Abstract

The invention provides a sweet Gushu tea and a production method thereof. The sweet Gushu tea is prepared from hair bud tips of old tea trees through enzyme-deactivation-free preparation procedures. The Gushu tea is prepared from tea leaves of big-leaf tea trees with an age of 100 years or more in regions located south of the Tropic of Cancer and having an altitude of 1000 to 1800 meters and the features of a scattered granite landform. The production method comprises the following steps: plucking the hair bud tips of the old tea trees for subsequent usage; scattering the hair bud tips in a dustpan and wilting the hair bud tips in the sunlight so as to allow 60 to 70% of moisture in the hair bud tips to be removed; gathering the wilted hair bud tips together, maintaining a temperature of 40 to 60 DEG C, continuing dehydration of the hair bud tips until altogether 80 to 90% of moisture in the hair bud tips is removed and then carrying out natural cooling to normal temperature; scattering the hair bud tips and allowing the layer of the scattered hair bud tips to be thin so as to allow a variety of biochemical changes of the hair bud tips to be abated or stopped; then carrying out fragrance improvement, increasing the thickness of the layer of the scattered hair bud tips to 8 to 12 cm, maintaining the hair bud tips at 70 to 80 DEG C for 60 to 120 min, and when moisture content reaches 1 to 3%, carrying out cooling and hermetic packaging so as to obtain the finished sweet Gushu tea. The sweet Gushu tea produced by using the method has fragrant smell, reddish yellow tea soup, sweet taste, rich fragrance, long-lasting aftertaste and good durability and stewing resistance.
