparation of dry granules comprising flavors, wherein an emulsion comprising flavors or fragrances, natural extracts containing saponins, water and a carbohydrate carrier system is spray dried. The technology also relates equally to dry granules and to products containing them. Background technique [0003] Spray-dried products are typically prepared by spraying the emulsion into a drying chamber. Some emulsions may contain flavors or fragrances, carriers and emulsifiers. Several emulsion parameters can affect the quality of spray-dried solid capsules. In particular, it is well known to those skilled in the art of spray drying that it is desirable to spray dry a good emulsion, which is defined as a relativ...
