The surface-enhanced Raman spectrograph comprises a controller, a Raman spectrumdetection device, a temperature sensor and a pH (Potential of Hydrogen) detection device, wherein the temperature sensor is used for detecting the environment temperature value of current protein foodto be detected; the pH monitor is used for detecting the environment pH value of the protein food; the Raman spectrum detection device is used for obtaining a first Raman spectrum obtained by scanning the protein food on a first time node, and a second Raman spectrum obtained by scanning the protein food on a second time node; the controller is used for inquiring a preset database according to the environment temperature value and the pH value and obtaining standard protein denaturation speed corresponding to the environment temperature value and the pH value; and if the protein denaturationspeed of the protein food is higher than standard protein denaturation speed, warning information is output.
