The apparatus comprises a salted egg (8), and also comprises a conveyor belt (1), an industrial camera (2), a camera obscura (3), a light source (4), a photoelectric switch (5), a PLC (6) and a computer (7). The method comprises the following steps: 1, acquiring salted egg images; 2, discriminating qualified eggs: 1) pre-treating the salted egg images, 2) extracting characteristic parameters, and 3) discriminating the qualified eggs; and 3, discriminating retreat dissolve eggs and black yolk eggs: 1) afresh pre-treating unqualified salted egg images, 2) extracting the characteristic parameters, and 3) discriminating the black yolk eggs and the retreat dissolve eggs.
