Abstract

The present invention provides a heating cooker, comprising a pan with the upper surface provided with an opening portion and the side surfaces and the bottom surface provided with a plurality of uneven portions; and a pan heating unit arranged at the outer surface side of the pan, wherein the uneven potion of the pan is provided with a shape corresponding to the uneven shape of the inner surface side and the outer surface side, and when the inner surface side of the pan is recessed, the outer surface side corresponding to the inner surface side is protruding. The pan heating unit is arranged at the outer surface side before forming the uneven portion. The heat amount per unit area provided to a food to be cooked from the portion provided with the uneven portion is approximate to that provided to the food to be cooked from the portion not provided with the uneven portion. Therefore, the pan is uniformly heated, the boiling appears uniformly at the periphery of the whole pan bottom, the uniform boiling heat conduction enables the food to be cooked to be heated uniformly, thereby enabling all portions of foods to be cooked in the pan to be uniformly cooked (especially gelatinization when the food to be cooked is rice).
