The detection module comprises a signal emission electrode and a signal detection electrode; the controller comprises a signal emission module, a signal detection module, a processing module and an output module. The method comprises the following steps that: a probe is inserted into a meat piece to be roasted; the signal emission module transmits a low-frequency alternating-current signal and a high-frequency alternating-current signal in a time-sharing manner through the signal emission electrode; the signal detection electrode detects the low-frequency alternating-current signal and the high-frequency alternating-current signal; the processing module is used for carrying out calculation according to the variation of at least one of parameters including a low-frequency impedance, a high-frequency impedance and a low-frequency phase difference and outputting a roast degree result of the roasted meat;..
