Abstract

The invention provides a method for establishing a goat meat quality detection database based on a near infrared spectrum. The method comprises the following steps: S1, collecting a sample and recording related information including numbers, ages, sexes and varieties of goats in a sample collection process; S2, dividing the sample into a fresh meat sample and a frozen meat sample; S3, determiningindex data including moisture, protein, ash content, fat, microelements, pH (Potential of Hydrogen) value, meat color, steaming loss, dropping loss and fatty acid of the sample; S4, collecting the near infrared spectrum of the sample; S5, processing and integrating all the data in step S3 to form linear correspondence; S6, establishing two mathematical models of fresh meat and frozen meat by utilizing TQ analyst software; S7, establishing two meat quality analysis databases of the fresh meat and the frozen meat; S8, revising the databases. By adopting the database provided by the invention, the difference of meat quality of mutton of different goat varieties or different individuals in the database is rapidly searched, and the authenticity of the mutton and good and poor quality of the mutton can be rapidly detected.
