The production method of the refreshing vegetable beverage comprises the steps of: according to ratios, firstly placing the raw materials of the seven vegetables into a container, adding water and boiling for 3 times, with the first additive quantity of water being not more than a half of the total volume of the container and the second and the third additive quantity of water being respectively not more than a quarter of the total volume of the container, merging filtrate, adding the cane sugar with the quantity in a formula, adjusting the total quantity by using purified water, chilling, sterilizing and then filling. The refreshing vegetable beverage provided by the invention has a refreshing efficacy, and is simple in production method and low in cost.
