Abstract

The invention discloses a controlled atmosphere preservation method for hairtails, comprising the following process procedures of: (1) removing heads, tails and abdominal organs of fresh hairtails, cleaning the fresh hairtails clearly with ice water, cutting into 6 to 7 cm long segments, draining the hairtails, and packing the hairtails in package bags; (2) carrying out air mixture by an air proportion mixer, and vacuumizing, charging and heat sealing by a controlled atmosphere packaging machine for controlled atmosphere packaging; and (3) refrigerating the packaged fresh hairtails, wherein the refrigerating temperature is 4 DEG C+/-1 DEG C. The air charged through controlled atmosphere packaging adopts three kinds of gases of CO2, O2 and N2, and the volume ratio of the gases is as follows: 40 to 80% of CO2, 0 to 20% of O2 and 10 to 50% of N2.
