The invention discloses a full-automatic vacuum low-temperature fruit and vegetable fast maturing device which consists of three vacuum frying tanks, one oil storage tank, an oil pump, an oil pipe, a steam spraying device, a steam pipe, a vacuum pump, a vacuum pipe, a valve, a centrifugal motor, a working platform, a feeding manipulator and a programmable logic controller (PLC) programmable control system. The three vacuum frying tanks have the same structural performance, jointly use the same oil storage tank, and simultaneously run with different work steps. Each frying tank cover is provided with an automatic turning on/off mechanism, vegetable and fruit baskets are put into the frying tanks, and each frying tank cover is provided with an automatic locking/unlocking mechanism; the feeding manipulator can be used for automatically suspending the manually-filled vegetable and fruit baskets into the frying tanks and suspending the fried vegetable and fruit baskets out of the frying tanks. The vegetable and fruit are fried under the status of oxygen deficiency and low temperature, the color, the fragrance and the flavor are retained, and the effective components are retained, so that the fried fruit and vegetable are welcomed by consumers. The whole device is controlled by the PLC programmable control system, is full-automatic in working procedures such as oil charging, material charging, heating, vacuumizing, frying, centrifugally drying, timing, discharging and the like, and has the advantages of being high-efficiency, energy-saving, high-yield, stable in quality of the fired vegetable and fruit, and the like.
