Abstract

The method comprises the main steps of: (1) extracting a volatile component of a wine sample by utilizing a solid-phase micro extraction technology; (2) analyzing the volatile component of wine by utilizing a gas chromatography-mass spectrometry combined technology to obtain a reconstructed total ion chromatogram; (3) carrying out retrieval and analysis by NIST2014, WILEY8.0 spectrum library to obtain compound information corresponding to each peak, and representing relative content of each substance with a ratio of an area of each compound peak to an area of an internal labeled 2-octanol peak; (4) establishing PCA and OPLS-DA models by utilizing SIMCA13.0, and finding out different metabolism.
