Abstract

The invention provides a renibacterium salmoninarum strain QD-01 capable of efficiently producing chitosanase as well as a fermentation method and application thereof. According to the invention, fermentation conditions of screened strains are optimized, including single-factor condition optimization and orthogonal experiment optimization of chitosanase production, and an optimal enzyme productioncondition is obtained. The adaptive temperature range of the chitosanase produced by the strain is 35-60 DEG C, and the pH value is 4.0-9.0; and the enzyme activities of a fermentation broth of the chitosanase and freeze-dried crude enzyme powder are compared, and the result shows that the enzyme activity of the crude enzyme powder is basically unchanged, so the preparation could be freeze-driedinto powder for storage and transportation. According to the invention, the chitosanase produced by fermentation is adopted to explore a preparation process of chitosan oligosaccharide, thus shortening the preparation period of chitosan oligosaccharide; moreover, the chitosanase has high specificity.
