The ultrasonic-assisted ice glazing device comprises a machine body, a placement plate, a liquid level alarm, an ultrasonic-assisted device, a drawing device and a control panel. The ultrasonic-assisted device consists of an ultrasonic flat plate, an ultrasonic vibrator and an ultrasonic generator; and the drawing device is composed of a drawing handle, an upper track and a lower track. According to the method, ice glazing is assisted by ultrasonic waves, the heat transfer effect is remarkably promoted, and the ice glazing time is shortened; crystal nucleus formation is promoted, the supercooling temperature required by crystal nucleus formation is reduced, the crystallization rate is increased, and ice crystals are formed more uniformly; and moreover, ice crystals are reduced, and the influence of the ice glaze on the aquatic products at the contact surface of the ice glaze and the aquatic products is reduced, so that the quality of the ice-glazed aquatic products is improved, and efficient and uniform ice glaze plating on the aquatic products is realized.
