Embodiment 1

[0039] Use commercially available concentrated hydrochloric acid to adjust the pH value of the tap water to 4.31, and use an electrolyzed water generator to electrolyze the above tap water under the conditions of a voltage of 23.5V and an electrolysis time of 5 minutes. 5. The optimal available chlorine concentration (ACC) is 10mg / L, which is recorded as No. 1 electrolyzed water.

[0040] Weigh 6g of broccoli seeds, soak them in No. 1 electrolyzed water for 3 hours, and then evenly place them in a germination vessel filled with 1500ml No. 1 electrolyzed water. Germinate for 8 days under the conditions of darkness and no light, temperature at 24.5°C, and humidity at 75%, and replace the electrolyzed water every 48 hours. After germination, the content of sulforaphane in broccoli sprouts was determined to be 5.33 mg / g (dry weight) by high performance liquid chromatography.

Embodiment 2

[0042] Use commercially available concentrated hydrochloric acid to adjust the pH value of the tap water to 4.39, and use an electrolyzed water generator to electrolyze the above tap water under the conditions of 26V voltage and 10min electrolysis time, control the index of the first electrolyzed water to be close to the required value, and finally adjust the pH value of the electrolyzed water to 5.5 , the optimal available chlorine concentration (ACC) is 20mg / L, recorded as No. 2 electrolyzed water.

[0043] Weigh 6g of broccoli seeds, soak in No. 2 electrolyzed water for 3.1h, and then evenly place them in a germination vessel filled with 1500ml No. 2 electrolyzed water. Germinate for 8 days under the conditions of darkness and no light, temperature at 25°C, and humidity at 80%, and replace the electrolyzed water every 24 hours. After germination, the content of sulforaphane in broccoli sprouts was determined to be 5.63 mg / g (dry weight) by high performance liquid chromatogr...

Embodiment 3

[0045]Use commercially available concentrated hydrochloric acid to adjust the pH value of tap water to 4.34, and use an electrolyzed water generator to electrolyze the above tap water under the conditions of 26V voltage and 15 min electrolysis time, control the index of the first electrolyzed water to be close to the required value, and finally adjust the pH value of the electrolyzed water to 6.0 , the optimal available chlorine concentration (ACC) is 30mg / L, recorded as No. 3 electrolyzed water.

[0046] Weigh 6g of broccoli seeds, soak in No. 3 electrolyzed water for 3.2h, and then evenly place them in a germination vessel filled with 1500ml No. 3 electrolyzed water. Germinate for 8.5 days under the conditions of darkness and no light, temperature of 25.4°C, and humidity of 80%, and replace the electrolyzed water every 36 hours. After germination, the content of sulforaphane in broccoli sprouts was determined to be 6.80 mg / g (dry weight) by high performance liquid chromatogr...

Abstract

The invention relates to a broccoli bud seedling rich in raphanin and a germinating method thereof. The germinating method comprises the following steps that 1 soaking is performed, wherein broccoli seeds are soaked in sub-acidic electrolysis water with the best available chlorine concentration (ACC) of 10-50 mg/L for 3-3.5 hours; 2, budding culture is performed, wherein the soaked seeds are uniformly put in a budding utensil containing the electrolysis water, and budding is performed for 7.5-8.5 days. The germinating method adopts the electrolysis water as a unique culture solution for broccoli seed budding, the raphanin content in the bud seedling is remarkably improved, the budding process is convenient, quick, safe and reliable, and the highest raphanin content in the broccoli bud seedling is up to 6.80 mg/g.

Description

technical field [0001] The invention relates to the field of food biology, and relates to broccoli sprouts rich in sulforaphane and a germination method thereof. Background technique [0002] With the continuous development of the economy, people pay more and more attention to the quality of life and dietary health, and people are more inclined to choose foods with higher nutritional value. As cancer is the number one killer of human health, the content of anticancer active substances in food has gradually become one of the important factors affecting consumers' choices. [0003] Vegetables of plant origin contain many biologically active ingredients, which not only participate in some important metabolic processes in the human body, but also have many physiological activities. Cruciferous vegetables are more and more popular with consumers because of their rich nutrients such as Vc, polyphenols, anthocyanins, etc., and important secondary metabolites - glucosinolates (here...
