The method adopts a process of repeated soaking desalination with fresh water to reduce the salinity in the sea cucumbers to be equal to the salt content in fish meat so that the sea cucumbers can completely reach the freezing point easily during freezing and autolytic enzymes in the sea cucumbers do not act so as to achieve the aim of avoiding autolysis of the sea cucumbers.
