Abstract

The invention discloses a pretreatment deodorization method of an extraction process of allicin. The method includes the steps of: 1) preparation of materials: selecting garlic that is mature and dry, is free of damage by pests and has no mildew, and removing pedicles, splitting the garlic and removing inner skin, and rinsing the garlic in clear water to remove foreign matters and under-qualified garlic. 2) soaking deodorization: soaking the split garlic in the step 1) in a deodorizing liquid for 20-30 h, wherein the deodorizing liquid is a fumaric acid solution being 2.5-3.5% in mass percentage; and 3) extraction and purification: cleaning the soaked split garlic in clear water, and mashing the split garlic, and extracting allicin from the mashed garlic to obtain an allicin extract liquid, and separating and purifying the allicin extract liquid to obtain pure allicin. The method has good deodorization effects and can effectively retain the allicin during deodorization.
