Abstract

The invention discloses a method for improving the yield of polyunsaturated fatty acids synthesized by using Mortierella. The method comprises the following steps: subjecting Mortierella to normal aerobic constant-temperature culture; when the dissolved-oxygen concentration of fermentation broth is lower than a preset threshold, discharging a part of clear liquid produced after fermentation in a fermentation cylinder into a filter for treatment, introducing air into the discharged clear liquid, and conveying the clear liquid containing saturated air back into the fermentation cylinder throughspraying via a water curtain device, wherein sterile water is used for supplementation if the clear liquid is insufficient; and when the dissolved-oxygen concentration of fermentation broth in the fermentation cylinder has no obvious change and is continuously maintained to be greater than the preset threshold, stopping circulation of the clear liquid, continuing culturing until glucose is completely consumed and stopping fermentation. The method can maintain high thallus concentration, substantially improve the growth rate of thalli and the yield of polyunsaturated fatty acids and overcome the problem of wall hanging of thalli during fermentation. The method is universally applicable to fermentation production of aerobic filamentous fungi and has good industrial application prospects.
