The method includes: determining the following 7 meat quality evaluation indexes of a chicken sample, i.e. ATP, IMP, the pH value 1h after slaughter, water-holding capacity, shear force, flesh color and IMF, conversing the measured data average value of each meat quality index into an index value of corresponding grade, bringing the index values into a formula, calculating the proper selection index MQI value of meat quality traits, and determining the chicken quality according to the MQI value score. The method selects 7 main meat quality evaluation indexes, standardizes the determination method, and therefore can acquire more accurate and reliable experimental data; through correlation analysis of all the evaluation indexes, the interrelation among the indexes is determined, thus providing reference for establishment of a unified evaluation method and standard.
