The invention relates to an oil-gas phase state multilayer sampling method and device, wherein the device comprises a PVT (pressure volume temperature) cylinder for storing oil-gas test samples, a sapphire glass which seals one end of the PVT (pressure volume temperature) cylinder, a plug arranged in the PVT (pressure volume temperature) cylinder and capable of moving under the control of a step motor in order to keep the pressure in the PVT (pressure volume temperature) cylinder, an upper feeding opening arranged on the upper side wall of the PVT (pressure volume temperature) cylinder for injecting stratum oil samples, a lower feeding opening arranged on the lower side wall of the PVT (pressure volume temperature) cylinder for injecting gas samples, and a plurality of sampling pipes respectively connected on different height positions of the side wall of the PVT (pressure volume temperature) cylinder for sampling the components of each layer. The real-time analysis and the on-line sampling of the components in the oil-gas phase mixing process are realized, and the process from the contact of the oil gas gradually to the mixed phase is indicated truly.
