The pigskin was taken out, immersed in 0, 1, 10, and 100 mM acrolein (Tokyo Chemical Industry Co., Ltd.) solutions for 3 hours, and oxidized. When acrolein acts on protein, it is oxidized to form an aldehyde-protein adduct. After the oxidation treatment, wash with water for 1 hour.
